Today's video is a close look at the No.1 eel restaurant in Japan, "Osakayama Kaneyo", founded in 1872.
I was able to capture a lot of valuable Japanese craftsmanship in the atmosphere of a long-established restaurant, such as how to handle eel, carp, and eel kabayaki.
When I was a little, I didn't really like eel, but when I was in high school, I visited "Osakayama Kaneyo" for the first time to celebrate my grandfather's recovery, and for the first time in my life, I was impressed by how delicious eel dishes are!
The craftsman who was the head chef at that time is now the president of the restaurant (the black-clad craftsman), and he told us many stories about that time and the history of the restaurant, and we enjoyed an emotive time full of memories.
I admired the attitude of the president and the craftsmen who kept the atmosphere of the garden and the store as it was, and kept the same old taste of the restaurant, and made an effort to live up to the name of the No.1 eel in Japan.
I knew Kaneyo's eel was delicious!

手捌きのすべてがすごい。 裂くのはほぼ三手。しかも肝を避けるためにそこだて立ててる。串うちは指を刺しかねない速度で迷いなくつらぬく。すごい。

一人前の職人になるまで「串打ち三年、裂き八年、焼き一生」って言われるが、素晴らしい技術だ。
子供の頃、同級生の父親が露店で何年も鰻釣りの店をやってた。 釣った鰻をその場で捌くんだが、恐ろしいくらいに素早く捌いていた。 それを思い出した。
とっても美味しそう! ウナギを食べたくなりました♪
彼はうなぎを彫るのがとても上手です。尊敬 ✨

うなぎ美味しそう、、!!だし巻き玉子もフワッフワですね。素晴らしい組み合わせだなぁ。美味しいと美味しいを合わせたらめちゃくちゃ美味しいに決まってる😭鯉は食べた事ないんですが、曾祖母が昔食べていたという話を小さい頃聞きました。鯉こくだったかなぁ。。いつかチャレンジしてみたいです!

Wow! Amazing I think that Japanese cooks are just pealing scales from a fish. So I watched Bangladesh fish market channel. Yes, of course I surprised tear of fish skins with scales in Japan.
