    밀가루반죽이 기본적으로 혼합반죽이 잘됐다면 완성된것인데, 면발의 끈기성 이러한것들은 중요하다고 생각하지않는다. 기계로 반죽을 하는데, 굳이 발로(발바닥) 밟아서까지 할필요는 없다. 음식을 만드는 사람으로서 생각은 옳치않은 방법이다. 발로밟아 반죽을 하는것은 '예의'가 아니다. 한국도 그런자가 많다.

    I loved how the old man spun the big bottle to create a vortex so that it would come out faster. Also loved how he tasted everything, and then even though I don't speak Japanese, it seems he said "that's very good!".

    I always love it when the cook try their soup first. It is a respect for customers so they can eat the proper food.
