Why The Best Southern Barbecue Takes Weeks To Make - Southern Foodways Alliance

Тәжірибелік нұсқаулар және стиль

Rodney Scott cooked his first whole pig at 11 years old, sealing his fate to become a barbecue pit master. Today, he runs the pit his parents - Roosevelt and Ella - opened in a converted garage in 1972: Scott's BBQ, in Hemingway, South Carolina. I live in Albuquerque, we used to have an excellent barbecue place called The Cube. Damn good slow roasted barbecue, but it closed. You inspired me to build my own pit and I have done an annual neighborhood BBQ right here in Apex, NC, with a 100 pound hog for 6 years. Had 120+ people in 2019. You literally inspired me and added a great dimension to my cooking and my life. Thank you.

We got there around 230 and was one of the last customer's they served that day before they ran out of food. My wife and I sat in the car and ate the best BBQ we ever had and watched car after car pull up and the people throw their hands in the air after reading the sign on the door. Sold Out for the day. All tourist too. We saw license plates from Illinois, Tennessee, Alabama, Kentucky and Ohio. We giggled like school kids knuckle deep in BBQ 😂😂😂

South Texas is where I stay, and although we have many people who love to pit one area against the other, each place has their landmark on BBQ. Each area has their style, and that's the beauty of it. Instead of wondering what area is best, just accept the variety and enjoy. It would be boring if everybody adapted to one style because it was "the best".

Cutting his own wood? It's already a tough job I assume. My respect for this guy is enormous. Would love to try his food one day.

I am going to retire my grill and move south. I can sometimes tell how good something will be. This will be amazing. I have slow smoked ribs on my smoker all day on a day off. If I did this for a living I would not need a day off. I would do this in a heartbeat. Thank You, God Bless.

Lordy! Lordy! Rodney, you got my mouth watering like a hose!! It's been YEARS since I had good ol Southern BBQ. I used to live in Austin, TX (1962) and there was a BBQ place (actually a small store) on my home from work. It was owned by an old black gentleman, (probably about 75... not near as 'old' now that I'm 76). For 50 Cents/Lb I could get could (and always would) get a couple of pounds of brisket. I could take a bite, just let it sit on my tongue and it would just DISSOLVE and I'd swallow. I dearly hope that Heaven has food that tastes that good. IT WAS DELISHUS!! If I ever have the chance to travel to your area of the country, I WII DROP IN AND ENJOY! Thanks for the video. Now... excuse me while I dry my mouth. :>) :>) YourConscience

My family ancestry (the black side) hails from North/South Carolina and MANN how I miss that BBQ. Ahhh Vinegar pepper based BBQ pulled pork, and then adding MORE vinegar pepper sauce on top... 😱 I MISS IT. Haven’t been out there in around a decade.

Vinegar pepper is a very very old sauce combo brought over from Africa. I love BBQ very cool to me it's the most American thing it brings all the cultures. Together it's history and art you can taste.
