Ademar de Barros Moreira owns the legendary french fry stand Batata de Marcehal in Rio de Janeiro. He’s been selling his famous fries for over 30 years, taking enormous pride in selecting the best potatoes and delivering the highest quality food. Ademar worked his way up as a vendor over many years, selling different foods across the city. He can sense the quality of a potato before he even touches it, going through several tons each week. Working with his family, Ademar is a pillar of the neighborhood.

    I studied at a school close to Mr Ademar potato stand. Me and my friends eat this potatoes almost everyday, and everyday Mr Ademar gave us a extra portions. That guy deserves all the success that he earned.

    Typical way food is served in more poor areas. Its like this in the hood. Big portions and great prices. Go out into the more suburb areas and the portions decrease and price goes up. Interesting how that works

    I was curious about the prices and costs of serving a single portion. He really puts a lot on there, which makes me think there's not a lot of profit to be made. But obviously enough to make it.

    ​@@SteelChains A single small portion generally costs around 5 reais ($0.94) in Brazil, and about the profit, he probably makes around 4 dollars of profit with the big 3kg bag, 3kg of raw potatoes in the market are around R$15~27 (top notch) reais, selling it for R$40. And also he buys the potatoes in huge quantities, having discount, it's not a enormous profit, but it's quite a bit, sry for any mistakes I did in english

    What I admire about this guy is he doesn’t cut any corners to make more money. He fills bags to the brim and keeps the same prices. What a humble dude. With what he sells he could easily be making more money if he cut some corners but for him it’s about the product not the money and I respect that

    His shitty fries taste as bad as they look, when he can put fries into a thin plastic bag without the bag burning. Quality french fries wouldnt be possible to be put in a plastic bag this way, the bag melts. His fries are shitty and cold.

    you can tell from just his voice that he is a nice guy. I don't speak nor understand Portuguese, but I feel a soft vibe from his voice, he is soft with his tone, yet very continuous. To me this translate as a man who work hard and are very nice. I know a voice is not the ultimate deciding factor of people personality, but his gentle manner transform into his voice too.

    @Tyler T Man, I'm from Brazil... He sells 1 ton of potatoes a day, if he sells around the medium price (30 reais) this guy makes easilly around 10.000 reais per day... In dollars will be like 2.000 dollars, what seems not so much, but in Brazil "10.000 reais" is equivalent of 10.000 dollars A DAY... Trust me, he don't worry about money 😂

    @@valdemirjunior2370 - Looks like he's got 1 cash register, maybe 2. Work those into your numbers and $5 per order. He would need to push at least 15-25 orders in a minute though out the day to really get to 10,000 dollars a day. Minus the estimated cost of 2000lbs of potato's a day and employee's, it's not a get rich quick type restaurant. The important thing is he's happy doing it, he's working with his family and he's famous for what he does. The guys living his dreams.

    As a carioca guy who lives near Marechal Hermes, where Ademar sells his fries, and have eaten A LOT of those, I'm very happy for him having this space in such a big channel like Munchies. The TV channels in Brazil and, most specifically, Rio, NEVER made such a complete interview with him. It's realy nice to finally see something about Ademar aside the fries, such as his life story, and how humble the man is. Thank you Munchies.

    Most Food are sold at small profit margins. Price increase is usually because of the cost of scaling. The the cost of production/sourcing at a large scale changes everything. He's just a small stall seller so there's not much overhead/logistics to worry about.

    How does the oil not melt the bag? I’ve been to places here in the states, where the fries melt the styrofoam container, a plastic bag must worse. I guess the fries are just warm?

    I went to Brazil a few years ago to visit two great friends and I'm a huge fries lover. I wonder if they will remember me because I was the guy that didn't want any meat in my fries 😂 they triple check that I didn't want any meat whatsoever and were shocked. The fries were crispy and tasty, and the portions are overwhelming. Great atmosphere, it was nice eating with the locals and just having a good time.

    I would be shocked too. I have never tried nor even thought of eating fries mixed with cooked meats, and looks absolutely like something worth trying especially since you can get JUST fries anywhere.

    @@kylem1112 Não meu amor, sou brasileira, aqui fazemos batata d todos os tipos com porções variadas, hoje em São Paulo, Brasil, me alimentei com uma porção d batatas fritas com mussarela derretida por cima, e castanhas trituradas salpicadas por cima, há alguns que ainda colocam bacon, é um diferencial brasileiro, não está apenas em Bairros mais periféricos, todos os centros das Cidades dos Estados Brasileiros há bancas, traillers com lanches fartos, temos até campeonato da barraca que vende o lanche mais caprichado, isso se acha no interior também, nossas pizzas super recheadas em forno à lenha, tudo fresco , diferente de vocês que no exterior vivem à comer comidas congeladas, desnutridas, sem gosto, a minha cultura e culinária brasileira é a melhor comida do mundo 🌎. Fora nossa alimentação rigorosa e farta de frutas, legumes e verduras com fartura, nossa água é farta, tomamos banho 2 vezes ao dia, País de gente limpa, de Cidades Lindas, o que nos estraga é a violência social, partidos políticos nos estragam, no mais ➕, somos o que somos, um tudo de bom. Viva a minha pátria amada brasileira. Viva o Brasil que tanto amo.🇧🇷🇧🇷🇧🇷🇧🇷🇧🇷 ♥️♥️

    @@jeffwilliams2492 I was speaking about street food in general. I haven't been to this guys spot (I wish). The people making the street food put their entire lives into it, produce amazing food, and its cheapest. I was just trying to show some love.

    @@michaelolson571 I totally get what you meant. Here in south east asia most street food vendor has been selling and cooking the same dish for years, sometimes even a couple generations. And so because of that, they just did it better than anyone else.

    Marechal...Lembro da minha infância, moleque de rua que descobrindo o mundo através dos trens. Marechal na época tinha um parque de diversão e essa ótima pessoa vendendo batatas... Ademar sempre doou sacos de batatas para crianças como eu e deve ser por isso que ele é abençoado.

    I was going to say, waking up at 8AM is super early for a shop that is open till 2am... that means he is getting about 5 hours of sleep if he gets to sleep at 3 am, and he is open for 12 hours per day. Long days in the food industry.
