Stephanie Jaworski of Joyofbaking.com demonstrates how to make Hash Brown Breakfast Cups. I really like one dish meals. It makes things so much easier. This Hash Brown Breakfast Cup is one such recipe. In a single muffin cup you have a brown and crispy hash brown crust, that is filled with ham, sauteed vegetables, melted cheese, and a perfectly cooked sunny side up egg.

    I actually made these, and added some diced roma tomato in there...substituted the hash browns for shredded potatoes cause its less expensive to do, and changed out the cheddar for gouda and mozz mixed---I can honestly say, this is my go to breakfast! Totally agree with the toast on the side. NOTHING LIKE THIS! CHEAP, EASY breakfast and even in this economy, its a winner!

    Have you frozen them? Without filling? I’m th8nk I get that maybe the way to go…for quick breakfasts

    @@honey23b2 No, I have never frozen mine until they are all cooked. Frozen get popped in a microwave and set for 45 secs to about a 90 seconds tops. Fast, easy, and when in a rush, this is still a good deal.

    I have made these years ago on my own, but I mixed the sautéed veggies with cooked bacon crumbles and mixed scrambled eggs in and then poured it in the muffin tin potatoes because I didn’t want the egg to be undercooked when I put in a whole egg I found that scrambled them in a bowl and mixing them with the veggies and then pouring them in tins …Was just like a little miniature frittata or quiche. If you’re French like I am it turned out with just ham cheese and scrambled eggs? great both ways.

    My 10 yr. old grandson wanted me to teach him how to cook and so we started searching for simple but GOOD things for him to start with, we saw this and he wanted to do this one. It turned out GREAT and he was SO proud of himself. I think having a good experience to start off with is only going to encourage him to continue cooking. So THANK YOU so much for this.

    I really appreciate some of the higher teaching techniques used here. The poster frequently says, "You can use more or less", "as much or as little" or "you can use something else" and so forth. Many cooking students get caught up with the fear of precise measurements and precise ingredients, and the poster's choice of words lessens the anxiety - it also encourages creativity. She also uses terms like, "...so that was easy" which also reassures cooking students. Her use of repetition reinforces the material, and her conversational tone avoids the "I'm the expert" mistake that so many cooking videos have. Many cooking videos have (often unintentionally but not always) a narcissistic tone. Placing a student in the position of being inferior in the process starts them with the mindset that "I can't do this." This video avoids SO many pitfalls that I see in so many cooking videos. I lecture doctoral and masters level students (in a different field) and would use this video (with proper attribution) to point out the excellent instructional methodology. And yes, I tried the recipe and it was delicious! So glad I saw this video! (Edit: I should also point out how pleasant it is not to have distracting background music!)

    I'm from the other school: I prefer to learn from precise instruction and demonstration. Once I master doing or making something exactly, I very readily wander off experimenting, but I need the precise foundation as a starting point.

    Beautifully done, awesome 👍. I have been divorced for 5 years now and I have been living with my 85 year old mother for the last 3 years due to her failing health, anyway, I was never really the cook when I was married and now that I have been with mother I've had to do most if not all of the cooking. Mother has guided me and has taught me many of her recipes and to be honest I'm not ashamed to have you over for dinner. My 3 older sisters have also guided me in the kitchen and have graded many of my dishes giving me an A+. So I try to fix different meals for mother so she can occasionally enjoy something different from time to time. She hasn't eaten very well for me in the last several days, we know her illness is progressively worsening, but I have a real good feeling that your hashbrown bowls are going to be a big hit. Thank you for sharing your talent and for showing folks like me how to make delicious dishes to share with our loved ones. I will say a little prayer 🙏 for you and yours.

    Rebecca Ho I agree with you... so many people (sadly) cast their elders aside, putting them into “homes” when they are old. Why don’t they understand that our parents have been here longer than we have so they always know more about life and they always can teach us something new if we only would listen. He even says his mother guided him in the kitchen. It does my soul good to know that some people actually do show their aging parents not only the respect they deserve but also they are giving back to their parents some of the care they received from them when they were young. A beautiful thing. 💜 Blessings.

    Hi, I realize this was posted 7 months ago, and I hope I'm not too late. When my husband's Grandmother, then his father, then his mother, got to the point they were having a hard time eating, their doctors had all said to give them Ensure liquid food. It's found in the pharmacy section of Walmart, or Target, or pharmacies. A cheaper option is a cannister of Carnation Instant Breakfast. Get the cannister the recipe is different from the packages, or bottles. (The cannister doesn't have that nasty aspartame fake sugar with the bad after taste.) The liquid food has all of the vitamins they need and is easier to get down. Even if you can get one real food meal down that's good. We used to put the cooked frozen mixed vegetables in the food processor, or blender, getting them minced sized helps too. I even put a small cooked steak in the food processor to mince it. My father-in-law complained it looked like we were giving him baby food, I told him to close his eyes then. You do what you need to do to make it easier for them. Because it must be frightening to know you might not live much longer, that this is it. The 3 of them each passed from lung cancer, my husband from asthma and COPD; may they Rest In Peace. It's a horrible way to die, don't smoke. I hope the liquid food helps, there's a variety of flavors. Take care, stay safe, and may God bless and protect you and your family. ☺️✌️☮️🖖 😷

    @@healinghands4821 Hi, Thank you for the comment, but these family members are now in heaven resting in peace with God. They are beyond the pain they suffered at the end of their lives. I'm the last one left alive, hoping I don't have to wait too long before I get to join them. “Everybody wants to go to heaven, nobody wants to go today...” not just an expression.     I bought a 6 jumbo muffin pan to make chicken pot pies last year. I rarely make jumbo muffins and was wondering what else to do with it. Then I stumbled across this recipe. I've seen your recipe demonstrations for years and they are all fantastic! I'm surprised I missed this one, but I'm glad KZread showed it to me. This is kind of like a breakfast pot pie and it is fabulous. So versatile! You do such a good job of explaining the basics while leaving room for experimentation. I can't believe I never thought to try a hash brown cup with filling. Thank you so much!

    Also, adding a tiny sprinkle of both very red paprika & dried parsley on top looks really great. Yes, a toast side, or something toasted, is a must! And some cantalope slices, or a few fresh strawberries etc for "dessert," + some juice (I like tomato with this especially).

    Thank you for the video. Looks yummy. My favorite part is at the end when she tries three times to put a bite on her fork upside down, gets frustrated then turns her fork right and uses her fingers to push it on. So real and fun.     I like the fact that the metric measurements are given on every instance. I also like that the bowls really are scraped out instead of leaving half of the ingredients in the bowls. And yes, I do like the recipes.

    Just tried it for the first time. Followed the recipe to a tee, except for the yucky onions. Came out perfect. Everybody loved them! I did change the name, though. In my home, they are now known as mountain flowers.

    Chris Roper Ach, some people just hate onions. I don’t understand those peopke, since I just *love* onions. I’d add grated onions to the hash browns mixture in this recipe… and sprinkle granulated onion with the salt & pepper at the end onto the eggs. You can never have too much onion as far as I’m concerned, but I totally get that some people dislike them. Just like I can’t stand dill, cilantro, celery, fish & seafood. Everybody has their likes & dislikes.

    Some people don't understand the difference in onion. White are very pungent. Yellow are about medium but still have some pungency and will make you tear up slicing them. However, walla walla, peruvian sweet and Vidalia are very mild and sweet. They don't have that onion smell or make you tear up. Vidalia is my favorite. Even my grandchildren like those and they're not onion fans.

    I love those little hash brown egg cups 😋. Using the Frozen shredded hash browns is really a game changer. So convenient. You can also use dehydrated shredded hash browns. A combination that I like is with a mushroom duxelle and Brie. And if you feel real adventurous you can use the two leftover egg yolks to make a small batch of Hollandaise to pour over the top 😋

    Looks extremely yummy! I’d add grated onions to the potatoes and sprinkled granulated onions with the s&p on top of the eggs before putting inti the oven for that final 8-12 minute cook. Like Stephanie says, such a versatile recipe!!

    I put a wrap of partially cooked bacon around the sides of the muffin cup before the hash browns, my veggies are usually sweet onion and mild jalapeño, maybe some chorizo, ham, pan sausage or precooked bacon, choice of cheese, a whole egg for me or a beaten egg for Mama-San. They can be composed more for brunch, or even for late night snacks. One batch I made with shrimp, chicken & link sausage & ‘the trinity’ with rice instead of potato, was jambalaya-in-a-cup. The real beauty of these is that you can individualize them. Kids can be finicky and when mine were growing up I could put their favorite additions in their own cup. Now I’m looking forward to making these with the grandkids ‘helping’...

    Thanks for posting such wonderful content. Got hooked on your Orange Cranberry bread and have been searching through what other recipes, but your style as many mentioned here - makes even many of us novices ok with venturing into the kitchen.     I really like this recipe! Had some early success baking eggs in a "bowl" of sliced french bread, so this one seems like a good step forward.

    A lot of men cook. When my husband was laid off, he found he enjoyed cooking and baking. So he makes a variety of meals on Saturday and Sunday because he has been back to work. He appreciates me more than ever before as he now shops!! Have a great day/evening

    Was so inspired by your simple recipe . GoldTouch from Williams Sonoma didn't have the jumbo muffin pans so I decided to bake with ramekin cups instead. What an excellent creation for a breakfast in a cup!

    As we are lactovegetarian Jews, instead of ham and egg, we add hummus and cottage cheese to the recipe to top off prior to the final baking. Tastes great.
