    his off hand comment about the reason why he's able to do that post kettle ferment - most people take that as a chance to brag, that no one else can do it, but he was just straight up about it. you can tell a lot about a business by the little things, much respect to Utopia

    "Charge what you need to charge, but make sure the quality is there." I agree and respect this statement. So many people turn away from something that's "too expensive" but never understand why they have to keep up the pricing.

    💯 If one day his Bagel are $12.97 just for cream cheese on it, It's not like I don't go ever again, I will just consider going once a week or only on weekends. Me as a consumer will know that I am getting a quality bagel, it doesn't have to be an everyday morning routine, if anything, on the week days I can make breakfast at home, then look forward to a bagel on the weekends.

    My husband and I were finally able to make the trip to try this place. So worth the hype. Best lox bagel we’ve ever had! We met Scott & his wife. They were both working the front counters, taking orders, etc. Chatted with them briefly & they were so sweet, even handed us a free bagel fresh out of the oven! So rare to see owners who care so much & aren’t above working right alongside their staff. The love is reflected in the quality of their food! Can’t wait to go back.

    I've never seen anyone more deserving of success than this man. He made sure EVERY aspect of making the bagels was perfect. He didn't cut a single corner or take it easy anywhere.

    If only every bagel-shop owner were like him, customers wouldn't keep asking what ingredients certain flavored bagels have. Speaking of the process, how many rollers are there to make bagels by hand? What is the difference between making them by hand and using a bagel former?

    yeah but once you get to the top "level" in cooking the secret becomes more feel and look then how to make it. I started making pasta 7 years ago and I'm just now at the point where i dont need to to measure to make good pasta, I know by look and feel of the dough that its good. The big secret is doing something large scale like this guy and still keeping the same bagel. amazing

    This guy is a true businessman. Prepared, efficient, caring, and loving of his product and how it made is an absolutely essential to him. Love that he cares about his community and his employees. Seems like a happy dude that loves what he does. Love it!

    Master of his craft. Mad respect. My family has been making pizza for over 35 years. And I rarely hear anyone talk about the weather. He’s right. The ambient air temp, humidity level, pressure all change how the dough proofs and rises. He really knows his stuff.

    I work in a bakery and let me tell you, artisan bakers are a different breed. You will find no harder working people who work under difficult conditions, especially during the summer. I loved loved loved this video. Scott is quite the philosopher and I appreciated him sharing so much of the process. The love and respect he shows his employees is so endearing. Just fantastic.

    I've worked at restaurants and a pastry shop briefly. I have mad respect for a business like this that puts out a huge volume of consistent product every day and respects their employees.

    @LennyD A big point is to have the businesses on even footing. Often times large corporations can leverage legal and tax loopholes that they push for through lobbying that give them an underserved edge. You don't need politicians to preserve these style locations, but you do need them to push back against what dozens of prior administrations have enacted.

    Many years ago I visited this shop and I loved the bagels. I never thought I'd see a video that explains to me why I love their bagels so much. I lived in CT for 13 years and loved to go to NY to visit my uncle and eat at different places. Eater has made it possible to see inside these places that I hold dear to my heart.

    If you have ever tasted a truly great bagel, still warm and fresh, there’s nothing like it in the world. 90% of “bagels” are tasteless circular baked breads that taste nothing like a real bagel.

    i love how much love this guy has for his employees. nyc needs to keep family businesses like these. all those chain stores where employees come and go every season, none of them will develop the skills and craftsmanship that takes decades. it's so valuable.

    It’s crazy to think guys like him are literally keeping traditional bagels alive by having a place of employment for the rollers. If there was no job, no one would bother to learn the trade. I truly hope young bakers watch this and are inspired to learn the craft, and continue to pass it on

    Sometimes I forget all that goes into making a bagel as I’m spoiled having had them my whole life including homemade versions. Hand rolled is the only way ay to go. It’s wonderful being a native New Yorker.

    I have a friend who is from Rockaway Beach New York. Hasnt been in years though. So I ordered him some of these for his 36th birthday and had them shipped to him in Florida. He gave his firm stamp of approval.

    Kosher Delis and bagel shops take an almost Japanese mindset to their products. Pride, craft, repetition and absolute dedication to making one or two products as great as they possibly can. Saluted… this is the type of stuff that inspires me!

    Yes! I dislike that common myth that “it’s all about the water” that makes NY bagels so good. It’s simply the skill and dedication to the craft in an NY bagel shop.

    @@samw2768 It has everything to do with the quality of their work actually. The water argument doesn’t even make sense because there are states with water as soft or even softer than NY that do not make great bagels. Furthermore, this has been categorically debunked by America’s Test Kitchen. I have had great bagels in other states that have hard water, so long as the bagel makers know what they’re doing, but the overall quality is highest in NY just like Philly makes great cheesesteaks, the South knows how to bbq, etc.

    Oh you have no idea I grew up literally across the street from this bagel place I used to wake up at 5 am just to get there fresh bagels and in highschool me and my friends would be up all night eat bagels at 5 am and then go to sleep lol

    This is one of the best documentaries about bagels. I really would love to go to Queens for Bagels and visit Utopia. Scott, you rock man. Kudos to you for keeping it traditional, hand rolling, boiling and making such beautiful bread :)

    Stopped in today for the first time. Long line, but worth the wait. Awesome, voluminous sandwich and bagel options. Scott entertained those waiting with a great, loud music selection of The Eagles, Stones, and Beatles while alternating between work and playing air-guitar behind the counter and hollering "Happy National Bagel Day!". I thought he was kidding, but it turns out January 15 is National Bagel Day. Scott's enthusiasm isn't feigned for the purpose of the video. He's clearly into making bagels and having fun while he does it.

    As a home bread baker I love to watch other bread bakers at their craft. I make my bagels the lazy way by poking a hole in the center and forming the hole. I love how he says "everyone coming out of the oven is different." Perfect is for factories.

    Aside from the actual bagel making, just the operation and logistics of having thousands of bagels in multiple fridges that need to be rotated and made sure that they don’t sit anywhere too long. That is a huge job in itself. What a great crew!

    "Mistakes are a good thing to happen when you learn from them." Cooking 101... such a mature statement from a great chef... or any profession for that matter. Best lessons are learned through mistakes to achieve perfection. To which perfection may be never truly achieved in cooking (via a great chef) through his/her lifetime.     this is a man who loves his job. what an inspiration everyone can learn from. nowadays, people only care about how much money they can make from a job, but they forget if you do what you love, you will become the best at it then the money will naturally follow. if you don't like your job and only do it for the money, no amount of salary can stop you being miserable every single day. I speak from experience, having walked away from a job most people would consider very high paying; sooner or later you realize happiness is far more important than any amount of money. having everything under the sun is pointless, if you don't have the one thing that counts in life - happiness.

    Love this gentlemen's attitude and passion for his craft. I'm from Southern California and had these amazing bagels shipped overnight with lox and other goodies, Superb! I highly recommend these bagels if you have not tried these yet, damn now I'm hungry 😁 Happy New Year ✌

I saved up and made different purchases for special occasions and was able to bring New York bagels,Jacques Torres famous chocolate chip cookies and other goodies with time. Trust if its pricy but well worth it, Happy New Year

    This brings back fond memories of working at Bethesda Bagels in Maryland over the summer and while in Highschool. They too also used the “old school process”. The whole staff would dance to the Macarena early in am while the bagels were baking. We had loads of fun in process of making bagels and serving the customers. Oh the nova lox, white fish on everything bagels were unforgettable. My all time favorite were the tuna melts with Swiss cheese, alfalfa sprouts and tomato as well the raspberry Rugelachs cookies. I will never forget my time working there. Such a great staff to work with. I will definitely check out this place on my next visit to NYC. Superb interview!

    Just tried a blueberry bagel fresh out of the oven and it’s out of this world good! I love how he does not let any side of the bagel go un noticed when flavoring it. This man is a master at his craft and I will definitely be back!

    I love this guy. I use to make bagels. I didn't roll them but I kettled them, boarded them ,and baked them. got up at midnight. was at work by 2am out by 11am. and I loved when people would say ....wow these are so good. utopia bagels are amazing. this is way.
