My mum's Simple Aloo Palak with Methi is a classic Punjabi dish with potatoes in a creamy spinach gravy. It's healthy and easy to make at home and makes an excellent side dish for roti or rice.

Ingredients:
950g approx. of Palak (mature spinach leaves)
60g approx. Fresh Methi (fenugreek)
2 medium onions 350g approx. finely sliced
2 large tomatoes 250g approx. roughly chopped
2 baking potatoes 600g cut into medium pieces
1/3 cup oil
10 garlic cloves 45g approx.
1 tablespoon freshly grated ginger
2 teaspoon of:
salt
coriander powder & deghi mirch (Kashmiri chilli powder)
1 teaspoon of regular chilli powder & turmeric powder
4 bullet chillies (optional)
unsalted butter cubed (optional)
1 mug (250ml) boiled kettle water

Save some garlic for the last, give the aloo methi palak a tadka of some degi mirch and chopped garlic in the end. The taste will quadruple. Keep more dishes coming! My mom cooks like you have shown, I like to cover cook the spinach and methi without any water for 10 minutes in a microwave and then quickly dump it in cold water to retain the colour.

My Favourite veg Curry. I can’t wait to make this. I’ve never succeeded making this nice in the past, putting my faith in your mums method. Thanks so much for the tip about Palak vs bagged supermarket spinach. I didn’t know the difference and I suspect using the baby bagged spinach in the past impaired the result. Love all the butter 😁 Love Fenugreek, never used fresh. Thank you for uploading this exciting authentic recipe . BTW, your the only chef I’ve watched who has truly inspired me to buy a pressure cooker. Off to Amazon. 😃Xx

I was literally thinking about when you would post next Lambi zindagi mashallah I love palak but I always avoid making this because of how strenuous the process is but you made it so simple !!!! First the lamb now this- amazing

The only strenuous thing about this dish is the cutting and washing of the Palak. The rest is easy 😌 thanks 😊

Thank you so much.😊🙌 Mustard oil can be used but it is a strong flavoured oil, just bare that in mind hence why I did not use it.

Kashmiri chilli powder also know as Deghi Mirch.i usually use the East End brand but all brands are morealess yhe same.
How many people does this serve?
Looks wonderful will try this but can I use frozen palak and frozen methi instead which you can buy from the freezer section of the Asian supermarkets or World Foods section at Tesco or Asda etc? If so, then do we still use the pressure cooker to make this? Thanks

To be honest you can use either, doesn't really make any difference. I normally have salted to hand these days so I just use that.
