China to start a war which would include USA is highly unlikely, because it will be hit with sanctions on the day one. With about 30% combined exports to EU and USA, that will hurt. Also, most, if not all of China's oil comes over the sea and that will stop very fast. Russia has about 3% of all China imports, so it's not really something they could count on. There is also a high percentage of imported food, which would also stop. Check Statista, for more detailed picture. All of this is just posturing and harassment, with no intention of escalation, but if it happens it will hurt EU much more than US. There's also a fast aging China population, which will cause problems in the not so far future, including military personal. China's best option would be to invade Siberia, which wouldn't provoke that many sanctions from their biggest trade partners and give them access to oil and minerals there, but nuclear deterrent is a consideration. If Russia falls apart, which is not completely impossible, it will make a different picture.
