I would never have thought a vegan version of this dish was possible. Now, looking at your recipe I see just how simple it is. Cornstarch to take the place of yolks to thicken. Akis, your creativity always amazes me. Thank you for sharing your knowledge and creativity.

Can you substitute sugar with liquid sugar(like maple syrup)? Can I omit lemon juice?

You could substitute the sugar that goes into the milk, you'll just need to simmer it for longer, but you obviously need granulated sugar for the sugar crust. And you should not omit the lemon juice, an acid is required to curdle the milk and make it thick and glossy.

Why are you so fragile?
This is just a custard, made with Almond milk that's 99% water, don't get excited people, it tastes like nothing. The lemon might added some flavor.
