What do Dahlia tubers taste like?

The entire Dahlia plant is edible.. flowers, stems, roots. The flowers taste a bit "flowery" with a side of pepper. Sometimes they even smell like pepper. Not THAT appetising. But how do the tubers taste?
Dahlia Tuber Bread Recipe
(this is how I made it! You can also use your favourite zucchini bread recipe and substitute the zucchini for peeled and grated dahlia tuber)
Wet Ingredients:
2 eggs
2 tsp Vanilla Essence
1/2 cup Olive Oil
1 cup grated dahlia tubers (peeled)
Dry Ingredients:
1.5 cups Gluten Free Plain Flour
1 tsp Baking Powder
1 tsp Baking Soda
couple of grinds of salt
1 cup Coconut Sugar
3 tsp Cinnamon
1 tsp Nutmeg
Combine the wet ingredients in a bowl. Combine the dry ingredients in another bowl and stir to blend well. Use your fingers or the back of a spoon to break up any lumps of coconut sugar!
Combine wet and dry ingredients. The mix will feel a bit dry to begin with but continue to mix and push into the mix with the back of a spoon or spatular and it will come together into a thick mush.
Spoon into a lined loaf pan and bake in a cooler oven for around one hour. Dahlia tubers take a long time to cook so it's best to use a cooler oven for this. I baked mine at 160°C (320°F) for one hour.
To check if the loaf is cooked, a skewer should come out without raw mix stuck to it.
If you are having trouble and the top is getting too cooked, cover the top with foil to protect it from further browning.
Enjoy this unusual and interesting sweet break by itself or with real butter. Yum!

    That's neat that the bread worked out. I can just imagine dahlia growers when they are dividing the tubers, saying 'one for me, one for next year, one for me ...'

    Ooh this is fun, cooking with dahlias! If you can eat the whole plant then the flowers would look so pretty on cakes or pretty breakfasts like açai bowls. 🌸

    What a fun and informative video...I had heard about the edible dahlia tubers but never researched recipes etc. You did some great legwork - and saved some of us some time (and effort). A small cuisinart would probably help in the grating process, but now I'm encouraged to experiment. Thank you

    I baked mine in a foil parcel with salt and lemon thyme - I felt that the lemon herbyness of the lemon thyme would go well with the greenness of the tubers. I actually really liked it, but I found it really hard to put my finger on the flavour. The texture is a little bit odd. Not bad, just... I guess my brain was expecting either potato softness or parsnip or something and when it wasn't that, it landed on "this is odd". The problem is that they can be hard to digest for some people so I don't think I would make it a staple but it might be something I do with culled seedlings or excess tubers as a small seasonal side dish. But it's absolutely something I would experiment with again. I haven't tried the bread yet but I'd like to.

    Oh wrapping in foil would solve the hard outer issue! I think the texture would still be odd!

    Yes - it's this weird level of firmness that makes it seem undercooked when it's not.

    Nope Nope Nope Nope Nope just can’t bring myself to do it. Maybe if someone served the cake on a plate with some butter and didn’t tell me what it was……maybe……nah nope my brain says don’t do it lol If I handed that to my husband I think his response would be to put it straight in the bin so I give your hubby 100 points for tasting it.
