For me, safety's issues.Should not work alone in the early morning.Anythings can happen.But,if you drive or traveling alone it's wokey.Because of a lot another people out side do same things.Should help each other when needed 🤣

What job/employee doesnt do that, again, when you have birthday, people say happy birthday, maybe brings a small gift from all colleagues, and you have cake with your colleagues. He owns a bakery, so ofc they get cake from their own place..

パン屋で7年間くらい働いていました。 自分も夜中から働いていましたが、 これだけいろんな種類の生地を仕込んで、１階と2階を行ったり来たりして、スタッフの朝食まで作るシェフの姿を見て、気づいたら感動して涙が出ていました。 栄養まで考えてくれるシェフの気遣いにきっとスタッフの人たちは救われていると思います。これだけの仕事量をこなして更にスタッフへの誕生日ガレットは凄すぎます。 パンの表情を見れば分かりますが、シェフのパンに対する熱い思いがパンに反映されていてどのパンも美味しそうでした。 パンを作るのが好きで楽しくて更にそのパンを食べてもらってお客様に喜んでもらえる。パン屋って本当に良い仕事だなって思います。でも裏では毎日夜中から働き始めて、ずっと動きっぱなし。座る暇もなくひたすら生地と睨めっこ。何回も試行錯誤して美味しいパンを追究していく。 更にスタッフに教育までしていて素晴らしいなと思いました。 だからレコルトさんのスタッフさんたちはみんな楽しそうにいきいき仕事ができるんですね。 シェフもスタッフさんたちも同じ苦労を共に乗り越えてきているからお互いがお互いを支えあっていて、良いチームワークができてるんだろうなと思いました。 カメラマンさんも素晴らしいパン屋さんの裏側とパンを美味しそうに撮っていただきありがとうございます。 ここのお店にはいつか必ずパンを買いに行かせていただきたいと思います。 これからもレコルトのみなさん頑張ってください。

深夜から色々な作業をこなしていく姿がかっこよすぎる…！パン屋さんってすごく大変なんだろうなと思うし愛だとか情熱だとかそういうのが無いと出来ないお仕事だなあ…と改めて感じた。やりたいことも得意なことも好きなことも夢中になれることも野心も目標もなにひとつ持ってない自分からすると本当に尊敬します。 これとこれを合わせたら、って沢山アイデアが思い浮かぶほどパンへの愛情が伝わってくるし実際どれも綺麗で本当に美味しそう！いつか食べてみたいなあ。 なによりスタッフさんのお誕生日のお祝いを準備したりとか健康を考えて毎日朝食作りもしてくれるなんて、ひとりひとりを大切に想う人柄が素敵すぎてなんかじわっときた…あったけえゾ、、😭💗

壊れ物を扱うようにトレーに移すお客さんに凄くキュンとしました😊それくらい大事に扱って貰える素敵なパンなんだなと……🍞 10年前くらいに大手パン屋でパートで成形・焼成やってましたが、怒鳴られまくりでトラウマでした😢でも人間関係ほのぼのした感じでこんな素敵パン屋さんあるんやって嬉しくなって、トラウマも和らいだ気がします😊パン屋巡りまた再開したくなりました❤

I sincerely have a lot of respect for all Bakers and Patissiers who put their heart and soul into their craft! Working in constant heat, exerting arm and leg work while performing mental math just to produce a beautiful batch of goodies like these is no laughing matter! I worked in this line of field during my senior year of high school, and it was a hell of a job. Salute. I'll probably be back again next year for an assessment. 😭✨

I'm a pastry chef and is looking to become a baker next! He's very efficient with his work, and fit too. The flour bags are very heavy and it's impressive that he carries them with one hand, and runs up and down the stairs so much. Making _15_ types of bread / 15-20 types of dough on his own is amazing!! I wish I can become like him in the future. There are also many kids of unique bread that I have never seen before in my country! I wish to join a Japanese bakery in the future and learn how to bake these delicious bread.🥰

神戸で一番好きなパン屋さんだー．オープン当時から通っているけれど，最近バゲットはここのが一番美味しい． でも最近はハード系中心にいつも大体同じものばかり買うようになっていて，こんなに色々作ってるの見たら新しいのももっと試してみたくなってきた． うちの近くにあったら毎日通ってあれもこれも片っ端から買ってみるのになぁ．あー引っ越したい． 神戸のパン屋さんのいいところは，朝のうちからオープンしているお店がまだまだ多いところ（作る方は大変だろうけど）． 子供の頃，お休みの日は朝に近くのパン屋さんにお使いに行って買って帰った焼き立てのパンと一緒に朝食というのが楽しみだった．幸せな少年時代．

The fact that he comes to work at 2am,prepares the dough;carry them several times up the stairs,bake a birthday pie for his staff and has the time to cook breakfast for them….WOW.this guy is simply incredible スタッフさんの誕生日に手作りのガレットを出してあげる…優しすぎる自分が働いてたら絶対嬉しくて泣いちゃう。

OMG! This is such an amazing BTS video of a day in the life of a Japanese baker. The passion, dedication and the speed of how he churned out loaf after loaf of breads, pastries, etc is just awesome! The fact that he cares about his employees well being by preparing breakfast for each of them and baking a huge pie for his employee's birthday reflects his character as a leader. I will definitely add this bakery to my bucket list when I visit Japan next 😊

I find that being a baker in Japan is tough work as these bakers have to start work in the wee hours of the mornings when people are still asleep 😴. But that’s what make these bakers so dedicated to their bread making 👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻🫶🏻🫶🏻🫶🏻🫶🏻🫶🏻🫶🏻🫶🏻👍👍👍👍👍👍👍

16:16 That is so smart, he used egg whites leftover from perp. Some breads need more yolk propotionally so egg whites are used for breakfast, as to not waste it. Using leftover bread as well for the breakfast.
