400g '00' flour (also known as pasta flour!)
115g butter, frozen and grated
1 egg
175ml whole milk
80g caster sugar
20g baking powder
1/2 tsp. salt
Optional, but recommended!!
Lots of clotted cream - preferably @roddas!
Lots of jam!! I prefer strawberry, but Mr. Editor prefers raspberry!

    Hey Dani!! Wow those really were the perfect Scone!! They were so high and light and flaky. We don't have castor sugar here so I will buy superfine. I can't wait to try these. Ive made scones before, but sometimes they don't turn out the way these did!

    Lovely scones. I've been making them since I was 12. I will try this method too now. There are so many variations. This looks amazing. I'm a butter, jam then cream girl myself.     Oh wow!! Look at that scones! I’m totally saving this recipe to try! Freeze the butter and grate it!! Noted!! Caster sugar is the key!! I’ll tag you when I make this scones!!     You are absolutely right about the fact that everybody wants to have cream tea for Jubilee weekend! Every supermarket I’ve gone to has been completely sold out of clotted cream. The last one I went to said they had just put out a whole shelf full an hour before I got there and they were already gone… no clotted cream for me! ☹️

    Jam then cream is the only way to do it! Jam is denser and harder to spread than cream, so if you try spreading jam on top of clotted cream you're going to end up just mixing it together, wheras the cream can easily be spread over the sticky jam without combining. I also like butter but don't mind it without.

    That's a very good point; possibly the best argument I've heard for jam before cream! The Queen's prefers it this way too! I must admit, I usually choose the Devon way of cream before jam! 😻😻

    Scones are my favorite, I always get them from Starbucks or Panera, but I’d rather have these homemade ones, looks delicious. This is one I have to ask my wife to make, I would screw this up majorly, lol.

    Hi Daniella. I'm definitely 'Cornish' jam then cream with sc-ons... But a nice creamy butter I won't say no to on a savoury scon. Scone is a relatively large rural town here in NSW Australia. My mother used your method of layer upon layer upon layer and her scons were always light and fluffy. Have you made them using lemonade and sour cream? Yummy.. Thanks for making me scon hungry..👍🤤😀 Cheers. BTW, Scone is another word for your head. "He has a bump on his scone" 😂

    I'm the complete opposite! I say scone as in 's-cone' and I always add a huge dollop of clotted cream before the jam!! I know it's a highly contested subject, but there's no wrong way in my opinion! The layering method for creating lamination is really common with making American biscuits, which are similar to scones. It's lovely to hear that your mother used the same technique! I have made savoury scones before and I'll more than likely post a recipe for them in the near future! They go really nice with stew! I had no idea scone was slang for head?! Is that Australian? It's pre-recorded and heavily scripted right down to the dialogue and slang used so that international viewers can clearly understand the rubbish they're listening to. I don't watch it 👎😒 I watch people like you and Papparoni. Far more entertaining 👍😀

    Thank you so much! 💖 I normally include both metric and imperial measurements for my recipes, but in the case of creating the most perfect English scones, the measurements need to be precise. Imperial just isn't precise enough and could result in less rise, different texture, and potentially dense scones etc. If you want to make the perfect scones, I'd recommend getting a digital scale that does grams. A scale is also really useful if you ever fancy branching out into baking bread! I hope you'll give my recipe a try! 💖😻

    Sugar helps to brown the scone and retain moisture, as well as slow gluten development, which helps keeps the scones tender. It's only a very small amount of sugar and you'll barely taste it in the actual scone - unlike American scones that use a lot more sugar! The vast majority of (if not all!) English scone recipes include sugar in their scones. So if you want to bake the perfect English scone, I'd recommend adding sugar! 😺 Hope that helps! 😻😻
