LAY HO MA! This recipe totally reminds me of my childhood - it's savoury, comforting, and incredibly easy to put together. Join me in this episode and learn how to make a quick Chinese style hot and sour soup recipe right at home! Let's begin
Ingredients:
4 dried shiitake
5g woodear mushrooms (2-3 small pieces)
2 cups veggie stock
4 cups water
3 pieces garlic
small piece ginger
3 sticks green onion
1/2 cup canned bamboo
170g Omni Pork Strips (1 package)
2 tbsp avocado oil
1 tsp cayenne pepper
1 tbsp cane sugar
2-3 tbsp soy sauce
2-3 tbsp Chinese black vinegar
1 1/2 tbsp potato starch + 2 tbsp water
Directions:
1. Place the dried mushrooms into a stock pot followed by the veggie stock and water. Heat the pot on medium high heat covered for about 7-8min
2. Finely chop the garlic, ginger, and green onions. Reserve some green onions for garnish
3. Pour the hot broth into a large mixing bowl. Remove the rehydrated mushrooms. Rinse and drain the mushrooms in cold water so that they are easier to handle
4. Thinly slice the woodear mushrooms. Carefully remove the stalks from the shiitakes and thinly slice. Thinly slice the bamboo
5. Heat the stock pot back to medium heat. Add the avocado oil. Add the garlic, ginger, green onions, and the Omni Pork Strips. Sauté for 4-5min
6. Add the mushrooms, bamboo, cayenne pepper, cane sugar, soy sauce, Chinese black vinegar, and the reserved mushroom stock
7. Give the soup a good stir. Then, cover and bring to a boil
8. Make a slurry by mixing together the potato starch and 2 tbsp of water. When the soup comes to a boil, pour in the slurry while stirring
9. Plate the soup and garnish with some chopped green onions

    For those without Omni Pork, consider using medium or medium firm tofu. A bird thai chill pepper instead of cayenne if it's available. Also consider finishing with a dash of sesame oil and cilantro, and extra chinese black vinegar to taste.

    The vinegar should always be added at the end. I also would prefer Tofu over the meat substitute as well.

    Head's up to anyone trying out this recipe: the shitake mushrooms retain a LOT of hot water, so be careful not to burn yourself even after rinsing them. They can feel cool on the outside but still be piping hot on the inside! Hot and Sour soup has always been one of my favourite comfort foods (still trying to recreate the childhood flavour profile and haven't been able to nail it yet). I'm looking forward to trying this simplified recipe!

    My version, created from lots of chiefs uses can water chest nuts, bamboo shoots and tofu lots of ginger and garlic. A little white pepper. But follows this chiefs almost to a tee. I cut the water chest nuts in half. I cut the canned bamboo shoots into prices and cube the tofu. I have never used sugar though.

    Yes, I burned my hands squeezing the water out in the mapo tofu recipe. Next time I’ll leave them in the cold water a few minutes.

    You can reconstitute shitake/wood ear mushrooms in cold water as well.

    I cooked this recipe yesterday . It was just fantastic, exactly the way i remember eating it many years ago in restaurants when I was a no vegetarian. This is a fantastic channel for vegans

    That meat substitute sounds intriguing - I’ll have to look for it at my local Sprouts. I love adding tofu to my hot and sour soup, as well as white pepper powder instead of chili pepper. I also prefer to add the vinegar towards the end of the cooking process to prevent evaporation, and also finish off with a splash of sesame oil!

    I hope you found it at your Sprouts! I was fortunate to have seen Omni Pork available at my Sprouts about 6 months ago and through Social Nature was able to try it for free. My first choice was the luncheon 'meat' to make Gilgeori... then I waited patiently for Wil to share some recipes using this and especially, for a Hot and Sour soup which is one thing I have missed as a vegetarian so very much. I was thrilled to see this recipe and today is the day I am finally making this recipe. Loved your tips for the finishing! I already know I am going to love it ~ 😉

    I've never made Hot and Sour Soup with sugar and cayenne pepper before. I use white pepper and maybe some Asian pepper flakes for heat. I also add the vinegar when it's in it's last minute to 30 seconds of cooking. Tofu is also a great addition to the soup.

    Mr. Yang Man, thanks for posting the recipe. It's always good to see how others make their hot and sour soup and I'm open to trying new versions. Every cook and Chinese carry out place has their own version of hot and sour soup. Making it for the first time? Then, I suggest that you follow the directions exactly. Did it come out to your liking? If not, please realize that this soup is actually is a circus high wire balancing act. Make it yours. Taste as you go along and balance the Cayenne, Dark Soy Sauce and Black Vinegar. My version uses White Pepper rather than black pepper or Cayenne powder. Also, I'll add the regular soy sauce early and the White Pepper and Black Vinegar at the very end, then taste and balance as needed. And maybe add a couple of drops of sesame oil before serving. Pretty soon, you'll be able to make almost without measuring anything. So if your mood is different, and you possibly want it hotter or more / less sour, changing the recipe will become second nature. Folks, you are embarking on a quest for the Hot and Sour Soup that is only served to the Eight Immortals on top of the Wudang Mountains. Enjoy.

    Same here as a vegetarian. I can substitute plant-based "meats" for the pork which has cholesterol or even baked tofu or TVP. I refuse to buy bamboo from China, so have to substitute for that, too, with maybe celery or something else. The meat-free version can be even more delicious than the original recipe!

    Wil, this is one of my childhood favorites too! I love, love, love, Hot & Sour soup! I don't have the special mushrooms, or the black vinegar :-(, but I have some Kombucha (sp?) seaweed I might put a little in there. I need to use the veggies I have and oddly enough I actually bought some of that Omni "pork" and it is in my freezer! It is about 20 degrees here this afternoon in Reno, NV, so this will make for a nice warm and cozy dinner. Also, for Christmas I received BOTH of your cookbooks and can I just say how beautiful and easy to follow the recipes are? LOVE THEM! Thank you and Happy New Year!! 💖👍😉

    Kwonderful version of hot and sour soup! I’m happy that there’s a Sprouts Market nearby. I used their vegan ground pork to make jiaozi (soup dumpling). I will try their “ pork” strips for this soup. I will also add a few lily buds. “Do je “ Will -that’s Cantonese for “thank you. “

    Hello Yeung, your asian inspired recipes are awesome, thanks and keep 'em coming. What would be some of the stock vegan asian sauces/condiments that you would recommend in a pantry? Chilli crisp oil, light soy/dark soy sauce, black vinegar, cooking wine?

    Thank you! Imma use the tried and true tofu. I am surprised you didn't, but maybe you always had a pork version. All the ones I have tried have little tiny cubes of tofu and no meat. Very stoked to make it myself!!! I love all your recipes!!

    Love your dishes and your channel. I usually have a lot of things in my pantry not Chinese black vinegar so I'm not sure if I get it I will use it again any suggestions other than the rice vinegar?

    I love Hot&Sour Soup. Thanks for introducing the OmniPork product. I am always looking for protein rich vegan items. Also Wood Ear mushrooms are new to me. Additionally, I did not know that there is such a thing as Chinese Red Vinegar; i only know Rice Vinegar, which I use for salad dressing. For my Hot&Sour soup, I had been using Tamarind paste. I guess, I had inadvertently, created a Fusion Indo-Thai-Chinese variety. 😉
