    To puree garlic, I do the following. I only have a standard veg grater. If you grate the garlic up and down on the finest part, it will give you small gratings; however, if you do it in a horizontal oval pattern (almost side to side), it gives a garlic pulp.

    Jacques knows much - but he is wrong. Back in the 1800's, after Careme's days when they thickened things via reduction and liaisons with yolks and cream, they toasted the flour. Not long but they did toast it. An ancient tip - try toasting flour before adding to pastry cream and do cook flour for a solid 60sec before the addition of liquid

    Амбрэ наргиль-янтарный кальян. Чудесный аромат, напоминает мне мое любимое варенье из детства, мама варила из маленьких ранеток целиком, черноплодной рябины и добавляла вишневые листья. Вот так это для меня пахнет, абсолютно натурально, сладко и терпко и вишневые листья сверху

    Well, it is steamed white rice. And the chicken cooked in broth, so it wouldn’t get color like a roast chicken. I am sure it had a lot of flavor.

    The moment they both say “that fits beautifully” at the same time cracks me up. 3:58. We can’t see it, but the leek-carrot bouquet must have fit just *beautifully*. Those two together make my heart happy

    Will keep on saying this, I ABSOLUTELY LOVE THE THEME MUSIC FOR THIS SERIES! So upbeat, it sets my mood to a 10+ !!! Not that Jacques and Julia need an assist for that. Kudos to the composer.
