4 Levels of Samosas: Amateur to Food Scientist | Epicurious
Ойын-сауық
We challenged chefs of three different skill levels - amateur Emily, home cook Rinku, and professional chef Dalia David - to make us their best samosa recipe. Once each level of chef had presented and tasted their creations, we asked expert food scientist Rose to explain the choices each made along the way. Which samosa are you reaching for between sips of mango lassi?

If I were on the show, I would be a level one chef. I’ve been a professional cook for 19 years but most my cooking comes from my home. I think the idea of level 1,2, and 3 chef comes totally from the availability of ingredients, availability of time, and availability of money. I respect the absolute hell out of every level and chef on this series but the real heros are the level 1 chefs

Emily was perfect for the L1 chef, she's progressed so much and in my knowledge, Samosas are like Rinku said "Not for the lazy cook". So much preparation, so many spices. Just the spices and seeds themselves are so easy to mess up! If you heat them more than you should, you're going to get a bitter samosa and even 10 seconds are enough to ruin your dish. Emily knows her way around some stuff now and I think she did a pretty good job! They're not fried eggs and canned peaches people, this dish takes time, skill and attention, that in the end pays off with one of the best snacks you can have! Greetings from Mexico!
All 3 looked fantastic, but I'm a sucker for cauliflower, so if I could only have one, I'd go with Rinku's samosas. That spicy red pepper chutney that Dalia made would be hare to pass up on though.

In a traditional Samosa, the potatoes are boiled first, roughly mashed, and then put on the pan for shallow frying. Rinku's cauliflowers went in after the potato - mistake. Cauliflowers have to be fried separately and then added to the potato later. Also, if your samosa crust has too many bubbles, the dough is not tight enough and needs more ghee or oil.

@@aadtie5633 Yeah, but where do tamarinds actually grow? Definitely not in North India.
Really happy about the skill level of each chef.
Samosa is originated in North Africa & Middle East, as sambusa. They use meat instead of potatoes (India didn't have potatoes either till Portuguese came in), and brought in during the Islamic invasion.
Actually I'll tell you the amateur recipe for samosas: you go to an Indian grocery store or a large supermarket and grab some from the freezer section. In my opinion if you're making samosas from scratch you're definitely a super-expert home cook!

Dalia: "They just didn't have air fryers 1000 years ago" 2 minutes later: blitzes chutney in a food processor
@AnkitaNallana
Жыл бұрын
there's a difference -- air fryers are a much newer way of doing things - it's essentially a small oven that goes on your kitchen countertop. The closest things indians had to an oven was a tandoor(clay oven) and you don't make samosas in the tandoor. Hence, to cook & brown them, samosas had to be deep fried. chutneys were originally made with a heavy stone mortar & pestle. It's really mincing/blending/grinding. It's mainly elbow grease which was replaced by an electric motor in the food processor.
@noellemorris
Жыл бұрын
@@AnkitaNallana First, I'm aware that air-frying is different than actual frying :) Second: I've used a mortar and pestle before, and it's very much a grinding or smashing action -- I would never describe it as a mincing/chopping action, and in the cases where I've made, say, a pesto with a mortar and pestle, I definitely see a difference, not just in texture, but in taste, too. I'm not criticizing Dalia at all -- if I had my druthers, I'd much rather have an oil-fried samosa than an air-fried samosa, and despite the difference in flavor and texture, I rarely use a mortar & pestle for anything but the smallest of quantities. I just found the juxtaposition amusing.
@i10i60
Жыл бұрын
@@noellemorris I've used both mixer-grinders and mortar-pestle for making chutneys. I've found that mixer-grinders can be used to make much smoother chutneys, though chunkier chutneys can made as well. I've not found any difference in taste.

For those critiquing Dalia's air fryer comment and contrasting it with a food processor -- Air fryers are a much newer way of doing things - it's essentially a small oven that goes on your kitchen countertop. You're making excuses and are using a double standard. Lol. Besides airfrying is like deepfrying, NOT baking in the oven.
