The Strawberry Lemon Marmalade | Canning Recipe
Welcome to 1870s Homestead! I'm excited to share the recipe for a delightful Strawberry Lemon Marmalade. This isn't your typical jam; it's a chunky, flavorful marmalade that blends the sweetness of strawberries with the tanginess of lemon. Perfect for spreading on toast, topping a biscuit, or even just enjoying by the spoonful! In this video, I walk you through every step, from prepping the ingredients to water-bath canning. We start with 4 cups of lightly mashed strawberries-each berry only needs a light mash to keep the marmalade chunky. Then, we zest and peel three lemons, aiming for about 1/4 cup of zest. It’s important to lightly peel to avoid the bitter white pith.
Ingredients:
4 cups of lightly mashed strawberries
1/4 cup of lemon peel (from 3 lemons)
Juice of 1 lemon (or more if you prefer a tangier taste)
1 package of pectin
6 cups of sugar
Instructions:
🍓Prep the Lemon Peel: Simmer the lemon peels in water for 20 minutes to soften them. Drain and set aside.
🍓Combine Ingredients: In a pot, combine the strawberries, softened lemon peel, and lemon juice. Add the pectin and bring the mixture to a boil, stirring frequently.
🍓Add Sugar: Once boiling, add the sugar and continue to stir until it returns to a hard boil. Boil for 1 minute, then remove from heat.
🍓Can the Marmalade: Skim off any foam, then ladle the marmalade into sterilized jars. Clean the rims and seal with lids.
🍓Water Bath: Process the jars in a boiling water bath for 10 minutes. Let them sit in the water until it stops boiling, then remove and let cool.
Each batch yields about 7 jars of delicious marmalade. I love to keep a few jars for ourselves and share the rest with friends and family. If you’re new to jam-making, remember to stick to single batches for the best results-doubling can affect the set of the jam 🍓
I hope you enjoy making this Strawberry Lemon Marmalade as much as I do. If you try it, let me know how it turns out in the comments below. Happy canning ♥

I just told my husband yesterday that I'm done making jams and jellies. Last week I made strawberry rhubarb and blueberry and this weekend I made apricot and cherry preserves. I probably have enough on my shelf that will last us 10 years at least...but I have everything I need to make this so...lol

@@wendyellis6402 I should try this for sure. I make yogurt about every 2 weeks and put on top of blueberries and top with my homemade granola. I'm sure the jelly at times would be a nice change.
I didn't know I wanted this but I do

I CANNOT WAIT TO MAKE THIS! EEEKK! 😀😍 ... And, I do not apologize for the CAPs 😂
Fantastic recipe. The strawberries I used are so sweet and juicy this year and the lemon peel added that extra balance for a terrific jam. Thanks for sharing 👍

I can attest that this strawberry marmalade is amazing! Snagged myself a jar last week at the farm stand. So good!
I want to make the tea. What kind of basil to you use? And, YES, I'll be making the jam.
Sounds yummy! Now on my to do list! Thank you Rachel for another great recipe! 🌻🐛Carolyn in Ohio 🌿💚🙏💕
That looks so delicious. I’m going to make some.😋
Thank you for a great and wonderful video
Never had it. Feel like I NEED it. Great video!
Oh my goodness, I am definitely going to have to try this. I just did your relish yesterday (and gave you the credit on my video :)) This is going to be on my list of things to make. THANK YOU SO MUCH! And FYI, I love the outfits you wear :)
your strawberry marmalade looks good I will definitely have to try to make it
What a combination..strawberry and lemon. Thank you Rachael. I look forward to having this in my pantry. I make homemade bagels often so this is a real treat topper.
First and foremost. Happy Father's Day to all the Dad's. Hey Rachel. Your strawberry 🍓 jam looked amazing. Thank you for sharing your strawberry 🍓 recipe to all of us. God Bless you Rachel and Todd. HUGS 🤗. Mari'a. 🤗🤗🤗❤️❤️❤️💙💙💙👋👋👋👍👍👍🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓
Great recipe, I will be doing this. I liked what you said about how many jars you would be keeping. It's important to think of how much of something you really need. Take Good Care 🥂
Yum!!! I am really curious of how you get rid of the green part of the tops of the strawberry. I would love to watch the video of it.
I am going to make this. Thank you
Love your channel. You’re living my dream.
Thank you for sharing
Oh yummo, thank you Rachel 🍓🍋🍓
Looks just lovely!!! Thanks for sharing!
Yum🍋🍓
I didn't know to do single batches of jelly😮 I have just cooked down till it's thick on a plate. But I am not singing pectin, I use lemon juice, I just did a double batch of strawberry yesterday. I guess the secret is to add ten to fifteen minutes of cook time to thicken. I did all batches this way last year also. My jams n jelly's have all set. The extra in the fridge I had on toast this Am was set. 😅
I love love love watching your canning videos! Thank you for sharing this one❤
Those strawberries look GOOD
This looks so good Rachel. I might have to make some.
Definitely going to make this as have all the ingredients. Great holiday gifts for my co-workers!
Jams and Jellies are always so pretty in the jars! Will have to try this, I've never had the jam, only strawberry lemonade!
I so look forward to making this recipe thank you for sharing 🍓 🍋 👍
The way I look at sugary jams that we usually only eat a teaspoon or so
Looks delish! I made orange marmalade at the end of winter. The house smelled so wonderful. It is so refreshing and tasty!
I made the strawberry lemon concentrate it is sugary but oh soo good
i cant wait to try this looks wonderful - I would love to see what you do with the strawberry lemon concentrate - how much basil and chopped??? thank you
My mouth is watering!!! Just thinking about eating it!!! I want to make the strawberry lemonade too!!! God Bless Us All!!!
I’m just going to lick this bowl. 😂 that exactly what I would say it looks delicious !
We have a lemon tree and strawberry Vines, so we might be able to do this!
Would love a video for the garlic scones, you sell at the stand. Will be trying this for sure.
Rachel, do you add basil before you can the concentrate or once you mix it to drink? I'm excited to try this marmalade! Tysm for the inspiration. 😊
Thanks for this recipe, it looks like something I would love! Im going to try it next time I make jam. I wonder if you saved the lemon boiling water? I wonder if it would make a good cleaning solution mixed with vinegar? So good to hear you retired. I did in 2018, and am really enjoying my 60s stress free! As long as I dont obsess about my bank account, that is😁
This looks delicious! I wonder how it would be with blueberries ❤
I never use pectin in my jams. Lemon is pectin. I put pint and pips in a muslin bag and that is the pectin 😊.
That foam would make a great ice cream topping.
I wonder how this would work with oranges..strawberry orange is one of my favorite flavor combinations!
Looks delicious! Which Ball book?
You could probably grow lemon trees at your location. I have a few that I grew from seed. One has been in the ground and the others in pots. It freezes here, and they have lost their leaves and frozen, but all have come back in the spring. None have produced lemons yet, after 8 years, but we shall see.
Oh my those strawberries are so beautiful! In south Texas they’re not as sweet!
That looks delicious. Rachel, I have been trying to find info on how long I can leave my brother in the fridge before it's too late to can? Had a situation and need to find out to can or trash it? Thanks

New to making jams and jellies here! Is there a certain kind of pan that showing be used such as stainless steel or enameled cast iron? I’ve heard some say a non reactive pan. Not sure what that is. Can you clarify? Thanks so much. I really enjoy your videos.
Id love to know how to make that strawberry basil lemonade, I’ve saved my tops from today’s biscuits I made from your strawberry biscuit recipe oh my delicious ❤
Looks so yummy!! Do you guys spray your strawberries or no? I was surprised when asking at a local farmstand, they said they have to spray for mold. I just want them raw, of course!😊

Mold? I never saw that in the 30 years growing them. Just have to cover with mesh. Deer like the leaves and the rodents like the berries. Squirrels and chipmunks and an occasional mouse. Never saw mice til a cat got a couple.

Hey Rachel! Can I use frozen berries in this? Would I that them first, then mash then cook with peel?
Wonderful video ❤ curious about how to use strawberry tops in the concentrate….sorry kinda a newbie…do you cut off the stems? 🤷♀️ and with the basil, do you chop em? I know you said you weren’t gonna do a video but I’d really love to learn the process🤓

I really want to try this. Could you use orange peels instead? Or maybe half and half. I have some oranges that need used up
I made this last weekend and the jars that went into the canner, all of the solids floated to the top. Is there a way to keep them floating throughout (the partial jar that went into the fridge didn't separate)?
