What is speciality coffee? : Nick Clark at TEDxTeAro

Nick Clark is the 2013 NZ Barista Champion and just placed 5th in the World Barista Championship Finals. He's the co­-director and co-­owner of Flight Coffee, a specialty coffee roastery focused on developing excellent people and outstanding coffee. Sounds like just the man to be picking apart what's up with this "specialty coffee" stuff?
In the spirit of ideas worth spreading, TEDx is a program of local, self-organized events that bring people together to share a TED-like experience. At a TEDx event, TEDTalks video and live speakers combine to spark deep discussion and connection in a small group. These local, self-organized events are branded TEDx, where x = independently organized TED event. The TED Conference provides general guidance for the TEDx program, but individual TEDx events are self-organized.* (*Subject to certain rules and regulations)

    It's crazy how we get so excited over a simple drink made from an infusion of ground-up roasted seeds from an alkaloid-rich berry that comes from Ethiopia. So, so excited about this drink, and it seems ridiculous, but there is so much about it that is interesting. It's not just a simple drink... It's chemically, biologically, botanically, sociologically, economically and historically interesting. I love it!

    I know you cannot do this, but if you could try it just once you will obtain some fantastic flavor! Ship a small (kilo) amount of beans wrapped in cow leather! Ultimate taste!

    Is a coffee cherry can have 2 'beans,' but some have 1, how can 160 beans come from 60 cherries? If all cherries were female, 60 cherries would only have 120 beans. O.o

    In Japan the correct way to eat soup is to SLURP very strong which creates a loud noise.

    Great talk! Given that across just about every industry, taking time and care leads to greater rewards for everyone, people who produce mass market commodity anything would reform their ways. Also, the fact that the guys from the TV station made fun of you is horrendous. Really poor journalism.
