My Best Scones

In this episode, I wanted to show you how to make some uniquely delicious scones. I think they are the best scones of all! Recipe is written out below -- thank you for watching.

Ingredients for 16-18 2-inch-diameter scones
500g (approx. 3 1/2 cups) all-purpose flour, plus extra for dusting
A pinch of salt (1/4 to 1/2 teaspoon, or to taste)
2 tablespoons baking powder
90g (1/2 cup) caster sugar (or, use regular granulated sugar)
113g (1/2 cup) cold, diced butter
191ml (3/4 cup) whole buttermilk
2 large eggs
For glazing the scones
1 egg, beaten with 1 teaspoon milk or water
Special equipment:
A standing mixer outfitted with the paddle attachment
Tip the flour, salt, and sugar into the bowl of a standing mixer. Mix on low speed until combined -- about 30 seconds. Add the butter, and mix at low to medium-low speed until the mixture resembles coarse crumbs.
Whisk together the buttermilk and eggs. At low to medium-low speed, add the buttermilk mixture to the flour mixture. Mix just until all of the flour is moistened -- there should be no dry bits of flour at the bottom of the bowl -- 3-5 minutes.
Scrape the dough onto a very lightly floured surface. Knead the dough by hand until it is fairly smooth -- 3-5 minutes. Form the dough into a ball, smooth side up. Cover with cling film and let rest at room temperature for 15-30 minutes to relax the gluten.
Flip the dough so its smooth side is on the bottom. Roll into a circle 3/4-inch thick. Use a floured 2-inch-diameter biscuit cutter to cut out rounds. Space the rounds about 1 inch apart on a parchment-lined baking sheet. Gather, roll out, and cut out rounds from the remaining scraps of dough. Cover the baking sheet with cling film and let rest at room temperature for 15-20 minutes.
Brush the top of each scone with the glazing mixture. Let the glaze dry on the scones for 15-20 minutes.
Meanwhile, center the oven rack and preheat the oven to 375°F.
Glaze the scones a second time. Then bake the scones in the preheated until they puff and and their tops turn golden brown -- 15-20 minutes, depending on your oven. Cool slightly before serving. Enjoy with butter or clotted cream (or whipped cream) and jam.

    @@schifflangefarms4539 Both! Scones like "bones" or scones like university "dons" - there is no right or wrong. I have heard people say it both ways all my life.

    Kevin, this video and recipe saved me, bigtime! I just threw my first tea party and the past few weeks I'd been testing scone recipes. They all failed and were dry, bland, bleh.     Thank you, Kevin, for giving me courage to knead scone dough. You're probably the only one on KZread who makes it this way. I will try it your way, and will compare it with the "gentle-knead" version, to see which suits my preference. I'm Thai, and have just finished a 3-month trip to the UK. My English friend in Hampshire told me that English people in the North call these baked goods "s-gawn-s", while those in the South call them "s-goan-s". Of course, my friend calls them "s-goan-s". Another thing I learned about their pronunciation was that Northern English people pronounce GLASS "gl-ae-s" (like how Americans pronounce it), while the Southern pronounce it, as we all know, "gl-aah-s". Oh, another thing I learned when in Dublin, The Republic of Ireland, was that the Irish pronounce "TH" as a "T". So, they pronounce 33 "ter-ti tree". No joke! Isn't that cute?     When I was a teenager in England we would make these in school cooking class. There was a delicious variation where grated cheddar was added before cooking and then eaten warm with butter. 😋 The best English cheddar I've found over here is from Costco and is called Coastal. Also good are Murray's English Cheddar or Australian Old Croc, (not smoked) 😄. Thanks, I haven't made scones in 40 years, so it's about time.

    When we lived in London as American expats my husband and I had tea at Brown’s several times. In case you didn’t know, Agatha Christie stayed at Browns on occasion and wrote her book, “At Bertram’s Hotel”. It was also turned into an episode of the Mystery program on PBS. When I visited London on an earlier trip in 1993, the hotel had not been renovated and it had the shabby chic decor that you see in the Mystery episode. It was very English looking at that time.     Hi Kevin- I always enjoy watching you cook and bake. We have the same Kitchen Aid model, which helps me see its many uses. One suggestion that is kind of selfish, is....... Ready? While you are putting together your next cookbook, could you possibly also create a "Kevin's Kitchen Cooking Tips" book? I so enjoy cooking and baking tips. Also those lovely details you come up with, like the organic lavender and rose petals you sprinkled on your latest pound cake glaze.     Kevin, I haven't made scones in 20 years!! I instacarted the one place around here with decent ones to sell and they have become too darn expensive I refused to buy lol. Your video was so reassuring and it seemed you like your scones the way I do, so I tried. FABULOUS!!! Don't like those crumbly triangles! I added organic dried blueberries, halved the recipe and popped them in my toaster . Holy cow now thats a scone!!! ❤ 🎉 first recipe in my new kitchenaid mixer that's been sitting on my counter for months!

    Yum! Thanks Kevin. I prefer savoury to sweet. So I used your Scone recipe to bake Cheese Scones in my Tower Air fryer. As I used cheese instead of sugar, the Scone dough required a little bit more flour on the rolling out board. It seemed a bit of a longer process than usual, waiting for the dough to rest at different stages. But this probably contributed to the Cheese scones being deliciously moist and tasty Cheese Scones. The best I have ever tasted and baked myself! You are a God send Kevin ❤️! Thank you from the cold, windy and wet UK. You and your delicious recipes are lifting me up. Thank you 👍🙏

    R first Afternoon Tea was at the Brown Hotel. It was a hot July day & because they insist men wear jackets my dear husband was burning up , so he stood up to remove his blazer & the waiter quickly approached & said no no!! On the other hand there were women sitting all around in summer frocks & they were left alone. I had no idea scones were kneaded Mary Berry doesn’t do that!! I love a bit of ur beautiful scones.     Hi Kevin, Like I said in a previous comment, these scones are the best. I wasn't, however, thrilled with how they came out after the dough was frozen. I let them come up to room temperature and baked, but they didn't rise like the ones made with fresh doung. They were OK, just not the same...

    Hi Kevin! Love you and your channel :) I made your scones today and they're divine! For the life of me, I couldn't find full fat buttermilk, but I found whole milk plain kefir and it worked out great. I'm having a tea in a couple of weeks, so I baked some today and froze some uncooked for later. I used a 2 inch cutter and they were soft and fluffy just like you said they'd be!

    So lovely to watch someone who pronounces scone correctly. I was surprised that you did not add any vanilla extract to your recipe. I use heavy whipping cream instead of buttermilk, but then the recipe I use is for cream scones. Delicious! Thanks so much for your great video and an alternate recipe for the beloved scone.

    Hey, Kevin. I started binge watching you starting with your yeast dinner rolls. They looked absolutely mouthwatering 🤤. I gotta say, I like you. You seem to be a fine gentleman with a soothing and comforting presence.     Hey Kevin! Any ideas for a buttermilk substitute? It's hard to find here in the UK, so I'm quite surprised this recipe comes from Browns Hotel, London. We more typically have them with dried fruit, for the traditional afternoon tea. Bravo for your correct pronunciation - 'scone' rhymes with 'gone' - NOT 'bone'!     What a fascinating recipe and video. I love making scones but have never seen the dough kneaded, always being cautioned to “not overwork” the dough! Who knew!? I will definitely try this recipe. Thank you, Kevin. BTW I just baked the Thanksgiving pumpkin pie with some ginger snap cookie crumbs scattered on top of the uncooked crust and under the filling (as you showed with your butternut squash pie.).     Thank you so much Kevin! My mother was a fantastic baker & made great scones! However, she did not use buttermilk! I am loving your recipe ! The dough came together perfectly! I am new here also & from Canada!
