THE COWGIRL CANDY CANNING RECIPE | Bonus: Why We Can Our Food
Cowgirl Candy has been our most inquired ,and requested video. It's our favorite condiment/ seasoning ingredient we preserve ever year. Honestly, the flavor is incredible and so versatile. So here you go!
Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints.

the jalapeno juice/marinade leftover - I have an idea - I would make jalapeno gummies especially good around cold and flu season. the capsicum in the pepper is good for the throat. The sugar makes them edible but still spicy. On cold days and nights that capsicum would warm a body up.

I used the left over brine to can finely sliced onions! I did them exactly the same way as the Jalapenos and they're soooo good! Great on burgers and sandwiches!

Awesome! Feels good doesn't it!
I’ve seen recipes where the brine gets boiled down until it thickens a bit, before adding it to the jars full of peppers. That might decrease the amount of brine left over. Gives a thicker consistency to the finished product.
My favorite ,family loves this I also make it with pineapple. With the pineapple it is called Hawaiian cowboy candy.
Been a staple in our family for three generations, learned from my Mawmaw. She was raised on our families farm outside of Tyler, Tx. Thanks for sharing.
Hello there, I made your cowboy candy and I loved it. One thing I did with the leftover syrup was that I reduced it and made a very sticky, thick syrup. I now have used that in other recipes, I tossed brussel sprouts in it and so far that’s my favorite. I’m a huge fan of your page, I myself am from Monroe and don’t live there anymore. It’s nice to watch the two of you, it reminds me of home. ❤️

So, you guys don’t discard the remaining brine? I canned mine and then read somewhere that it shouldn’t be saved that way 😢
I add sweet onions and red bell peppers to make a relish that I add to everything from salads to burgers and BBQ!
I have used in Mexican cornbread and it was wonderful!
Thank you for this! Cowboy candy was a new thing for me here in Australia but you now have us (and a few of my friends) addicted!
Cowboy candy on burgers, with ketchup and mustard is fabulous. Also, a splash of the syrup in a margarita takes it to a different level..

I love cowboy candy! I can up the extra syrup to use for cooking, etc. It’s such good stuff! I agree with you about gas stoves and canning instead of freezing; we have a gas stove for that same reason. Last summer after a bad thunderstorm knocked out our power, I was still able to can spaghetti sauce from my tomatoes.
Thank you for the suggestion of chopping it up instead of slicing up the typical rings. It is so much more versatile and the hubby loves it!!!
I have never seen the Kitchen aide chopper! Love that. Need co checkin to that. Great video ! Thanks.

I am loving your channel! Thank you for all these great videos. You two are homestead goals. 😊
Fantastic recipe. I’ve never made it either but will now. Love your how to’s in the kitchen.
Used 14 lbs of mixed hot and sweet peppers that were gifted to me to make cowboy candy today. Ended up with lots of syrup left over. I canned that up to so when my garden peppers are harvested I can make some more!
I love harvest canning! Good timing!
Yes cowboy candy is what's up!!! Amazing on everything. I send these babies out as Christmas gifts!
The show must go on power or no power. Such a professional!! I am looking forward to trying this recipe. Thanks Rachel
I made this today but I didn’t have enough jalapeños so I added banana peppers. I used the left over “syrup” to make cornbread. It’s absolutely delicious.
We love cowboy candy! We do slices and use it everywhere from salad to stakes and everything in between! I need to make some more for we are down to the last jar. Here is the recipe I follow and it’s delicious! I also add other peppers like my cajun peppers or whatever grows in the garden at the time. I use red and green for color. Hey, we eat with our eyes first 😂. 3 lbs jalapenos, fresh and firm 2 cups cider vinegar 6 cups granulated sugar 1/2 teaspoon turmeric 1⁄2 teaspoon celery seed 3 teaspoons granulated garlic 1 teaspoon ground cayenne pepper 1 Tablespoon Mustard Seed Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems. Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside. In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes. Add the pepper slices and simmer for exactly 4 minutes. Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar. Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes. Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness. *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It’s wonderful brushed on meat on the grill or added to potato salad or, or, or… In short, don’t toss it out! Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints. When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label. Allow to mellow for at least two weeks, but preferably a month before eating. Or don’t.

Oh I will definitely be doing this to add to my other jalapeno canning projects I do every year! I didn't weigh one of the batches of jalapenos I bought but it was a 5 gal bucketful & that was only 1 bunch amongst others. I will grow my own hopefully next year but I'm only just back to my hometown just recently where I own my home here in SW Louisiana, so I did start a fall garden but not the quantity I need. I'm just finding y'all channel & I'm absolutely loving it. So binge watching it is. I do lots of canning, dehydrating, preserving lots for my food storage & nothing goes to waste. Thanks for sharing all the goodness.
I just started watching your channel yesterday and am enjoying it. You and your husband seem so down to earth I am learning so much from you thank you and you make it look so easy, vicki
I can't wait to make this and the cowgirl candy! Thank you for sharing this!
going to try this tomorrow. Thanks for all you both do
Thanks so much for the video and the reference recipe! I will definitely be making this!
My jalepeno plants have been producing like crazy and I finally have 3lbs for this recipe! Im so stoked! :)
I grew up just down the road in Tecumseh, MI. I love watching your channel. makes me feel closer to home.
Thank you for this video. I'm in my 50s and getting back into canning.. I haven't canned since sometime in my 20s. Today I made a small batch of cowboy candy. And used the extra juice over baked chicken thighs.. over rice. Yum! The actual cowboy candy will be too hot for me. But my kids will love it. Im so glad I found your channel.
Thank you so much! I learn so much from you and your subscriber's are wonderful, sharing ideas and experience's. Appreciate you all!

Just made a second batch. Mine are kinda between a slice and a dice. I did add a tsp. each of cinnamon and ginger. Love your videos ! They get me to get up and get things done. Thanks !
I adore Cowboy Candy and I am so glad I found this video. I always cut up my jalapenos too. This more relish type is perfect for me since I am the only one who eats this. Thank you so much now I know to half the liquid while making it this way.
Love your kitchen aid chopper🥰
Thank you. Finally someone on KZread that knows how to can jalapeños for cowboy candy. Excellent video
I just made your Cowgirl Candy. And at your suggestion of cutting syrup recipe back by half for chopped jalapeños was perfect! Thanks 😊

I just made a double batch today! I did it outside on the burner, as my mom has lung issues! Thank you beautiful people!🌻
I made this recipe a couple of months back and OMG!!! So good,!! I mixed it into my GF corn muffin batter for turkey day...ELEVATED CORN BREAD!!!! So good!!!
Made this last year for the first time when I found your video. Canning some more right now while listening once again. We just finished our last jar from last August. We have 8 kids and surprisingly the majority of them love this stuff!!
My husband and even my kids love it
I love to candy mine but what I love to do with slices is pickle them like my dill pickles and they turn out great also. Keep up the great videos.
So great that you have a farmers market close to you. Great video I want to try this , just did carrots and beets in my new All American canner.
I have been canning the cowboy canning for 7 hours and it sure smells really nice. Reminds when my mother canned pickles.
That was awesome! Thank you so much!
Made this last week and it’s delicious ❤thank you
Just want to say I enjoy your video's so much! Thx🙋♀️😊
Alright, alright, alright!! After years of hearing about this stuff, I decided I needed to fig out what the big deal is so made a batch. I used a mix of jalapenos and cajun belle peppers from my garden just to change things up a bit. I got 5 half pints candy and 5 half pints of leftover brine. The taste of that brine is AMAZING - I couldn't keep my spoon out of it!! I will use it for something - can't wait to try the candy! Oh my!! Thanks for great video!!
I made my first batch of cowboy candy last season, 2020. I sliced mine kinda thin on a mandolin. Held them by then stem end and sliced till I got close to the stem so I wouldn't have to double handle them. The did shrivel up but that's what I like about them! They aren't real thick and I pile em high on burgers and other sandwiches. I used red and green jalapenos and they're so good!
Thanks to you, I made this for the first time. I just tried it after waiting the suggested 4 weeks and it’s delicious! The only problem is I didn’t make enough! I will quadruple next year. Thanks for another great canning recipe.
Hello cool that sounds so good. I am going to have to get some more jalapeno's and make some. My son would love this stuff. Good to know that when the power goes out that the gas stove still works. Thank you for showing us from start to finish how to make the recipe, this really helps. Thank you for sharing God bless stay safe and have a wonderful day
Love this! Can’t wait to make some of our own.
Great video Rachel and Todd. I've never had Cowboy Candy. Thanks so much for haring, looked easy enough.
Canning up some of these right now. These are a favorite in our house and we can never seem to have enough. They make great gifts too! Since most of our friends and family can't handle spicy food, I use Nadapenos. We leave out the cayenne and the pepper flakes too. Even the kiddos can eat these! They have the flavor of Jalapenos with NO HEAT. Happy canning!
Thank you I REFERENCED YOUR RECIPE I made some changes based on my pantry and I tasted the syrup OMG delicious I can’t wait to pop open in 2-4 weeks I had syrup left over and will start a new batch or cook with thanks again
great idea. thanks for the video. love you guys.
i am 61 this year and just fell in love with peppers. I like this recipe. I mix peppers in with home canned beans, fresh shredded cabbage and carrots, sometimes cooled brown rice with a dressing made with homemade fermented mayo, vinegar, and oregano
Ive only made cowboy candy once and used all kinds of hot peppers and chopped them and everyone loves it !
Thanks for the recipe! I am making it right now.
My husband and I are doing 3lbs today!! Love your videos!!!❤❤
Thank you. I wanted a shelf stable recipe so thanks.
Ugh, no electricity. That is one of my worst nightmares when I’m using my electric Presto canner and when I’m in the shower. I grew up cooking with gas stove and still do. I just can’t get the hang of electric. I remember popping popcorn at a family member’s house and I set the plastic bowl down on a burner that was just used-yeah, it had perfect rings melted through. I’m sure the new glass tops are easier to clean than the heavy grated gas stoves, but that’s the sacrifice. Plus I recently had a glass shelf that covers the crispers in the fridge Totally Explode in my hands during cleaning! Not a fan of glass. We replaced it with plexiglass. I’m not sure who designs appliances, but I think I missed my calling. Do any of those engineers think 💭 about how these appliances get cleaned? I have words every time I clean the cooling fins under my fridge. We just ordered an upright freezer because I’m tired of searching for items, defrosting and standing on my head to reach the bottom. Most have glass shelves and I don’t understand that as it will impeach air flow. And I’m not up for another Exploding glass event. Good job canning in the dark.😊

Oh Laura I sure hope you like it as much as we do. I posted the first comment in the thread on all our favorite ways to use it
I've been making this stuff for years. How Cowboy Candy isn't a condiment in every household I have no idea. It's great on burgers, hot dogs, crackers with cream cheese, especially good on pizza. And that juice is liquid gold as a marinade...great for steaks, pork chops, chicken, fish...oh, marinate some prawns in that stuff and grill up some skewers. 😋 I'm with you on the size thing. I used to do slices, and they're fine, but I prefer the smaller chunks. Since I grow lots of peppers I like to change it up from jalapeño once in a while. Serrano makes for excellent cowboy candy. I've also done it using a combination of sweet peppers & habaneros...super tasty.
Thank you for the video. From England. Take care. 😎🐺☮️👍
Trying this tomorrow! Pectin, some mint and a small amount of the jalapenos would work great to make some jalapeno mint jelly out of the leftover liquid too!
This is probably my 5th or 6th time rewatching your video, y’all’s content is so comforting. Thank you for all your hard work with putting out videos!!

First , this looks yummy. I’ve made this like you mentioned in another way. But I Like Your Version Better*** And wow I need that Kitchen Aide attachment 👍I live in Michigan as well and I know about needing a gas stove. We installed one this year as well ,2 gas heaters. We have a generator hooked up to the house as well last year. So we now can roll it to the house and hook it up. I want to build a box for it so it stays Permanent in its spot , rather than hauling it each time. Especially. During the snow season. Thank You so much enjoyed this Allot****👍
This is the best condiment, grew 5kg chillis outside this year, 1st time we have made Cowgirl Candy, its brilliant. We live in Somerset UK have been canning for approx.15 years and use jars with lug lids as are unable, until recently to get proper canning jars, also vv expensive here. Started dehydrating (Excalibur) 3 years ago, now waiting for delivery of a medium sized Harvest Right, thanks for a great channel. K & T
I have been canning a long time & never knew you could double stack when water bathing. You just blew my mind lol.
You guys are the cutest! Love this recipe too! Jalapeños are my favorite after cilantro
I just made my first Jar yesterday (dif recipe it had all spice 🥴 and etc. tasted too much clove) Not sold on other recipe …. Therefore, look forward to trying your recipe. And yes, my first thought was exactly what you said they need to be diced up not sliced ! Especially if you are using veggies on crackers with cream cheese, or hotdog or whatever I 100 percent agree with you Thank you so much for the video and recipe. Can’t wait to try it.

Definitely canning this year!!!!.... It is absolutely horrible to loose your garden and what you've canned, under any circumstances. In August of '21 my husband's and my homestead got flash flooded and was covered in 7ft of water. I was growing enough to can many items for a year. It was just awful. We lost our home as well, and are living in a camper now, but I found the space to to start my seeds! Have actually been suffering from depression on and off, and the last few days have been binging your channel...getting inspired, and finding comfort watching you! ❤️❤️
