Turkish bread: the most delicious and easy bread you will ever make!

This is the easiest bread you will make as it requires no kneading, only just mixing the ingredients and then shaping!INGREDIENTS
500 g (1 pound) flour;
150 ml (5 fl. oz) warm milk;
150 ml (5 fl. oz) warm water;
1 tsp salt;
2 tbsp dry yeast;
3 tbsp olive oil;
chopped parsley, chili flakes.

METHOD
Whisk flour with salt and yeast. Add warm water and milk and knead just until liquids absorb.
Add olive oil and knead until smooth dough forms (around 10 minutes).
Form the dough into a ball, cover with vegetable oil and set aside in warm place for 1 hour or until doubled in size.
When the dough is done rising, cut it into 6 and roll each piece into a ball.
Roll out each flatbread and place on a pan preheated on medium-high heat. Cook for 5-6 minutes (2.5-3 minutes on each side). When you flip each flatbread it should rice up to make a pocket in the middle.
Brush each hot flatbread with oil, then top with parsley and chili flakes.

    I have made this recipe many times and LOVE IT! For those who do not have scale/use metric, here are the quantities: 3 3/4 C Flour 1 TSP Salt 2 TBLS Yeast 2/3 C Warm water 2/3 C Warm milk 3 TBLS Olive oil This dough is completely unpretentious. No strenuous kneading, no regimented stages of mixing. Sometimes I make it by hand, like in the video, other times I run it through the dough cycle of my bread machine. Also--the dough will wait for you. I've actually put this dough in the refrigerator in its covered bowl for 48 hours and still made great flatbreads. I also use this same dough to make pizza. One batch makes about 2 medium pizza crusts, depending on how thick you like it, etc. For flatbreads, as I remove from heat and brush with butter, I sprinkle with smoked paprika, turmeric, and oregano. A plate of this bread never lasts longer than an hour, so I have no idea how it keeps, lol. How warm is "warm"? For those who don't bake a lot of bread, yeast is generally happy to wake up and get busy in temperatures similar to a human's bath--105-110 degrees Fahrenheit.

    Daniela L. You probably can just make sure you google the ratio once, I think to substitute dry yeast with fresh yeast the ratio is 2:1 or something like that, just look it up once I’m not really sure sorry. Plus as long as you keep an eye on it during the proofing process it shouldn’t matter, the time might vary though that’s about it.

    you don't need it to rise. plus dry active yeast doesn't need to bloom alone, it can be mixed with dry ingredients. if the gluten reacts too much it won't bloom up in the pan.

    regardless of what this bread is called in India, Turkey, Lebanon, etc, etc,. this is and awesome recipe. I made it in my Breville food processor and it couldn't be any easier. Beautiful, soft bread - had to double my recipe the second time around because everyone enjoyed it so much. I had no problem adding yeast as directed, dough rose beautifully. Thanks a bunch.

    When the pocket doesn't form, make sure you fold the corners under after cutting the dough up into individual pieces. I found this was the most important factor I omitted when they didn't rise on the stove. I also found cooking for 15 seconds on first side, then 20 seconds on second side, then flipping back to first side and letting it rise helped. Adding 25 more grams of water when making the dough didn't hurt the pocketing either.

    Just made this bread today. Mine didn't puff up quite as much but it was absolutely divine. Top it off with some garlic, basil and paprika compound butter and prepare to have your mind blown. I'd recommend using less yeast though, 2 1/4 tsp of active dry yeast is more than enough. EDIT: Almost a year later and this is now my go-to flatbread recipe. It takes some technique to get it to inflate like that, but I think I'm getting the hang of it. 10/10 still recommend!
