INGREDIENTS
2 tablespoons extra-virgin olive oil
1 pound (453 grams) large shrimp, peeled, deveined, and tails removed
3 tablespoons (42 grams) unsalted butter
1/2 medium white onion (154 grams), thinly sliced
1 medium chile poblano (125 grams), stemmed, seeded, and thinly sliced into strips
1 medium celery stalk (49 grams), thinly sliced crosswise on the diagonal
1 medium chile serrano (24 grams), stemmed and thinly sliced into rings
2 garlic cloves, finely grated
1 teaspoon dried oregano, preferably Mexican
3/4 teaspoon (4 grams) Morton kosher salt, plus more to taste
1/2 teaspoon crushed or ground coriander seeds
1 medium Roma tomato (113 grams), cored and chopped
8 tortillas de harina
6 ounces (170 grams) queso asadero, quesillo, or Monterey Jack cheese, grated

I think when I was 25-35, I'd be shocked anyone could leave NY, but at 40 I totally understand and envy the Mazatlan/home ownership/rescue pup/walkable to a beach/friendly medium-sized town life. I'd do the same if I could!

I've watched several Tacos Gobernador videos, and yours was the one I preferred. Most don't cook the shrimp, then use the fond to cook the veggies. Those are beautiful!

These look delicious. I have found that my recipes are usually better than the food in the restaurant because I can play with the seasonings to add just what I like.
Adoro esos tacos y lamentablemente vivo en Los Ángeles donde los camarones son congelados y sin sabor. Aún así tengo que hacer esos tacos muy pronto.
First had tacos gubernador in Cabo - of course very place has a different version. The Cabo version was delicious, but these look amazing too! The hard part seems like it might be in finding the queso asadera or quesillo instead of just using Monterey Jack (though I'm sure that would still taste great).
I'm super excited that this is up! I got the cookbook 2 weeks ago and have been working my way through the recipes. FYI the cookbook says to use tortillas de maíz, not harina.

I'm thinking the veggies act as built in salsa with the tomatoes and all. That said, an avocado and tomatillo salsa would be great with shrimp. Maybe Rick will come along with a suggestion.
Just got your book and I’ve been reading it for the past couple days! The beginning made me tear up, you write so beautifully. I’ve already made the enchiladas mineras, my next adventure will be the tortas de lechon and your version of morisqueta!

My teaspoon measuring spoon is also pink and I'm wildly distracted knowing Rick and I probably own the same measuring spoon set. All the numbers are worn off but I know the colors in my head..
I saw "Gobernador" and misread it. I was like "why is Rick talking about Arnold Schwarzenegger?".
I'd love to visit Mazatlan. It looks gorgeous and all of Rick's videos and social media are lovely. But, not to sound ignorant and stupid, but you hear so many warnings about kidnappings and crime - how do you know where to go? I love Mexican food and want to improve my Spanish-speaking skills, but I am very much a clueless gringo who has never been to Mexico!
