Wild Mushrooms and Raspberries | Late Summer Cooking & Preserving
We have a blast harvesting ripe raspberries in the grassy meadow and wild mushrooms in the mossy woods of our property.
A favorite way of ours to preserve mushrooms is as simple as air drying and storing in jars for winter. These mushrooms were scrumptious cooked into a pâté and the Italian dish Pappardelle.
The raspberries made a wonderful preserve, no pectin needed, and we finish off last year's berries in the freezer with a quadruple berry pie!

Because there is no meat it is a mushroom spread not pate=PAT TAY. Vermouth=VER MOOTH. Your recipes are so unique...I have tried a few having to adapt to what grows here. They were yummy! I love how you are learning all of the plants and mushrooms of your area. Mushrooms are hard to learn and identify. Kudos. Thanks for sharing!

Vermouth is a fortified wine with botanicals, and it is pronounced ver mooth. And pate is pronounced pah tay. Love your videos.

It's funny how regional some things are that you don't expect. I grew up on the east coast and I remember vermouth commercials on TV way back when, and everyone ate pate. Then they talk about things like kefir cheese and cowboy candy and I'm off to the internet to find out what it is.

Something I was told years ago when foraging mushrooms was that it's best to use a mesh bag/pouch or basket that allows the mushrooms to breathe to prevent them from getting slimy, and it also allows for spores to release while you forage.

Love when you add the temperature, sunrise, and sunset to your videos! The variety of foods you are able to forage is astounding. The pie looked delicious. The mosquitoes looked vicious.
It's pronounced vermooth and it could be considered a type of wine. Usually used with gin or vodka to make martinis. Excellent for cooking. The white vermouth is dry. Sweet vermouth is red.

The coral mushroom is one of my favorites. We would soak them in salt water overnight, rinse, dip in eggs, flour and fry. Loved them.
I worked most of my adult life in Northern Canada but chose to reside near 49°N. It really warms my heart to see two compatible people making forage and harvesting.
My favorite pie is the one in front of me. That one you made looks delicious. Love you guys.

After 'The Hut' episodes, it's nice to see more relaxed activities. That blueberry mead looks like it will be delicious! It sounds like a great combination. My pie vote goes to chocolate silk as well. 👍🏜
When you put the road in by the bees, you can keep the fireweed by plucking the rhizomes out of the tractor-lifted soil. Replant in the new area immediately if the weather is appropriate, or pot up until you have a place for them 😊
So good to see you guys in the forest again picking all sorts of Alaskan treasures , preserving them and cooking all sorts of dishes. I used to do a delicious cranberry pie for Christmas. Family loved it and so did I. Now I leave much of special cooking and baking to my children… Such a pleasure to view your creativity in action… and in opening spaces of Alaska… Keep safe as always ❤

So incredibly envious of those raspberries grew up with them in Bavaria as a child and just last year started growing a variety that actually grows here in the hot and balmy southern USA …super concentrated flavor unrivaled by any other …never knew we could use fireweed as a tea…the bees are happy there and thank you for thinking of our pollinators so very precious for life…thank you for sharing all of the nature and edible plants the filming is exceptional…always a joy when you post us us city dwellers…stay blessed
Hi there guys, your pate as you call it is the French word for paste, it's spelt pâté and said pat-ay.....I thinks it's amazing how much you're able to harvest fresh from your land, fish and hunt....love your lifestyle and love seeing Alaska through your eyes! ❤❤
Next time you make wine be sure to boil your mixture for a few minutes, allow to cool, and then pitch your yeast. Way more likely your batch won’t spoil, plus you won’t have the native yeast competing with the specialty wine yeast you added. Looks delicious

Since they pitched a whole package of yeast into the one gallon carboy there will be no problem with the D47 overtaking any wild yeast that is present.

Boiling will absolutely effect flavor. For good or ill, hard to say til it's done. Another option is campden tablets. Not my favorite, but for wild fruits and such it is a very good option. Edit: They used frozen berries. No need for boiling or campden. Freezing will kill off wild yeasts and kill or retard any bad bacteria to the point the wine yeast will beat them into submission.

Lingonberry jam is a swedish stapel...there are a couple of varieties but it's usual a condiment to meatballs, meatloaf and more. I foraged some today while I was foraging for mushrooms. 😃

Hi just wanted you to know, Vermouth (pronounced Ver moo th) is a wine that is flavored with herbs, spices and roots. You can get either sweet or dry. Each is good depending on what you want to cook with it. It isn’t a drinking wine but can be mixed with different drinks. The most common is a Martini. My favorite use is with chicken that has been pressed with Parmesan cheese and sautéed in olive oil. Deglaze the pan with Vermouth and finish in the oven. Have fun with it. There are lots of recipes you can use it with.

Great find of the lingonberries! Very traditional Scandinavian delicacy that IKEA shoppers may be familiar with. It’s used just like ( and tasted similar to) cranberries. Perfect accompaniment to Swedish meatballs. I’ve been able to grow some here in the Ozarks. Enjoy!
My parents were from Newfoundland and we ate the same berries you harvested but Newfoundland has different names for them. Lingon berries are called partridge berries and make a great tart jam and cloud berries are called bake apples and we used to eat them with canned cream. Thanks for the memories❤️

I am from Newfoundland Suzanne love partridge berries although bitter they make great jam uses a lot of sugar I make my jam with blueberries sooo good.

One thing I love about the way you interact with nature is you consider nature not just your wants, I'm not going to pick this right now because of the pollinators love to see it!
I see unripe Lingonberries as you move into the treeline. When my parents homesteaded in Birchwood sixty years ago, on what eventually became Jayhawk Drive, we had a beautiful wild Raspberry patch which was shouldered by wild red currants. The back area of near our log house where the well was dug (150 ft deep by hand), eventually grew over with a carpet of Lingonberries which makes the best sauce to eat with moose, reindeer, and other wild game. the edges of our driveway filled in with blueberry bushes. Enjoy nature's bounty, and thanks for taking me back in time to one of my happiest memories.

I love lingonberries. We used to go out in the forest in Norway when I was little and forage for them and they were then made into a jam we usually had with meatballs or other meat. So delicious- I like them better than cranberries. Love, love, love your videos. ❤️

Horse manure makes the best compost! That’s what my mom used and her garden always did amazing.

Thank you so much! You answered my questions about some of the mushrooms I have. I have books and even used an app to help identify what we have up here. I do have a lot of the hawk one. My property is also covered with low bush cranberries with some of the pumpkin berries and blue berries. You guys are awesome! Look forward to you videos!
Interesting that my wife and I were visiting Alaska on the date you filmed this, I was born in Anchorage in 1947 when my dad was stationed at Ft. Richardso, but I left when I was a year old and never went back until in August. Loved it. We've been watching you guys ever since. By the way, I learned a few years ago that dry vermouth is a great thing to deglaze a pan and make sauce when you're cooking with chicken, pork, or fish. I love it's lemony flavor. Keep it up. My wife and I love your channel. We were so impressed with your 6K mile journey to pick up the tractor.

In Italy we do Pappardelle with mushroom, pieces of sausages, a little bit of cooking cream and on top parsley. Hope you try this recipe. Love your videos ❤

That mushroom is called the bleeding tooth mushroom. It is edible but only if cooked.
The pie you made looks delicious. My favorite is blackberry! My husband and I took a cruise to Alaska for our 30th wedding anniversary and loved, loved, loved it. We went to Ketchikan, Juneau, Skagway, and Sitka. We flew out of Anchorage. When we see you in Anchorage, we say we have been there. We love Alaska so much and love the scenery you include in your shows. Keep doing great work with the channel!

Wonderful as usual! My choice of pie is coconut cream with real meringue. That raw pie crust was so puffy like a cloud and baked up beautifully. Thanks for sharing your lives with us. I must admit your pets worry me. They seem to have aged rapidly, I just want to reach out and pet them.
