1. EASY BEEF BOWL (Gyu-don)
Ingredients [for 1 serving]
・6 oz (170g) Cooked rice
・5 oz (140g) Thinly sliced beef
・1.7 oz (50g) Onion
・0.8 cup (200ml) Water
・1/2 tsp Dashi granules (Hondashi)
・1.5 tbsp Sake
・1.5 tbsp Soy sauce
・1 tbsp Sugar
・1/2 tbsp Mirin
・1/2 tsp Grated ginger
・1/3 tsp Grated garlic
Topping
・Egg yolk
・Red pickled ginger
About the raw egg👇
In Japan, the henhouse environment is maintained to prevent salmonella infection, and the eggshells are cleaned and sterilized during distribution. Since eggs are intended to be consumed raw, sanitary control is strictly maintained from the production stage, and the best-before date is often set at two weeks, assuming that the eggs are to be consumed raw.
In the west countries, I think most of the case you cannot use raw egg yolk. Perhaps some eggs are sold as "Pasteurized eggs", and you could probably eat it raw.
However, I am not certain, so please check the instructions of the government agencies in your countries before you use.

Ingredients [for 1 serving]
・6 oz (170g) Cooked rice
・1 oz (30g) Prawn
・1.4 oz (40g) Bell pepper
・1.4 oz (40g) Eggplant
・1.4 oz (40g) Kabocha squash
・Oil for deep-frying
Tempura batter
・2.5 oz (70g) Flour
・Half egg
・0.4 cup (100ml) Cold water
Sauce for tempura
・2 tbsp Water
・1 tbsp Soy sauce
・1 tbsp Mirin
・1/3 tsp Dashi granules (Hondashi)

3. EASY PORK CUTLET BOWL (Katsu-don)
Ingredients [for 1 serving]
・6 oz (170g) Cooked rice
Pork cutlet
・3.5 oz (100g) Pork loin
・Salt and pepper
・1 tbsp Flour
・1/3 Beaten egg
・2 tbsp Pnako (Bread crumbs)
・Oil for deep-frying
・2 Eggs
・1.7 oz (50g) Onion
・3 tbsp Water
・1 tbsp Sake
・1 tbsp Soy sauce
・1 tbsp Sugar
・1 tbsp Mirin
・1/3 tsp Dashi granules (Hondashi)

I absolutely LOVE Katsudon!! It's become my favorite comfort food. However, I don't always have pork available so I've used chicken thighs and it's still delicious. I hope it's not offensive or wrong to use chicken but it's still so good!!

i love these dishes comfort food. it int complex just some good flavors mixed with great ideas... ps (it sorta super complex if you had to make your dashi soya sauce and mirian its doable but tons of time goes into them)

Thank you so much for watching my channel!!💕 In place of dashi granules, maybe you could use stock cube or stock powder (chicken, vegetable, or other type)! If you could get kombu powder, I think it's better👍
Its nice you use all the dipping ingredients, usually there is about a pound of crumbs and flour to throw out.

*5:40* Please tell me... What was the main type of frying oil that you used? I know you added sesame oil, but what was the first main oil that you had in the frying pan?

Thanks for your comment! The main oil is also sesame oil, but it's not made from roasted sesame but from white sesame (unroasted one I guess). So, the color is clear. Please check below👇 This one is not exactly the same one as mine but similar one, I think. amzn.to/3X6sda6
I find that katsudon is tastier if it's leftover from the first day! Make lots of katsu for dinner, and then make katsudon the next day!

Hi! You can use white wine instead. If you can't use alcohol, please just skip it!
You know... in Europe... you are called a good cook if you know the most recipes by heart. Or from your mum, or an old family recipe. But I like your asian precisness! ;) And since I am only a hobby cook... I sometimes need measurements, trying new things and testing and I like that a lot! :)

Recently, I use white sesame oil for deep frying. It's not common thing in Japan, but white sesame oil makes fried foods extremely tasty!! (Also used in authentic tempura restaurants in Japan.) I think these in the link are similar one if you wanna buy in overseas. amzn.to/3PPdFr1 But, sometimes I use salad oil for it:) That's more reasonable.

My sake brand name is "Sho Chiku Bai 'Ten' Sake". www.wine-searcher.com/find/sho+chiku+bai+ten+sake+japan/1/japan You can use any type of sake though! I always buy the most reasonable sake here. Also, it don't have to be "cooking sake". I think drinking sake makes food taste better than cooking sake:D

Thank you for watching my video! You don't have to find "cooking sake". Please use reasonable sake you can buy in your country! I believe that sake made for drinking makes food taste better than cooking sake. I always buy the most reasonable sake here in Japan to use it for cooking:D

What is the reason for cutting off the end of the prawn tails and pushing the water out? I have never seen this before.

This is because it removes dirt from the tail and also removing water prevents oil splatter when prawns are fried in oil.

My bad, i usually put soy sauce first before mirin and cooking sake so the fermented taste will evaporate. My mind didn't process your next ingredients when i saw you put the cooking sake

I hear in Japan they use raw egg yolk on top of Gyuudon because they have very strict hygiene measures. Is it safe to do it in the west?

I really need the pan teacher use. NoT InsisT. Maybe i might have chosen incorrectly or not. My country's i had used were too much splash oil beyond me in conclusion not fit my hand causing feeling of irritation. Even if i don't use a variety of pens and at that time my ability of cooking acquisition is not like now. Mmm so i am not sure 100% what i am getting through are only disasters. ㅠㅠ.

What is with all the eggs?? Eggs on everything!!! Why do you use eggs on the pork cutlets? Serious question---the protein is not needed, and I do not see that there is an advantage to the flavor. Please explain so I can understand this.

Eggs are often used in Japanese cooking because of Japanese taste preferences. For example, sukiyaki, a typical Japanese dish, is also made by dipping beef in eggs. Perhaps it is something that is rooted in our culture. If you like, you can try it and see if it suits you or not.
