RECIPES:
*For tofu scramble, I don't measure anymore! But just use a block of tofu, add nutritional yeast, garlic powder, onion powder, black salt, and turmeric. Break apart the tofu as you mix in your spices and cook it up! We had this with breakfast potatoes. Just roast potatoes, onions, and bell pepper with some spices and olive oil at 425 for like 30-40 minutes.
*For the green smoothie, blend up fresh grapefruit, kale, frozen mango, frozen pineapple, hemp seeds, soy milk, orange juice, and spirulina. I've been making this on repeat! So good.
*For the sweet potato bite things...I'll be honest this recipe isn't prefect perfect. I need to fiddle around with it more, but it still tastes so yummy! Here it is below.
1 heaping c roasted sweet potatoes
1/4 c Maca powder
1/2 c cashew butter (or almond butter)
1 c dates, soaked if too dry
1 heaping tbsp miso
1/2 c almond flour
1/2 c oat flour
1/4 tsp baking powder
1/4 tap baking soda
1 tsp vanilla
1/4 tsp salt
Put all that in the food processor then bake in oiled muffin tins at 375 for like 15-20 minutes.
*For the blueberry pancakes...

*For the banana chocolate pancakes...
Blend up 3 ripe bananas, 1.5 cups oats, 1 cup plant milk, 1/2 tsp baking powder, 1/4 tsp baking soda, and 4 tbsp Anima Mundi chocolate protein powder. Get your pan nice and hot with a bit of oil. Make pancakes!
*For the matcha chia pudding...
In a large bowl, whisk together 1 tsp matcha with 1.5 cups soy milk until fully combined. Add 1/4 cup chia seeds and a glug of maple syrup. Whisk until fully combined. Leave it in the fridge for 20-30 minutes then whisk again to get out all the clumps. Leave in the fridge another hour or overnight and enjoy with fresh fruit on top.

    Those pumpkin muffins look yummy! I feel like they’d make good snacks. I don’t know why I never thought of matcha chia pudding before! I’ll have to try that, too. I sometimes add cocoa powder or cinnamon, but matcha would be so nice. I love to have marinated tempeh strips with scrambled tofu. Fakin’ Bacon has been my favourite vegan “bacon” since I was little. It’s not like the imitation soya bacon you often see (not my cuppa tea) - just tempeh, but marinated, and delicious when cooked in the frying pan. It’s also nice in TLT’s (tempeh, lettuce, and tomato). That, plus some toast, potatoes, or pancakes, and some coffee (or hot chocolate for children) and fresh squeezed OJ - perfect Sunday breakfast.

    I literally was just checking comments to see if anyone noticed that. It definitely looks enlarged. If she feels great maybe not an issue but I would still get it checked bc it could even be cancerous.

    I would highly encourage you to find an Indian grocery store near you.. that way you will be able to find all your spices in bulk, and so many different ones! Black salt is also easy to find there.

    Pro tip: for the tofu scramble mix your spices in oat milk and tahini, it makes it super creamy and delicious🤤

    As a non vegan, I always wonder why a vegan would make a tofu scramble to mimic the taste of eggs. Not being critical, genuinely curious.

    because they remember the taste of eggs and they are craving eggs. in asia ppl make tofu dishes as tofu itself, not using it to imitate meat.

    Hi, perhaps because many vegans grew up eating scrambled eggs, so it’s a familiar flavour, and a bit of a comfort food? Also, it’s just another way to prepare tofu which tastes great 😊

    Muffins are very much so an American type of breakfast. I saw Kate flowers with vegan muffins also. Here in Ireland we don’t have breakfast muffins like the ones in America
