This Broccoli Cheddar Soup is AMAZING! - This broccoli and cheddar soup is amazing! It's perfect for cold weather, and it's so easy to make. You won't believe how good it tastes, and it's sure to please.

Ingredients:
Bread Bowl
1 Tbsp. Butter
1 medium Yellow Onion, finely chopped
1/4 cup salted Butter
1/4 cup All-Purpose Flour
2 cups Chicken Broth
2 cups Half and Half
12 oz fresh Broccoli, roughly chopped
2 Carrots, peeled and chopped
1/2 tsp Kosher Salt
1/4 tsp Paprika
1/4 tsp Garlic Powder
1/4 tsp Dry Mustard (can substitute with about 1/2 tsp regular mustard)
1/4 tsp Black Pepper
2 cups Cheddar Cheese

You always giving us something man. I feel like I gotta give back, so here it is: On that bread bowl, brush the inside with melted butter and hit it with the kitchen torch for that toasted inside before you load up the soup.

Thank you for posting this one. I’ve wanted an easy recipe for broccoli-cheddar soup for years! And I would put a /lot/ of black pepper because I can’t get enough of it!
Made this tonight and it was sooooo good! (Substituted vegetable stock for my vegetarian daughter). My husband literally said, "You could bottle this up and sell it." I said, "That's what AB said." LOL Thanks for a great recipe!!!

Use those stems AB! The small stems are tender and full of flavor. Or freeze for veggie soup.
