    Since the title said beans for dessert, I went to read bean as well. If it didn’t, it’d probably be more of a toss-up (red bean, custard, meat, etc), but that bun in particular in the video I probably would still think red bean.

    What I do to avoid the wrinkly/soggy-ish top when steaming buns is to only do it with only one layer in the steamer and the lid at a slight angle on a side >

    don’t remove the lid immediately when the buns are done! wait for 10 minutes with the heat off and the pan off the burner and they should be smooth

    @@MissConcupiscible You don't have to steam them one layer at a time as I do 3 - 4 layers. What she did wrong was she over proofed her dough, which will cause it to flatten and wrinkle when done steaming and that's exactly what happened to hers. When you over proof the dough, it actually weakens it and this was what caused it to flatten and wrinkle up.

    Steam bun dough is a little different from bread dough. Typically needing less hydration for the same softness due to the cooking method. 60 percent is fine. Fat also helps make it smoother. Lard is prefered but tallow, coconut oil, or shortening also works. Incorporate once some gluten has already formed but make sure to rest the dough a bit before adding the fat. Resting and proper degassing also helps with smoothness. Resting relaxes the dough and degassing removes the large bubbles which can cause wrinkles on the surface. Here's an outline of the process after hydrating the dough to filling: Kneed 6 min Rest until dough is relaxed 30-60 min Incorporate fat into the dough Rest until dough is relaxed 30-60 min Degass the dough Portion the dough Roll out the portions and fill Make sure not to overproof... Also you might see some bubbles when you roll the dough out pre-filling, you can go ahead and pop those to keep the dough smooth.

    For smooth buns: Wrap your steamer lid with a piece off cloth. Or cover your steamer with a piece of cloth before putting the lid on the steamer So the condensation at the lid will be absorbed by the cloth rather than dripping down and ruining the ‘smoothness’ of the bun.

    We have a similar dish in Austria called "Germknödel" (yeast dumplings). They're usually filled with a plum/prune paste which is quite sour so we top it with a mix of powdered sugar and poppy seeds and serve it with melted butter or vanilla sauce. It was one of my favorite dishes when i was a kid.

    I’m from Malaysia. The first thing we associate with ‘beans’ is ‘dessert’. Contrary to the Americas, beans are often used to make desserts here. From red bean sweet soup, to red bean Mochi and they even serve as toppings for shaved ice.

    @Jeanelleata 3 tipps for perfect dough: Use very fine white sugar. I usually only add very little sugar and salt to dough. you have to knead it with pressure (the bread machine won't do a wel enogh job). Knead the dough with your hands and bodyweight, until the texture is like silk. This will take 30 minutes minimum. Work up a sweat! there is a sweetspot regarding letting the dough raise. Don't wait too long, like no more than one hour. When your dough has risen, don't knead it again, just gently roll it, split it into portions, keep them seperated by bakingsheets and covered with a cold moist towel. Roll em out and fill em quickly, and don't wait to steam them. when one plate of dumplings is ready, steam while filling the next ones. steaming takes like 4 -6 minutes. add 2nd pan of buns ontop of bottom pan, whenn you are done with the following buns the lower ones will be ready. so now pan 2 goes down and pan 1 goes on top with the fresh buns.

    7-11 in my country has got almost every kind of fillings. Actually meat isn't my first thought, but red beans. Also black beans, sweet salted egg paste, custard and taro on the sweet side ... I guess I better get up and go get a few buns right now. 😋😋😋

    That’s true. I know someone who raised their daughter to love tea sweetened with honey instead of juice or sodas, she thought they were way too sweet bc she was used to honey. Adversely, many places strictly eat pastries for breakfast, something we think of as a desert over here in the US of A 🙂

    In Poland we just eat when without a filling and usually either pour a sweet fruity yoghurt on them or go the savoury way and add some meat on the side. Then pour some gravy on them. Some versions do have a filling tho. It's usually strawberry or blueberry, once I even found chocolate filled ones.

    I remember seeing these adorable buns at a Chinese restaurant about 15 years ago, when I was 7. They were so flawless, shiny and white, and when I bit into it, I swear I ascended. Sadly, we never went there often, and the few times we wet after that,, they were filled with pork. Wherever I can find these buns,I get as many as I can. I tried to make these once myself but I accidently burned the beans and the bread was stiff

    @@snails_are_cool we didn't have a steamer either but we had this plate thing that had holes in the bottom of it and metal feet, so I put it in a big pot and filled it with water until the water was halfway up the feet, then I set the stove on a low setting and put a lid on the pot. It worked perfectly, im just bad at making bread 🥲

    Tip for less flat bread: for most breads that I’ve baked there’s usually a second rest period! After shaping/stuffing it the way you want, lightly cover and let it rest for another 30 minutes or so, you’ll see some difference in the fluff and smoothness!

    This Korean friend of mine would always make the Red Bean Buns and they taste absolutely delicious. The fun thing about them is they taste slightly more dessert-y when you keep them in the fridge and let them cool but hot buns are definitely way more amazing. My friend always puts a generous amount of bean in the bun to puff it up

    Using the right flour makes all the difference! I'm sure you can find one in a Chinese or Korean grocery. It has higher protein content so the dough comes out smoother and more pliable. The wheat used in it somehow makes it whiter than normal AP flour. It's specifically for noodles and dumplings. ☺️

    Fun Fact: Here in the Philippines, we also have a delicacy named "Angko"! Its made of sticky rice and it has either sugar or sweetener and peanut in the middle! People who visits Camarines Norte, especially Vinzons, buy this because the town or province is famous for this rice delicacy. 🤎

    I would love these if the beans were salty As an African, sweet beans just don’t taste right lol. I think it’s an acquired taste but I prefer it salty anyways. Salty garlic bean paste in these buns would slap 😋

    @@inklingofevil i prefer savory foods but for beans i rather have sweet (chinese/vietnamese family). it all entirely depends on the bean as well. chickpeas and lentils are seldom served sweet while certain red beans are rarely savory, even if not sweet. mung beans can go either way. this is all according to traditional recipes. modern recipes = anything goes

    Add vinegar to the steaming liquid to make it whiter. You may want to work your dough a bit more to make it smoother even during the second rise after its filled. Commercial steamed buns also use lihiya or lye water on the dough (culinary lye not the one used in soap making) to make them extra white and smooth. Hope this helps.

    When I was a little kid, I had this book about how a little Japanese girl was bullied for what she ate at school, but one kid actually went up to her and genuinely asked about her food at lunch and she let him try it and he liked it for the most part even if it took him a bit to adapt to some of the flavors and they became friends and always shared their food at lunch and she taught him to use chopsticks. One of the foods she let him try was red bean icecream, which was the one he liked the most. I've never been a huge fan of baked beans in particular, but I always really wanted to know what sweet red beans tasted like since I was little because of that book (and sushi and a few other foods mentioned). Good news! I've gotten to try them, and they're really good! It was one of my favorite books as a kid, but I feel like I can appreciate it on a much deeper level as an adult for the lesson it taught to me. I always have been really open to trying foods from different cultures since I was a kid, and I just wonder if that book contributed to that.

    My first time eating one was at my cousin's wedding. Both her and her husband are big anime/k-drama fans (as well as my cousin being half Japanese as well as an animator ) and pretty much eloped to Japan where they were married at a Shinto shrine in traditional attire. Then, on the anniversary, they did something similar to when people renew their vows. Our bride's maid dresses were based on the attire of one of her OCs. There was a buffet table filled with Asian desserts. Saw the name and was pretty skeptical, then took a bite. I ate 4-5 😅

    In korea, we call it 'dan patt bbang', which literally means 'sweet red bean bread'. We also have 'ho bbang' which means chinese(?) bread(not exatly but close). Both contains red bean paste but we usually eat the latter in winter steaming it in a hot pot.

    A tip that might help- if u only use a small amount of dough, they won’t become so large and droopy. But I really wanna know what type of flour you used. Our family often makes buns as breakfast 😋

    we have a similar thing in the UK it’s with a dough like bun but oven cooked and the filling is just like the beans although it’s beef. we call them Oven Dough Beef Gravy Buns, or steak pie for short

    I love Miyazaki's work. "Spirited Away" is one of my favorite cartoon movies. I do have the DVD. I also have "Ponyo", "Howl's Moving Castle", "Castle in the Sky" and "Princess Mononoke". I'm working on getting some more of his movies. They're great stories.

    "Totoro" is the best by Miyazaki IMO. I used to have it on vhs when I was like 3. It was my favorite movie ever. I'm 30 now and still love "Totoro" if that says anything lol

I even have the complete series on DVD. That cartoon had a big anime vibe to it. I haven't watched "My Neighbor Totoro" yet. But, I'll get to it soon. Have you watched "Inuyasha" or "Bleach"? I've watched all of "Inuyasha" and I'm 10 shows in on "Bleach". These 2 anime cartoons have a similar plot. Ichigo reminds me of Inuyasha and Rukia reminds me of Kagome. She reminds me a little of 'Daria', too.

    As far as I know there is a special flour for buns which make them more fluffy and white. My aunt in Malaysia used to make them. I also know that you can buy the flour in an asian grocery store. Hope that helps :) Edit: Try looking for banh bao flour

    Being originally from South Asia, the idea of beans in a dessert was quite alien to me.. that was until I tried the sweet red beans bun in Japan and Halo Halo in the Philippines.. I still think the texture of whole beans throws me off, but they are delicious as a paste

    Sweet beans can be weird if you're not used to it. Most of my white friends can't handle it, but it is good. I usually have it in a glass of diluted condensed milk and ice.

    I've been trying to make gaozi recently too!! Mine turned out just like yours. Apparently that means they need to be kneaded for longer and after proofing, the air needs to be really REALLY punched out. Good luck to us both!

    I tried this but it was mochi and much smaller. The dough wasn’t baked. It was surprisingly good and the beans tasted sweet, it was good.

    Steam on medium. Once after streaming, turn off heat and let it sit for a few minutes then slowly tip the lid to a side without bread and let the water drain off. temperature and a pressure change often causes buns to go flat. The wait time helps it stiffen and equalize to the room temp air, and tipping the lid prevents water from dripping and collapsing the skin.

    Try to keep the gluten going in one direction! It keeps the dough smoother. Also, don’t kneed it after it rises, simply cut it and roll it out :) Hope that helps! Happy cooking! 🍽

    I made some homemade Chinese mooncakes a week ago and I used half a can of red kidney beans blitzed with about a tablespoon of water, 3-4 tablespoons of sugar and then probably a tablespoon of maple syrup, just to make sure it was sweet lol and they turned out great (flavour wise, bit disastrous looking but tasted great!). Reminded me very much (the crust of the cake as much as the filling) of Taiyaki, the sweet Japanese fish cake sweets you see a lot in anime and Japanese pop culture? I had one when I went to Tokyo and it was very reminiscent!

    My mum recommends using a harder dough (adding more flour) and kneading it more. She says this will help hold the shape better and create a more even surface. She also always leaves the lid on the steamer for 5 minutes after turning off the heat. This helps with the surface too

    The buns will be smoother if you let the dough rest longer, or if you mix them longer. Resting is more ideal as the longer you mix them, the chewier they will get

    What do you think the filling is? Me: hmmmm. So it's gotta be tricky so it can't be red bean or green been. Must be meat or vegetables! Her: It's not meat. It's red bean. Me: 👁️👄👁️ Where I live, the first flavour you know of in a pao is red bean or green bean. Why? Because if kindergarten gives it for break time, it's always red bean or green bean. Usually from my experiences, you only get to know about the meat and vegetable pao later on when you're older.

    In Germany we eat steamed buns without any filling. They are called "Hefeknödel" (yeast dumplings). They are usually neutral in flavor and are typically eaten with a hot and sweet sauce - either vanilla or a fruit sauce from mixed berries.

    When visiting Japan a few years ago, I accidentally bought a bean paste bun, and I’m personally not a fan. I can see how people would like it, but it has a really strong flavor that doesn’t taste right to me.
