The Most Underrated Food For Meal Prepping

Today is rotisserie chicken time. I think these rotisserie chickens are a heavily underrated and underused tool for meal prepping. This is how I made 8 meals and a delicious chicken stock from it.

    A little stock tip. You can let it reduce a bit to concentrate the flavor and put it into icecube molds, then when frozen put it into a ziplock bag in the freezer. Keep it a long time, and take as many cubes as you think you need.

    If you don't have cornstarch, you can add regular flour at the same time as the paprika and powders, before deglazing the pan. The flour gets toasted and brown and it smells divine!

    chicken skin makes the stock taste incredible I'm sorry - also baking them in the oven makes them crisp up incredibly for a perfect soup topping

    the skin is the best part to eat tho, would never through that in a stock hahaha ps, I find that cooking a stock for 4 to 5 hours is the optimal time to release all the flavor from the bones.

    @@MtFoxt Fat soluble vitamins, vitamin E for example. Chicken skin also has more unsaturated fat that saturated by the way. And saturated fat isn't nearly the worst thing you can be eating.

    An even more underrated food you can use is organ meat. Admittedly, some people find it disgusting and it requires a bit of knowledge to prepare, but it's very cheap and delicious if prepared correctly. It also offers a bunch of unique flavors to experiment with in various dishes and is quite healthy. I highly recommend trying it.

    Oh I love breaking a chicken down and making tons of stuff out of it. Every time I get a rotisserie I’ll make a stock after butchering it. And then I’ll just have this bag of meat in the fridge to make whatever I feel like out of during the week. Best chicken hack I’ve ever learned

    The timing of this is very interesting to me. Babish just posted a rottiserie chicken video too - I think a day, maybe 2, before this one. I like that you call out your inspiration - I wonder if he got the idea from the same place. oh and by the way Bought your cookbook - first cookbook I've bought in years. I don't think I need it, to be honest - I already cook a lot and feel fairly good at it.     Polenta with chicken (usually stewed/slow cooked) is a very popular and traditional dish in Brazil, especially in the South. :)

    Top tip! Add turmeric powder to your chicken stocks. It adds that extra deep golden color to the oil and broth that you expect. It's not cheating, everyone does it. Making food look good and the way you expect it to look literally makes it taste better. In something as delicate as chicken soup, the mild flavor of turmeric usually comes through. It's also good for your heart and brain!

    Or just a pinch of curry powder. If it is only a small amount, it is not enough to taste really curry, but it is a nice spice undertone.

    My tip for straining stock is to pull out as many chunks as you can with tongs before pouring anything. That way you can panic and pour quickly if you need to 😅

    My family uses the white meat to make chicken tostadas. Shredded chicken with some mayonnaise and corn chilled in the fridge for about an hour. Put it on a tostada with some hot sauce and it's heaven.

    go to supermarket. go get a whole, uncooked chicken, get a decent knife and heavy duty scissors, seperate the chicken into its components: there you saved alot of money, and your meal options just expanded to include juicy, freshly cooked chicken instead of old, dry rotisserie.

    you can definitely get away with the cheapest bottle of red wine you can find. i do that for what is an insanely huge batch cook of a spaghetti style sauce (it misses things like parmesan and all that so that i can use it for other stuff after freezing into portions ans add the right flavours when i defrost and cook it) and i can easily use half the bottle if i’m a little generous with it and it’s as good as a nicer red wine

    rotisserie chicken is the hero for quick meal prep. I use mine for making curry. After I separate the meat, I make a stock with the bones and use that for the curry. I add chicken at the end.

    I have an endless Taco Bell taco hack. Buy one soft taco and a bag of tortillas and cheese. Every four hours or so you’ll get a fresh new taco with the same ingredients.
