Hello, everyone! In this episode I'm preparing an Autumn Afternoon Tea. Please join me as I light a fire, assemble sandwiches, and bake some delicious Gingersnap Cookies!

Gingersnap Cookies
Ingredients for about 45 2-inch-diameter cookies
Make-ahead note: The cookie dough can be formed and frozen. Bake it off at your leisure!
The dry ingredients:
1 2/3 cups (236g) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/4 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
A pinch (about 1/4 teaspoon) black pepper
The wet ingredients:
1/2 cup (113g) salted or unsalted butter, melted
1/2 cup (100g) granulated sugar
1/4 cup (50g)
The yolk from a large egg
1/2 teaspoon pure vanilla extract
2 tablespoons unsulphured molasses
2 tablespoons whole milk
For coating the cookies:
1/2 cup granulated sugar -- put this in a zip-lock bag
Preheat the oven to 315°F (157°C).
In a medium bowl, whisk together the dry ingredients.
In a large bowl, beat together the wet ingredients with a spatula.
Add half of the dry mixture to the wet, and stir with a spatula to combine. Then stir in the remaining dry mixture. The dough should be quite stiff.
Form teaspoon-size cookies (a 1-inch-diameter cookie scoop is helpful here), roll them into balls, and put them, 6-7 at a time, in the bag of sugar. Shake the bag to insure the dough balls are coated. Then arrange the balls 2 inches apart on parchment-lined baking sheets (15 balls per baking sheet).
Bake in the preheated oven until the balls of dough flatten, and their outer edge turns crisp -- 18-20 minutes. For cookies that are crisp throughout, bake for 20-22 minutes.
Transfer the cookies to wire racks to cool. Cookies will continue to crisp as they cool to room temperature.

Kevin I found the clotted cream at World Market. I would think it would be easier to find back East where you are, especially in New England. Sometimes I can find it at Safeway grocery store as well.

When you mentioned taking afternoon tea in the parlour I was immediately reminded of my grandmother. Long gone, but fondly remembered.
How absolutely lovely to 'share' your afternoon tea with your friends (meaning all of your viewers, etc). I so enjoyed this video with you. Right now, I'm in hospital recovering from abdominal surgery. For months, I've not been able to eat ANY food. So, I have to live through the eyes and taste buds of those, such as yourself, who can entertain me with all of the delicious things you make. And your ever pleasant personality. I 'will' be able to return to eating real food, once recovered, and believe me, I'll go home with plans to make many of your decadent recipes! You give me so much to look forward to! I sure enjoyed the delightful fall road trip ! Especially since we are still having very hot weather in Southern California. I discovered that when rolling my ginger cookies in sugar l use Sugar In The Raw. They come out like fancy bakery cookies. Thanks for all your great hints. 🍁

You have the most refreshingly adorable channel compared to many others, with no sweating or swearing.
I like to add one or two cracked cardamom pods and a little piece of cinnamon stick to the filter basket when I make a pot of coffee. It makes it special.😊

I live in a small city (13k) in the Ozarks. Are cardamom pods easy to find? This sounds lovely.

@@kathleenstanley6751 I buy them at the local Indian food shop. You may have to buy them online. Ground cardamom may be available at your grocery store. It imparts a stronger flavor, so start with just a pinch,

Well hello Kevin Lee. Thank you for inviting us in for an afternoon tea. Everything is a treat for the eyes. The recipe is much appreciated. The cardamom, ginger, and pepper has me in the mood for some masala chai. The very first day of fall in Ohio close to Lake Erie it went from 90 f for a high to highs in the low 60's the next day. This morning there was a bit of frost. The store you went to is an amazing place. I've never seen cranberries with sugar and pectin in a jar before (except for jelly & jam). I will be on the hunt for that. I wanted to taste everything in your presentation. My favorite color is blue (beautiful china). Nice touch lighting the fireplace. This video is perfection.

My mouth is watering from your cranberry, Turkey tea sandwiches.
Oh my my my! I truly enjoyed this video and its accompanying menu suggestions and the gingersnap recipe. I have one of the latter that I’ve used for decades but am interested to give yours a try! As far as seasons, I, too, love autumn. Besides the beautiful colors, crisp air, and bounty, I so enjoy its fragrances, particularly that of fallen leaves and the first wood smoke that makes its way to me when I’m outside. Were that I still had a fireplace!
I add a bit of dry curry powder to my egg salad and it’s delicious, my mother used to make this for us when we were children and l am now in my sixties and everyone now asks me to bring these sandwiches to social gatherings and work events. We are just going into spring here in Australia and getting some wonderful sunny spring days after a very wet winter.

Curry powder with the egg salad sounds wonderful. please give the proportions, for instance if it were two eggs , how much curry powder would you use? Thanks 😊

@@janettemasiello5560 it’s really to taste , for two eggs perhaps start with a 1/4 teaspoon, you could taste as you go and add more if you want a stronger taste. l use a brand called ‘ Clive of India’ it’s the same brand my mother used , it’s a nice mild curry powder and has a good savoury flavour. Hope you enjoy.

I love autumn too. We've had a long, hot, brutal summer where I live, so I'm enjoying the change of weather. It's already dipping down in to the 40s at night. Only a few weeks ago it was 110. 😄 During the fall and winter I usually switch from coffee to hot tea occasionally. Last week I picked up a big box of Barry's Gold Blend Tea, imported from Ireland. It's one of my favorite teas for this time of year.
I like autumn the best, too! (Can't believe how quickly the summer went by). I prefer gingersnaps soft and hubby likes them crisp, so these would be the perfect compromise. Your home looks lovely, as usual.
I know some people don't like tea bag tea, but Constant Comment is good stuff for fall & winter. There is also a loose tea called Iron Goddess of Mercy! Those gingersnaps would make great sandwich cookies with a cream cheese filling!! Or apple butter filling!! (Ooh, I'm hungry!)

My mother always had Constant Comment in our house when I was growing up. I remember the tin (in the 1970s) stated "No milk, please." A very good tea!

OMG!! Kevin you have taken me back to my childhood! So cosy with your warm, glowing, roaring open fire! All my relatives of that era have passed, but you have brought them back to life again as I watched you preparing this delicious afternoon, Autumn Tea. I remember making sandwiches and preparing other delights, like Trifle, Jelly, savoury nibbles etc. It was great fun as a child. It's so healing watching you and being in your company 💞! I am watching from across the pond where we are having 'monsoon' rain storms this Autumn. I also have had a leaking roof, which started again in September. It has taken months to get it sorted through the Housing Association. So you have also provided me with solace through the storms!. I enjoyed your overnight trip to Manchester as well with 'Mr Fox'. It's great to travel with you and view your part of the world! I keep fit like you every day, but prefer cycling on a flat level or downhill, as I have arthritic knee injuries. I also swim in the sea in a wetsuit once a week, as I find it helps the Fibromyalgia. Some of us are still living 'cautiously', due to the risk of catching Covid and one can sometimes feel a bit isolated in this stressful world. I have my Faith, Yoga Meditation and learning new things, such as your fun and interesting cookery demonstrations. So I think the Internet has had some positive advantages in that we can connect so easily and 'magically' with others around the Globe including your warm and delightful self Kevin. So thank you so much 💕😌 for your very interesting videos and your enjoyable and relaxing company 😊 X Mary

Although I live in Michigan, I grew up in the Hudson Valley of upstate New York. I was born in Poughkeepsie, went to school in Wappingers and Fishkill and also lived in Poughkeepsie and Pleasant Valley. Wow it sure is a small world lol I love this recipe thank you. Autum is my favorite season. I remember growing up and my father taking myself and my family for what we call color tours. I love enjoying the wonderful leaf colors of fall.

@wells martin Hello Wells, I live in Battle Creek Mi. I am married and have three grown children and three grandchildren. I am originally from New York, but after visiting Mi. I met my husband, and we moved here where he is from. I am a Christian lady and enjoy making new friends. I would love to hear more about where your originally from and how it was that you came to live in Detroit. You're not very far from me. I have always wanted to visit France, but I do not speak French so might feel out of place there.

Hello Kevin and Thank You for the lovely invite to take tea with you. I am now a major advocate of afternoon tea and love making tea sandwiches. I made your recipe for Pain Mie and it is the best for the sandwiches. Beautiful crumb and flavour. Yesterday was my Friday Tea Day with some neighbours. In addition to the sandwiches (egg and relish - triangles, tuna and sweet mustard mayo with celery - small squares, and cream cheese with chèvre, roasted red pepper and black olive - rolled), we enjoyed mini toasted-almond frosted carrot cakes. It was all delicious and the 'new' bread drew enthusiastic comments. I knew the minute you presented these spice cookies that I will be making quite a few very soon to give as Thanksgiving 'from my kitchen to your's' gifts. The addition of cardamom is really different and will add mystery to the flavour. I think I'll tuck a few bags of cardamom tea in with the gift pack. Thank You for adding flavour and spice and an appreciation for good and simple foods, to my life. I wish you and Mr. Fox an enjoyable Fall (the best season !) and a very Happy Thanksgiving. Here in Canada, ours will be next weekend. Can't wait. I have white pumpkins to play with this week and hopefully will turn them into satiny tarts for our special Turkey meal. This Thanksgiving, I give special thanks to you for the special kindness, thoughts, love, time, expense and effort you generously gift year after year, to your A Garden for the House community.
