Is raw egg a thing in your country? (Also, *really* make sure you confirm the safety of eggs in general and the safety of a particular brand of eggs before you eat them raw! Americans, I'm looking at you.) I said "Japanese people would get sick with salmonella from egg once every two lifetimes" but I mistakenly calculated that as if they ate *all 320 eggs per year* raw. So the infection chance is even much lower than I made it seem. By the way, the real title is something like "Japan was the No. 1 Consumer of Eggs in the World. Why? And, why do they eat raw eggs? And are Eggs unhealthy? Also, is there any difference between a $70 and $1 Egg?"

Not eggs from shops, but here in Ukraine if I visit my friends who have home farms or a village where you buy local food from peasants, it is a pretty cool thing to consume raw eggs. Would never do this with a normal egg from the shop, they even taste differently. Quail eggs aren't very expensive and are also tasty af raw.

Wow a WIL video that I can actually add some valuable information to! That's something I never expected to happen. About 5 years ago, I got 20 chickens as a hobby and maintained them in a closed coop. They were fed standard cheap pelletized chicken feed, because it was cheap and I didn't know how else to feed chickens. It was mostly comprised of cheap grains like corn or wheat mixed with some soy for protein and some calcium to round things out. The eggs they made were comparable to grocery store eggs, but much cheaper (it cost me about $1.10 to make a dozen). I read a book by a guy named Joe Salatin and decided to try "pasturing" my chickens. I bought a trailer, converted it to a mobile chicken house, learned how to set up wire, and moved my chickens every day from one spot to the next. This allowed them to essentially free-range in a large, but contained area. I live in an area of Texas that is known for having a lot of Dandelions, which is a good source of carotenoids. One day, while moving the chickens to an area crowded with Dandelions (considered weeds here), I watched them rush to pick apart the Dandelions. Thinking nothing of it, I went about my day and about a week later noticed that the eggs they were producing were much more red and flavorful than before. I stopped supplementing the pelletized food and started mixing my own food fresh every day, adding and subtracting ingredients so that I could hone in on the best feed for the best flavor. Flash forward to today and I manage about 2000 layers as a part-time job. Covid has made my business much more profitable (I live close to a Metro area and offer contactless egg delivery). It's been so profitable, I've considered dropping my current full-time software dev job in order to expand my egg laying operation. If you live in the US and you're interested in getting designer eggs, don't look in most grocery stores (they won't have them). Instead, look at local farmer markets, as they are more likely to have designer eggs. If you can't find any near you, and you have 1/2 acre of backyard space, I would recommend getting 2 to 3 hens and raising your own chickens. Breed matters a lot in determining flavor, so aim for heritage breeds that are better at foraging (I use mostly Black Jersey Giants). If you can, mix this feed for each chicken every day: - Dandelion Greens (or Chicory/Sow Thistle if it's not available) 25g - Carrots (finely diced) 25g - Pumpkin with seed (run all through a food processor) 25g - Collard Greens, Spinach, or Arugula 25g - Finely diced Leftover meat (do not cook it with onions, no chicken because chickens are cannabalistic, normally I put in fish, beef, or pork). 25g (double this serving to 50g during Molting season in Autumn or when you want your laying hens to give you eggs for hatching) - Freshly ground Basil (I have a Basil tree) 1tbsp - Freshly ground Oregano (I grow it in my garden) 1tbsp - Cinnamon 1tbsp - Cayenne pepper (double when cold) 1tbsp - Ginger (ground or freshly diced) 1tbsp - Red pepper flakes (adjust this based on how you prefer the flavor, I like it others do not, grind it into a powder if you can) 1tbsp This will produce a very yellow/red tasty yolk that can give you a true designer egg experience.

It's mostly a Mexico city thing, but you can find it in juice stands all over the country. Also, it's often done with quail eggs instead of chicken eggs because they have lower risk of salmonella, but you can find places where they also use chicken eggs. PS. We now know ancient humans could comfortably live to 70+ with great health hundreds of thousands of years ago (the reason life expectancy is low is because of high child morbidity rate).
