different region, different style...in south east asia, lot of people like their doner "wet" with fat, ketchup n mayo.
i have to say that i have eaten doner from turks for over 40 years , the one thing that you could taste without a doubt was cumin salt and pepper in the rotisserie meat , never have i tasted soy sauce , i guess to each their own

@@ChefSalimRecipes my dear Fellow your reply to my comment does not correspond to what i said , i am not here to argue or disagree with what you do , i my self cook for a leaving and so i do understand how certain flavours work in food recipes unlike a lot of people that do not dedicate their lives with food , everyone including your self has a right to their own way to make a recipe that suits the way they think it should be, however in your case your own version is .... unique n a number of ways that by the way has me interested and i will definitely try it in some kafta to see how it compares with other doner versions one of these days and if it actually can enhance and improve the flavours , i think you will agree that soy sauce is not something that the Turkish cuisine is familiar with , and as someone who is searching to learn how to make the best as close as possible to the most authentic doner taste out there i can say that this is different to anything else i have personally tasted , again this is your channel created by a professional in your line of work and i do respect and understand to each their own ,

I can’t understand why some authentic national food put soya sauce in their recipes especially Islamic countries with halal cuisine. There are halal soya sauce and and non halal soya sauce. The non halal soya sauce MAY contain alcohol.

This is not authentic döner. Real döner made with thin layers of lamb and beef not with stacked ground meat. That kind of döner is cheap döner not preferrable in Turkey. Its a german addition to döner. Its often despised in Turkey. Like "don't go there they are doin döner with ground meat."

is it cheap Do you know how much is the kilogram price of lamb leg meat? Currently, no one in Turkey can buy 1 kilo of lamb from the butcher, it is so expensive, they usually buy 250 grams, and they can buy ground beef not 1 kilogram, but half a kilogram.
