The ultimate vegan quiche.
I love pastry, who doesn't? And I really like French savoury pastries in particular. When I stopped eating eggs, cheese and dairy, quiche was the food I missed the most. Warm quiche with a cold salad, for me, is the perfect combo. Homemade vegan food, created and made with love so that everyone can enjoy it, is the secret to eating more plant based meals.
I don't want it to look or taste 'vegan' I want it to look and taste amazing! French style quiche has always been a favourite of mine, and with this recipe I can enjoy lots of different vegetable combinations using the same method. Try using only mushrooms or onions and you will be hooked on this vegan version for life. I like to eat it for breakfast too.
I really should have waited until it was cold before sampling my first slice, but I ate two slices before it made it anywhere near the fridge.
For the pastry you will need;
1 cup plant based butter - I am using Veganbloc 1 cup flour.
For the filling you will need;
1 packet of silken tofu, 1 tablespoon flour, 2 scallions/spring onions/1 zucchini/courgette, 1 carrot, 1 tablespoon olive oil, 2 cloves garlic, 1 teaspoon agar agar, 1 teaspoon vegetable stock powder.

This looks incredible! I've been pescetarian for almost 2 years, but you inspire me to truly do without eggs. I can stop all else dairy, but I find losing eggs a challenge! & fish atm, though went without it for 1 year. For peeps like me who wish to do without flour as much as possible, a handy pastry alternative to quiche that is delicious, is sweet potato (or Kumera, here in NZ) You cut same sized pieces, quite small & thinly, place in oiled quiche pan of choice, over-lapping. Doing sides first is easier! Then brush with a bit more oil (I do use olive, but whichever I'm sure would work) & gently bake for 10 or so minutes. Then take out & add quiche centre of choice (I've made with sautéed onions & spinach, eggs, & feta.. but will be trying this next!) & bake as usual.

I do like adding about 1 t. vinegar to the pastry dough recipe - it seems to add an extra fluffy crispness. Also, think I'll try adding a bit of kala namak for more "eggy" flavor. The veggie choices are endless 😋

That looks amazing! How do you fit a whole quiche dish in your air fryer? I don't own one but the ones I've seen have quite small pull out trays. Do you recommend a certain model?

It’s just like an oven. You can put oven safe dishes into an air fryer.😊

It's similar consistency to butter but made of non hydrogenated vegetable fats. We use Flora block which comes salted or unsalted. Trex is also good for pastry but is a pure white vegan fat sold in blocks. FYI we have commercially produced vegan cake and pastry...

Vegan block is a vegan butter,maybe you have vegan butter in Australia. I think you may just use vegan margarine instead,if you haven't. I don't always have vegan butter at home,i use vegan margarine instead then that works very well. Hope that helps.

It's a blend of shea butter, water, coconut oil and rapeseed oil with a few lecithins as emulsifiers. I used to eat a lot of it. Can't get it now in the North of Portugal so I'm back on the organic butter and making ghee.

I've used Nuttelex (available in Australia) for pastry and it works fine. Nuttelex Buttery has the best flavour

Its a plant based gelling agent, used in place of gelatine. You could easily find it online :)

I would have added black salt because it smells like eggs.
I've been reading that rapeseed oil is bad for you and I think its one of the ingredients in the vegan block....what do think about it as not sure what to believe 😊🤷

Gail eats plant based, she explains that in another video. There is nothing wrong with eating this way, and we choose what we want or prefer to eat. We follow those who resonate with us, I’m glad you like her content because it’s not just about food..☺️ I’m sure there are many other recipes out there with eggs and milk 🙂
Why have all my vegan friends died.My vegetarian friends are still fairly healthy. Hmm
