Tips from a BBQ Pitmaster - Steps for Cooking Ribs

BBQ Brian of House of Q is a Hall of Fame member and world-champion BBQ Pitmaster. In this video he shares all the steps, one-by-one on cooking, smoking pork ribs.
BBQ Brian and House of Q have been competing as BBQ pitmasters since 2005. They have won the rib category for many years at competitions and ultimately first-place ribs at the World Food Championships.

BBQ Brian is a long-time user of Yoder Smokers and specifically the YS1500s. Although these are the smokers in use for this video, the cooking steps and technique are exactly the same if you are using any brand of smoker and if need be, even in an oven.

    When you wrap the ribs, is that all you use? Honey and brown sugar? You mention other options but I don't see you adding them. Also, any tips for cooking on a gas grill? We have a Napoleon with a smoker box!

    Hi, yes, just honey and brown sugar. But there's many ideas like sodas (root beer or Dr Pepper as examples), booze (rum, whisky), fruit juices or of course a mix. The steps are exactly the same on a gas grill except being placed indirect and away from the burner. Good luck!

    @@House_of_Q Thank you! I’ve got your rub ready to go! Oh, one last question! I’ve been searching KZread, and I see some people recommended putting a pan of water on a gas grill to help keep the ribs from drying out. What are your thoughts on that?

    ​@@mattyrob87I'd start without and get a few cooks in to know what works. Then, if needed, add it... Meanwhile, spritzing helps for a boost of moisture.
