    If you make the same mistake he did just toss it in the microwave with a loose lid, you'll have something similar to egg Jjim. Silky, smooth, delicious. The first time I made eggdrop soup was in my regional culinary competition in highschool. No directions were provided until afterwards. Being Asian islander and Jewish, we love our chinese american food. I got lucky and I've had a lot of egg jjim instead since then 😂.

    I have trust issues with watermelon water. Does straining make a huge difference with taste ? Because blending without straining I wasn't a huge fan.

    Fun fact about Chinese cleavers: they have differential beveling, meaning that the section of blade that's closer to the heel is actually less sharp than the forward section. The idea is that you use the heel section to do high impact chops, and the forward section to do precise work. This way, you won't chip the heel, and the forward section is super sharp for fine cutting.

    After years of using American, German, and Japanese style knives, I've been converted to using Chinese-style knives only. I own three of these cleavers, different sizes for different jobs. Also got a Chinese-type fish prep knife, which is so easy to use.

    Again the brand is so important CCK 1302….carbon steel cleaver, just for veg….its my go to knife. 4 generation of chefs. Also if tilt the knife outward then it wouldnt cut you, and goes faster.

    When you say , “put this in your fridge up to 4wks” does that mean it needs to be in the fridge for 4 wks in order to use or it’s only good enough till 4wks?

    Pastas are good looking and have proper elasticity thanks to the gluten.. but they ‘re really raspy and chewy .. has any one found a substitute for the lupin flour that works well ?

    I did this recipe without egg yolks. And added two tablespoons of cocoa powder (chocolate ice-cream). Turned out great - best ice-cream I've ever did: no weird aftertaste, ice-cream soft and scoopable. Not sure what would have the egg yolks added to the result but sure not messing with salmonella.
