The difference Joe was speaking of in deer fat is that it’s very waxy. Flavor is decent but as you eat it your teeth, tongue and gums get coated to the point of not even being able to taste anything almost like you were chewing on candles. In fact, you can make candles out of deer fat for this very reason. Edited to add, this guy was living a subsistence lifestyle. Of course he would eat the fat regardless of it’s culinary quality.

Diet makes a huge difference in health and a meat/fat diet isnt necessarily bad. I have a histologist friend here in Alaska who occasionally has to participate in autopsies. While he thankfully doesnt tell me much, he says when they get an old native that's been living on seals, whales, and salmon their whole life their arteries are spotless like a 20 year old. But the new, young ones eat all our food and have all the same health problems or worse. Also, a lot of them chew their food for their kids, which... whatever. Different culture, different food. But that means with our new food you have stories of parents in the village chewing up Cheetos for their toddler. So many levels of gross.

In my country, only until 10 years ago when raising pigs in villages in nearly every house was still a thing, the colon was used to make so called blood sausage. You turn it inside out, wash and then soaked in hot water, then filled with ground meat, lungs, fat and spices, then dry cured outside in the cold. Later on is cooked either fried or in the stove with cabbage or other vegetables. This was as popular as steaks and other sausages.

Where I'm from we fry up cow intestines, yep large intestine included. First you wash the intestine ver carefully. Run water through them to make sure they are very clean, then you start start boiling in water. The water evaporates and the rendered fat takes over and continue cooking in that until the whole thing is brown and crispy. Chop all that up and serve in corn tortillas with plenty of hot salsa. Indescribably delicious.

Makes sense considering that protein requires a lot of water to digest. It's why in survival situations things like protein bars and jerky aren't a great idea unless you have water.
So many levels of gross.

in Lithuania there is a traditional dish where you take a pig colon, stuff it with sort of a mushed potatos and cook it in the oven. i started eating it when i was a kid and didnt really know what it was. i was just told that its a gut lining. after i found out what it was it didnt bother me, because i was used to it. and it tastes greaaaat man. The flavour is very unicue, there isnt anything to compare it for reference. Its called “vederai” if you ever visit my country you should really try it.

He's a very calm and confident person
Joe's face asking about vegetables. 😆
Joe asks the most interesting questions.. that's what makes him so good at his job.. plus his honestly and lengthy interview...
This guy has real world dirt time and experiance. You can tell he's intelligent enough and open to learning and trying. His work rate is pretty amazing too. He's definitely interesting.
A bit nutty......
I can't stand fat, let alone uncooked straight off something. One of the myriad reasons I could never survive like this amazing dude.
I hunt and I’m not a doctor but the reason he may have been suffering from those ailments is most likely from protein poisoning for example if you eat rabbit everyday and nothing else it could make you go crazy and die similar to eating tuna everyday you can go crazy and die from Mercury poisoning I’m just trying to let him and others know stay safe
Most people don’t realize how different the flesh can look and feel like of an animal... especially as a fisherman and everyday cook, I eat a lot of salmon sashimi but that is a unique color of meat, some fish are very slimy and more difficult to clean, I worked in an old fashioned style meat market for 3 years, hold in your hand a piece of tuna vs a filet of cod vs a Cobia filet vs rainbow trout or salmon they are nothing alike!

@Master_Yoda1990

Protein does take quite a bit of water for your body to metabolize, more people don't experience that in society because most of the time our diets aren't strictly protein, there's a lot of fats, oils, and carbs mixed in our food.
