Mashed Eggplants
2 eggplants
1 clove garlic
1 tablespoon olive oil
2 pinches of salt
lemon juice
• Make a couple of holes on 2 eggplants to ensure that they are not going to explode while cooking. Because eggplants have air in it and the skin is tight. It might explode and hurt you while cooking as a whole.
• Put the eggplants on stove directly to the fire. This way you will get the incredible smoked flavor easily. Flip the eggplants time to time to cook every side evenly.
• The head and the bottom will take more time to cook and they are ready put them in a bowl and cover with a table to make them sweat. This way you can get rid of the skin easily. You can bake them in the oven as well but it will take more time to cook.
• After resting a couple of minutes take the eggplants to cutting board. Make slice from top to bottom and scrape the inside with a spoon.
• Add 1 clove of garlic and mash them with a knife until garlic mix and eggplant becomes mashy.
• Add 1 tablespoon of olive oil, 2 pinches of salt and lemon juice to taste.
• Smoked and mashed eggplant is ready to eat. Enjoy!
Black Eyed Peas with olive oil
1,5 cups dry black eyes beans
Extra virgin olive oil
Salt
1 lemon
• Wash 1,5 cups dried black eyed peas and drain.
• Put into a pressure cooker and add room temperature water on it. Water should be at least 3-4 cm higher then the peas.
• Add a pinch of salt and put the lid on.
• Start to cook on low pressure about 15 minutes after the lid locked. You can cook without a pressure cooker but it is roughly take half an hour to peas get cooked.
• After cooking take the peas out and drain. Add a generous amount of extra virgin olive oil. Hot peas get dark easily so sooner you add the olive oil brighter peas you will have.
• Add salt to your taste and squeeze a lemon juice.
• After mixing black eyed peas are done.
Atom
6 heaping tablespoons labneh
1 heaping tablespoon butter
2 dried chili peppers
1 heaping teaspoon hot chili powder(or sweet as your choice)
• Put 6 heaping tablespoons of labneh on a plate. You can use yoghurt as well but before using put your yoghurt into a cheese cloth and hang it for a couple of hours to have a thickened yogurt.
• Make a crater on center with the back of a spoon.
• For topping, melt a heaping tablespoon of butter in a pan.
• Slice 2 dried chili peppers and add to the pan. Toast them about half a minute and turn off the heat.
• Add a heaping teaspoon of chili powder and mix it. To make a foamy butter put the pan with the angle of 45 degrees and mix the chili butter with taking air in it. İf you don’t want a hot atom you can always use sweet chili powder.
• Atom is ready after pouring the butter on top of the labneh.

    Fried peppers 12 green Peppers Salt For frying, Sunflower oil • Heat the sunflower oil or any kind of oil for frying. You can understand the oil is hot enough with putting a wooden spoon in it. If the bubbles coming out of the wood the oil is ready to fry • Dry the peppers and score them to avoid explosion. • Place the peppers in the oil and fry 2-3 minutes. • Drain extra oil and add salt to your taste. Fired Eggplant with tomatoes 1 eggplant 1 big tomato 2 cloves of garlic 3 tablespoons olive oil Salt For frying, Sunflower oil • Heat the sunflower oil or any kind of oil for frying. You can understand the oil is hot enough with putting a wooden spoon in it. If the bubbles coming out of the wood the oil is ready to fry. • Peel an eggplant in strings. You don’t have to peel the all skin. • Chop into chunks and fry them until they are light brown. • Add 3 tablespoons of garlic in a pan and toast them until you have the smell of garlic but the color is still same. • Grate 1 tomato. For an easier grating cut the top of the tomato and grate like that, so at the end you will have just the skin. Add over the garlic. Simmer about 2-3 minutes. • When the eggplant is cooked drain them onto a kitchen towel and take extra oil. Don’t crowd them or you will get soggy eggplants. Add salt to your taste and toss. • Place eggplants on a plate and pour the tomato sauce on top. Sprinkle fresh parsley. Heavenly eggplants and tomato is ready for you. Pickles • Pickles are easiest, delicious and fundamentals for a mezze table. You can use whichever you like to. I had okra pickles so I served them today and i will show you have to make delicious Turkish pickles soon. Melon and White Cheese 2 slices of melon 2 slices of white cheese • Melon and white cheese(or feta as commonly known name) are essentials for a mezze table. For each person cut a slice of white cheese and melon. You can serve melon on top of the skin always.

    I've been making home made Hummus for many years. I usually start out with the dry beans. Sometimes If I'm feeling a little lazy I will use canned. It's one of my very favorite things to eat.

    @@franzmuller3396 greeks steal every Turkish food and giving greek name with adding -i or -es and calling it greek food :D example cacık become cacıki or dolma become dolmaes, sometime they not change name even they dont know if it is Turkish word example imam bayıldi :d they dont know what mean their food names :D

    My uncle does the babaganoush like that. He calls it emtata. We live in Argentina, but our grandparents came from Damascus. We still cook those dishes for the special ocasions. We eat our okra (bame) stewed with meat and pureed tomatoes. And we make our own leben because it is hard to find here.

    Your channel makes me homesick for my adopted family in Morocco. I have not been home to visit them since my last month-long visit on Oct. 23, 2019 - Pre-COVID. I miss the Moroccan Cous Cous so much. This video reminded me of when we went to a Tapas Bar in Berkeley California in preparation for our trip to Spain in 2000. Thanks so much I miss Turkey. I stop over on my visit to Morocco from San Francisco.

    Refika's main channel does have 1,58 million subscribers as of June 2020 but it's in Turkish and I think Refika doing another channel for the international audience is amazingly wonderful. I do speak several languages including Turkish so I have the best of both worlds of Refika's skills and wonderfull personality.

    You can 😊 I buy my from my local Turkish supermarket If you got one near you it might be worth checking it out I started making my own yogurt now but I used to get mine for about £2.50 for a kg pot You’re totally right Greek yoghurt just isn’t the same, especially supermarket ones.

    Greek style, it’s not even proper greek!! It’s most of the time Sweeten as well! In Spain, I never take that kind of yogurt, except If it’s proper Greek or Turkish. Try FAGE brand, if you find. They are around the world and you can eat w salty meals or add honey etc amd have it as a sweet dish.

    It won't be the same but you can take several layers of cheese cloth, lay it on a strainer ( make sure the cheese cloth covers the strainer well with quite a bit of overhang), put a bowl under it. You can drain the excess liquid of the yoghurt like that. Let it drain in the fridge for a few hours or until you have the desired consistency. Hope it helps!

    Im like the eggplant - dangerous in the kitchen, when I cook it looks like a bomb went off!! My husband always asks "Are we ever going to have a clean kitchen?" I am Greek, my husband is Dutch my sister lives in Japan and my brother in law is Japanese. We are a mixed family with a variety of cultural tastes, but I cant resist whats in our DNA, I just gravitate to Middle Eastern food, the spices the fragrances, the simplicity, you cant beat that!

    Your channel is amazing and every recipe I have seen and tried blown my mind. There are many "greek-anatolian" recipes that I knew we had in common, but with this video almost every recipe we use it here to in Greece. It is amazing how mixed the cultures are. When Covid is over, I will for sure come again in Istanbul everyone there is super friendly and the food taste like heaven.

    I've been home cooking for 50 years and I am a devotee of the late Marcella Hassan but I have learnt the best ever tips on this channel. Starting tomato puree off in some bubbling butter .. fabulous. It makes such a difference. Leaving 2 cloves of garlic whole to later mash it easily .. I did all of it. Bravo!!

    Refika, would you like to share with us the recipe for Imam Bayildi? I live in Munich and shop at the Turkish grocery market every week, but just before, we always have a meal at a Turkish diner. Yesterday they finally had again the eggplant dish, I catch it so rarely and it's just so delicious and melting in your mouth. I want to know your way of doing it, as I really like your style of cooking and engagement with the audience.

    Dear Refika thank you for all this recipes just I wanna add somethings, I am sure Atom would be great with Labne but I think foreigners should see how is the Turkish yogurt, diffrences with others. When I watch Greek chiefs, they emphasize Greek yogurt, Greek virgin olive oil etc.I think maybe we need somethings like that.I say this as a Feta cheese fan which is seems same White cheese but has much better texture. Whatever If We have good at something like kitchen We must show to all the world. And As a someone do that. I am thankful to you. Loves 🙏🏼❤️
