We challenged chefs of three different skill levels - amateur Desi, home cook Beth, and professional chef Chris Scott from the Institute of Culinary Education - to make us a batch of mozzarella sticks. Once each level of chef had presented and tasted their crispy and gooey creations, we asked expert food scientist Rose to explain the choices each made along the way. Gotta love an unabashed, unashamed level 1 chef. Desi knows what's up: string cheese is already the perfect shape, Prego heats up in under 5 minutes, and who wants to risk a hot oil injury from a deep fryer? Man after my own heart.

I need Desi to switch ingredients with a pro chef… that would be the best episode ever. “If at first you don’t succeed get an air fryer.” Love it! Lol
Desi’s mozzarella sticks are what I’d make normally, Beth’s are the ones I’d make when I have all day and I’m feeling ambitious, and Chris’s are the ones I’d get at that restaurant I can only afford once a year 😂
Love all three. I want to try and prepare level three’s recipe but pair it with Beth’s sauce. Level one was the backbone of this video lol. His lack of time spent making the food was made up with his commentary lol. He was so relatable for the everyday person.

Yeah cheese sticks is definitely not something I want to spend a ton of time making. They are a snack food after all.
I love the "character development" of Beth recalling things she learned from chef Frank! It feels nice to see their friendship over cooking like this.
I love that Desi knows what he's about and owns it!! "I ain't got time to cook a sauce for 2 hours. I got stuff to do later" Relatable.

This was a great video, Desi is a fantastic addition to the cast, but it felt like Rose's analysis was cut short at the end. No notes on air vs. oil frying, no commentary on Chris's sauce, or the different breading techniques used. Give us more Rose please!

Yeah, right? I also think it would be interesting to hear why they approach it differently and sometimes they might be able to give us more understanding, why a different taste from a different level might be just as nice, just a different preference sometimes maybe!

A level 1 chef simply isn't capable of making fresh mozzarella, or in other instances, butchering their own meat or breaking down a carcass. You want them to explain "I'm using string cheese because I have no idea how to make fresh cheese"?
How old store-bought string cheese is has honestly never crossed my mind. 😂

@@nairsheasterling9457 I knew a guy who has worked in many grocery stores. He worked at one for a short time that didn't train stockers to rotate stock properly. He pulled too many products off shelves because they were expired or past their sell by dates. You really should check dates on products before you buy them. Most products have a 45 day shelf life and at most 14 days after a sell by date. Pasteurized products can go upwards of 3 months if they have been sealed and processed properly.

I love that you include the level 1 cooking stuff on all these recipies. It's very nice and validating those of us who are handicapped and cannot do everything fresh from scratch.

This is the first video where I'd absolutely love to see them all taste each other's dishes. Others, yes, it'd be enjoyable, but these 3 personalities are fantastic together; their reactions would be so fun to watch!
I'm surprised they didn't talk about the safety risks associated with deep frying, especially if you don't know what you're doing. My SO accidently started a grease fire since he had no idea what he was doing while trying to homemade mozzarella sticks like Desi lol. Thankfully no one was injured, but it did cause several hundred dollars worth of property damage
Awesome crew tonight! Desi was hilarious, Beth was a gem (as always), and I 300% want to tackle Chris’ try for football season. I can drown the sorrows of my perpetually losing team in cheese and tomatoes. Heaven on Earth. Fabulous episode, folks!
A true level 1 chef
Every time I watch these episodes I just wait for them to taste each other’s food… I want to see Desi’s commentary on EVERY SINGLE food show from here on out!! Says exactly what everyone is thinking!! Better yet, give that dude a Food Network show!

I would like to say that I would at least try to do a level 2 mozzarella stick, but honestly Desi just used everything I have in my house right now to make the kids a special back to school snack so now that’s the plan! 😂

The key to making them super crispy in an air fryer (just like with chicken wings) is to use a bit of corn starch instead of flour. Makes them very crispy!
Chef Scott is clearly very talented but it took him like 5 hours of work to make mozzarella balls and when I want mozzarella sticks I'd much rather have either of the other two options, the simple, straightforward, mozzarella stick is part of the charm

We all love Beth. She's everyone's gran. She's no pro but definitely is a home-cooking pro. However, this episode is totally taken by storm with the dynamism of Desi and Chris' chat and banter. Love them together. Frank-Emily and Saul-Lorenzo have a new challenger for best screen duo.
Beth's pesto sauce looks like FIREEEEEE. I'm inspired now to make my own. Using pistachios is also great because pine nuts are the most expensive thing ever.

Desi is fun to watch!! 🤗🤣😅 And I love using the air fryer, too. I wouldn't want the pesto with mozzarella sticks and I don't like adding weird things to my mozzarella sticks. If I want meat, I would order it. Having in in my mozzarella is not something I'd want.

I watched this series/channel all the time years ago but I guess I forgot about it. This video was recommended and I got so excited! I also subscribed so I don't forget to watch again. The format is still the same which is great, but there's still one thing I would really love to see - all the chefs trying each other's food. I'm sure it would be a scheduling nightmare but it would make good content.
Desi is one of the funnier and more realistic amateurs. Use him more !

I have made Desi's mozzarella sticks and you know what they're tasty and I like them. Also I can't eat a deep fryed stuff it up sets my gut, so a air fryer is great for me... And my chef friends have no clue that I've cooked in a air fryer and not a deep fat fryer. 😸😈😸😆
Something to note with the air fryer. Using cheetos for breading actually makes a crispy crust because of the oil inside the chips deep fries for you

i remember Chris from Top Chef. Loved seeing him on this series & Desi was a great addition as well!
I like using the air fryer. It doesn’t heat my house up like an oven does.
I've been a cook since I graduated high-school back in 2012 but while I was living on my own I got myself an airfryer because I had no idea what I'm suppose to do with the veggie oil after I make a single meal for myself so the airfryer was a big help
I absolutely use an air fryer to cook everything, easier for me and I don't really mind not having a deep fried oily flavor or slightly less crunch
hehe, of course Beth is in the episode working with Mozzarella. Ya'll at Epicurious know what you're doing, and i'm here for it! Well done

I love the fact that they show higher level cooking without any disrespect to the casual cooking.
Please Epicururious make videos of just the Level 1 chefs together. Like Sunday dinner made easy or Friday appetizers or the like Desi and Emily are the best people on KZread. And never fail to entertain!
I respect the level 2 way of life. Level 1 is understandable but after having done home cooking myself it's impossible to go back to eating certain things that are store bought (like sauce) after tasting the difference with something I made at home myself. Level 3 is impressive and has to be satisfying/delicious but I 100% don't have the time/money to do absolutely EVERYTHING from scratch. I'm very comfortable being a Level 2 chef for life, it's the best middle ground to have.

the level 3 stuff is usually what I'd try out on weekends when I have more time. For during the week and after work, level 2 or even level 1 has to suffice usually, it's gotta be fast, efficient and delicious. However it's always possible to incorporate different ideas, e.g. wrapping the mozzarella in the prosciutoo, I'll definitely try that out some time.

I wouldn't make the cheese from scratch but with a bit of planning (ie bread crumbs ahead of time and leftover sauce from another project) I would totally make his mozzarella balls.

Chris Beth & Desi were all great! What stands out to me is that Desi is what a level 1 chef should be IMO! Making something yummy using pre-made foods. Too much similarity between level 1 and 2 chefs in many other videos

ive been burnt by oil a ton, literally almost time i put any amount of oil in a pan it somehow ends up splashing on me, and although airfryers dont make food as great as deep frying does, it is so worth it just to avoid burns and blisters. it also is a lot better health-wise. also cooking bacon in an air fryer is literally the best method, i once cooked an entire pack in my air fryer (the peices were separated and on racks) and it took like 20 minutes in total.
Level one dude is hilarious with his one-liners... he has my vote!
Level one chef: I respect a person who knows their limits... And he seems like a big ol' teddy bear🤗 Level two chef: You can never go wrong with Beth 💖 Level three chef: Balls. Dude, The episode is titled '4 Levels of Mozarella STICKS'. But they still look tasty 😆

You should add Desi more! I love his commentary. He's a level 1 but he seems to want to learn. He should be a guess on your other show where you swap the pro chef and the level 2
