How to make chicken doner kebab over charcoal fire
How to prepare chicken doner, marinade recipe, how to cook doner kebab on coal, how to cut it, and how to serve it, you can watch it in detail.
Chicken doner recipe, lavash and gobit bread making for doner, hot red sauce and white cold sauce recipes for doner.
All parts of the chicken will be used in this chicken doner kebab.
A total of 5 kilograms of boneless chicken meat was used

there is a total of 5 kilograms of chicken, in this case 50 grams of salt is required, keep that in mind
50 grams of rock salt,
1 spoon of hot pepper paste,
2 small onions and 2 garlic
tomato juice is used up to 5 spoons
yogurt used up to 5 spoons
optional 3 spoons of soy sauce
3 tablespoons ground red pepper, slightly hot
half a spoonful of black pepper
1 spoon of thyme herb
1 spoonful of cumin
half a spoonful of garlic powder
half a spoonful of wild thyme herb
If you have solid yogurt, you can dilute it a little and use it.
crush rock salt into powder in stone mortar
crush the spices in a stone mortar, you can understand the aromas of the spices from the beautiful smell
Add red pepper and mix, depending on the situation, it can be 2 or 3 spoons.
combine the ingredients in a large bowl, add the spices first, add the liquid ingredients and mix
grate and add the onion, garlic powder was used too much, so the garlic was not added.
Add onion juice mix and add crushed rock salt and mix
add the mixture over the cut chicken and mix well
chicken meat is placed neatly in a large container and kept in the refrigerator for about 18 hours.
If you say I can't wait, do it immediately and cook it doesn't matter, Turkish chicken doner is usually made by waiting in sauce this way.

    Great recipe. Didn't know that onion can tenderize the meat which i heard lately. Without additional animal fat it could be substitue by vegetable oil added to the spices mixture? If so how much would be right amount? Greetings.

    1, This looks amazing! Is this how you do it in a restaurant or is this homemade? 2. Is the red pepper powder Aleppo chilli flakes? 3. Is the hot red pepper paste called ‘Biber Salcasi’? I am not Turkish so apologise for the spelling. 4. Whenever I get doner or chicken Shish I can never taste the ‘cumin’. Is it a very mild cumin flavour used here because sometimes it can be quite strong? If you could help at all by answering these that would be greatly appreciated :)

    It is useful to add it with your fingertip, the spices will burn before cooking, they will give a black color, it would be better if you add it after cooking, add any amount of your favorite spices on it.

    Are you asking about the distance between fire and doner? I think it's about 10 centimeters, but if you want it to fry quickly, move it to the fire about 5 centimeters.

    why most of shawarma made in full breast? i mean, why not use thigh which is more flavorfull rather than breast

    not all of them are made with thighs, if they do, they will be very runny, only breast meat will be dry and they prefer to do it like this because it is cheap. best as shown in this video, both breast and chicken thighs are used
