You could also add some buttered garlic croutons in the bottom of the tomatoes and the croutons would soak up all the tomato juice. Then add your cheese and egg on top of the croutons.

Ooo this reminded me of a childhood dish that I would eat on very rare occasions. Instead of an egg, my aunt would put spiced minced meat inside a tomato and sear the top part in a pan, so that it was nice and crispy! 😸 One day when I went to collect them from her house, she made sure to cover them with a thick steel plate and asked me to watch out, as crows would swoop down and steal them. They seemed to really enjoy them too.

I'd salt the tomato shell and drain it upside down for 10 minutes

I’m surprised that the tomato fall in the very end and not while cooking 😱 but that recipe makes perfect for a side dish. Lovely.

This made me remember a Stuffed Tomato recipe from the 80's. Scoop out the flesh of the tomato after gently squeezing out some of the seeds/jelly from inside. Chop the flesh well and put into a bowl. Add some chopped fresh basil, thyme and italian parsley. Chives. And regular parm/garlic croutons. Just enough to absorb tomato liquid. Crack one egg in and mix gently to use as a binder. Fresh black pepper and extra shredded or grated cheese of choice. Spoon back into the tomatoes, being generous and letting it heap up a bit. . Bake until firm and the stuffing is crisp on top. Loved it served alongside roasted chicken.

This whole video is “ stinkin cute”, as Emmy says. The egg topper put it over the top for me. Will have to try the recipe, super easy.

I love tomatoes with eggs. My husband and I often cut slices of tomatoes to have with our eggs. Oh sooooo good! We will definitely have to try this recipe. Thanks Emmy! ❤️💜💚

This recipe works better inside a red bell pepper. :) A flat-bottomed pepper keeps its shape perfectly during cooking, doesn't fall over, takes less time, and contains less water than a tomato. You can put chopped tomato inside it if you especially want the tomato flavour.

Nice! I’m going to poke holes with a skewer at the bottom of the tomato so the water has somewhere to go.

you better should just put salt inside your tomatoes and turn them upside down for 30 minutes, it will drain the water ;)
