    I just found your channel a few days ago, and I've been watching so many videos all day today! I want to learn how to make Japanese food, and I appreciate all of your recipes and demonstrations. You make it look relatively easy! 😊 I love Japanese food, but I have celiac disease and I cannot eat anything with gluten. Unfortunately for me, most Japanese dishes have regular soy sauce included as an ingredient. (traditional soy sauce is usually fermented with wheat, which contains gluten). So when I go to a Japanese restaurant, there are many dishes I'm not able to eat. 😢 By watching your channel and trying the recipes, hopefully I can learn to make my own Japanese food at home, using my gluten-free soy sauce. Then I can try all those dishes that look so delicious!

    Last week I took two friends to a Japanese restaurant and I played a little prank on one of them. She is all about how much she likes sushi, but didn't know the only actually japanese-owned sushi place in town. And I'd been telling her that japanese food is so much more than just sushi. That day they had okonomiyaki as a special. The other friend is vegan, so he couldn't have it because of the eggs (although he said before he would like to try making it with egg-substitute), but I had told my friend that I would order it for her, just so she tries something different. We decided to share it, I ordered it vegetarian (none of us like meat much) but with bonito flakes. Her face when she noticed the flakes moving was priceless! 😂 Of course I explained that it wasn't still alive, it's just the heat of the dish moving the flakes, and she did enjoy it. She didn't like the sushi much, though, because the wasabi was already in there.

    Brilliant! All recipes very good and you also covered the great, simple egg salad sandwich in another of your clips. Something I learned in Japan was to make pickled, hard boiled quail eggs with soy, vinegar, oil, chili etc. In a closed glass jar they are ready after one week in the fridge and they stay good for another 3 weeks or so. We have cheap quail eggs here in Romania so I make them now and then. They are the ultimate test for chopstick skills, very slippery with the oil etc. Especially if you give the person Korean stainless chopsticks! :-)) (A bit mean, but fun).

    Ooh, a recipe for leftover breadcrumbs!! I'm always sad about throwing them away and make pancakes with them. I wonder, if you freeze the egg first before you crumb it, what would the result be? Soft-boiled crispy fried egg?

  • @JapaneseCookingChannel

    @JapaneseCookingChannel

    Жыл бұрын

    Yea! These are perfect to use leftover breadcrumbs:) I'm a little nervous about the possibility of the whites getting soggy when frozen. I don't know how it will turn out when fried, but you might want to give it a try.

  • @gumihou7802

    @gumihou7802

    Yeah, that might be dangerous, but I noticed that after freezing and then letting the egg come to room temperature, the yolk is more sturdy. So maybe freezing first, then letting it come to room temperature before frying would increase success of not breaking yolk?

    Any substitutes for Mirin and Sake for the egg bowl? I cannot have mirin and sake

  • @JapaneseCookingChannel

    @JapaneseCookingChannel

    Жыл бұрын

    You can substitute 1-2 tsp sugar for 1 tbsp Mirin. For sake, you can substitute white wine, or skip it if you don't want to put alcohol.

    I use light brown sugar made from sugar cane. Basically, I think you can use the same amount of granulated sugar as a substitute.

    what oil use?

  • @JapaneseCookingChannel

    @JapaneseCookingChannel

    These days I use white sesame oil for frying. It's not common thing in Japan, but white sesame oil makes fried foods extremely tasty!! (Also used in authentic tempura restaurants in Japan.) But, sometimes I use salad oil too. Actually, you can use any type of oil for my recipes :)

    You can get cold laser therapy to rid yourself of your egg allergy and many other allergies. My husband was horribly allergic to eggs also (and other things). He had the cold laser therapy and he is now cured for many years (15’years now). I think it’s called Bio-Veda (something like that). It is AMAZING and will definitely change your life! Good luck!
