Sarah, to make the cornbread a little more moist, substitute part of the cornmeal with prepared masa. The finer texture seems to keep it moist. I have been doing it for years, and will always. 😊

I'm addicted to savoury oatmeal at the moment. I combine a cup of oatmeal, half a cup of lentils, a bit of veggie stock, peppers and onions as the base. Then I top it with something spicy like kimchi or sambal. Such a gorgeous breakfast.

I’m also a fan of savory oatmeal. I cook the oatmeal with chia seeds and golden flax seeds. When it’s cooked, I mix in nutritional yeast, roasted almonds, sunflower seeds, pumpkin seeds and black salt (Kala namak). Sometimes I’ll add some kale, too. Delicious!

You don't need a tortilla press if you want to try the corn tortillas first. You just need a piece of plastic folded in half (I use large a plastic food bag), oil/non stick spray and something flat to squash them with (I use the lid of a pyrex dish). Spray the plastic, put a ball of tortilla dough on it, fold the plastic in half so the ball is sandwiched. Then squash the covered ball with the flat lid or pan

I definitely resonate with this video. I completely overextended myself to the point of exhaustion on Thanksgiving and I vow to NEVER do that again. I don’t like the thought of savory oatmeal and tho I love oatmeal I don’t make it as much because I’d have to eat it with some sort of sweetness and I just don’t want that flavor profile often for breakfast. I would love a dedicated video for the rolls. They look amazing. I was going to go down the rabbit hole if you will, of all your content because I was missing your cozy cooking videos. So glad to see this upload tho I’ll still watch more..like a chip..can’t see just one lol. TFS. You and Eric have a great holiday season and RELAX 🤗

I’m so glad you discovered the brilliance that is sausage in your stuffing. My family has always put sausage in their stuffing. This was my first Thanksgiving as a vegan. I’ve never been a fan of my MIL’s mushy stuffing, so I pretty much made my own Thanksgiving meal at my MIL’s next to their traditional meal. The Impossible sausage gave me the taste of home just in a serving of stuffing.

Holiday spreads have been my last holdout because of memories and traditions. Also, I love mushroom stroganoff, but I've made the vegetarian version...on to the vegan version now. It's so much easier than we've been given to think to eat flavorful and fully nutritious vegan meals. My inner and outer self thanks you for your contributions to fewer asthma attacks, weight loss, and better health overall. Happy Holidays to you and yours!💞💞💞

I'm like you, Sarah, when it comes to oatmeal. I don't like the sweet stuff and put vegan butter, salt and pepper like a baked potato in mine. I have also been known to put bagel seasoning and flax or chia in my oatmeal as well! As for the cornbread, I sometimes use creamed corn and cheese. That may help with the moisture? Congee is awesome, especially for cold winter. I fell in love with it the moment I found out this thing exists (it isn't too well known here in Central Europe :D ). I am not vegan, but I do meat (with meatballs and fish sauce), vegetarian (with eggs and veggie bouillon), and vegan versions (with seaweed or miso, sprouts, and sometimes tofu), and they are all good! It's exactly the recipe where even we meat-eaters don't need meat at all, which is great because I am trying not to eat it so often (hence my following your channel). And I think it will also work very well with vegan meat substitutes, although I haven't tried those. By the way, Sadia from Pick Up Limes had variants of savoury oatmeal on her channel, and it seemed worth trying (especially the chipotle one), although I hadn't gotten to try that myself yet.

Savory oatmeal is my default now. My wife didn't care for sweet oatmeal and convinced me to try making a savory version. It's the only way I can get her to eat it regularly. It's stupid easy. I heat 6 cups of water in the microwave for 6min then mix a giant glob (2 tbs?) of vegetable base to make a broth. Chop up a couple sweet onions and saute those in my instapot. While that's cooking I chop up a 8oz of mushrooms and cook those for a bit. Keep the onions and mushrooms stirred and scraped off the bottom of the pot. Add a little broth before they burn, then throw in another 2c of water, 1.5c steel cut oats, and 1/2 tsp of light salt. Cook on high for 5min and natural release. Add a handful or two of craisins, stir and let cool in pot or container. It will thicken. When reheating I like to add some soy milk for creaminess and sometimes I'll microwave a couple handfuls of greens in my bowl first. Can also add nutritional yeast or crushed walnuts. 8c water 2 medium onions 8oz mushrooms 2tbs veg base 1.5c steel-cut oats 0.5tsp light salt handful of craisins

One cornbread tip (from a long family line of cooks): put a couple of tablespoons of oil in the bottom of your cast iron skillet and put it in the oven when you start the preheat. After you've mixed all the cornbread ingredients, pull the hot skillet from the oven and pour in the batter. You should hear a bit of sizzle as the batter spreads out. Don't be concerned if the oil comes up the sides--hot oil "seals" the batter and helps the keep the moisture in the finished cornbread. All the greats and grans and moms used bacon grease for this. I use olive oil!

Hello Sarah, I love your videos. Re morning congee - have you tried adding Yondu to oats on the stove? You could add sliced vegetables (cabbage, mushrooms or sliced carrots into matchsticks) and tofu for something heartier, and top with fresh green onions or coriander if available. I usually cook the oats with water plain and add on top a drizzle of sesame oil, soy sauce, pepper (preferably white) and if you have some, vegan fish sauce or seasoning sauce (Maggi, Golden Mountain?). Have a lovely season ahead.

Yum. Love potato soup and homemade bread. Everything looks good. Mushroom stroganoff sounds so good.

I’m impressed with how round your tortillas are! Mine are always so randomly shaped!

We simplified out Thanksgiving this year. We always make way too much food and ended up doing a one pot vegan paella!

Sarah I really enjoyed this video 😊 Unfortunately I’ve never been much of a soup fan. I know soup is nutritious and great for cold days but I just wasn’t into it. However my tastes have changed quite a bit in the four years I’ve been a vegan so I’m going to give your soup a try. Wish me luck. Thanks for the recipes!
