INGREDIENTS WITH GRAM AMOUNTS (Gram amounts are estimates)
1 pound (454 grams) spaghetti
8 large eggs - beaten
1 ½ teaspoons coarse cracked black pepper
¾ cup (70 grams) Pecorino Romano cheese - grated, divided
2 cups (230 grams) Fontina cheese - shredded, divided
½ cup milk
1 tablespoon butter
1 tablespoon olive oil

    Now that you say it, ricotta would be fantastic in this! But then I am biased - I love ricotta. It just seems like it would pair well with a "pie".

    My father used to make a dish similar to this. I tried to make it from memory a few years ago and failed miserably. I couldn't ask him how he did it because he passed 12 years ago. Randomly seeing this video brought tears to my eyes. Thank you.

    A great suggestion, however I think this may have been meant as a Lenten meal for those of us who still observe Lent, which is why it is meatless. (Since leaving my convent school I haven't made it through one Lent without eating meat on a few Fridays by mistake). This is going to be my year of perfect observance! 🤞🙏

    Please keep encouraging James to be critical as possible! I'm sure this version is delicious, but it's true that I've never been blown away by spaghetti frittata either, and I don't think it's meant to be such a dish anyway. Italians often make them for picnics or to get rid of leftovers, and I think it should be enjoyed for what it is! I like the little touch at the end to serve it with the sauce though. Thank you for the recipe, and good jobs James!

    My mother used to make this when I was a kid. Your kid will love it and give it a 10/10 if you follow my recommendations: 1) replace the fontina cheese with mozzarella. 2) omit the black pepper, this is a weird addition that I never would have imagined 3) top with spicy garlic flavored tomato sauce, don't eat it plain.

    My mother would make something very much like that. She would cook hamburger and onions separately in olive oil and butter. Then she add them to linguini, eggs, parsley, Parmesan, salt and pepper. She would use part of that for turkey stuffing and put the rest in a baking dish for the oven. She always made it on holidays, and everyone loved it. She was Italian.

    This dish brings back so many memories of my childhood on Long Island in the 1970’s. My mother made this dish but not in any particular Italian way. She made it with cheddar cheese and called it “baked macaroni “. In her final years she told me that she first had it at the Automats in Manhattan and it was always called baked macaroni. I realize now that this was the original mid 20th century Mac and cheese. It certainly wasn’t called that, and it’s made very differently today, but this is how that OG concept was first made and definitely how it first looked.

    I would agree with James's 8-1/2 rating, which is, in my opinion generous for such a basic, one-dimensional dish. James is a smart cookie, and his interactions with his dad are wonderful. Jim loves and adores his son.

    I just want to say I've learned so many great techniques from your channel. I made my kids your chicken alfredo recipe this week and they loved it. This looks like a great variation on baked mac and cheese. My 4 year old daughter was watching with me and says she wants to make it with me this weekend!

    It can be hard for kids to put their thoughts into words - you helped him with that. Kudos. I'm a nurse, and have to do that with patients if they are in pain. They don't know how to describe their pain sometimes...so I give them options like "stabbing, throbbing, dull ache, burning, pinching, ect"...

    I laughed out loud at the look on your face at the 8 1/2! I was sure he was going to give you a 10, based on the yummy sound he made on the first bite. I will probably make it this weekend as one of my husbands culinary students gave him two dozen fresh eggs laid by her chickens this week. I love your channel and have made quite a few of your recipes, all with rave reviews from my career chef husband! Tonight I am making your Chicken Piccata recipe.     First off, I love your channel so much, and I use your recipes quite often, as they reflect my Sicilian grandmother's cooking so closely! This one brought STRONG nostalgia... she used to make, on every holiday where the family gathered, at least one 13x9 baking dish of pastia(always savory, not sweet)that would be cooled on the counter, cut in small cubes, and used throughout the day for snacking in between the shed-load of other food she'd make! Thank you, once again, for the trip down memory lane, and a nice smaller version of it that I am definitely going to make sooner than later... cheers! 🍷🥰

    This is really similar to a dish from Finland named macaroni casserole. The most basic version of that is just eggs, milk, white pepper, salt and macaroni. Usually there's ground beef, spices and sometimes cheese added too.

    This is one of the few things my grandmother used to make that I was not a huge fan of -- but I've often found that as the years go by my palate has changed and some of those 'not favorites' are now things I love. Seeing how easy this is, I will have to give it a new try. Thanks again for sharing these great Italian-American dishes, so much nostalgia for me!

    I love the rating part of the video. James is so honest about how much he likes or dislikes the dishes. This one was way too funny because you guys kinda went at it. I can tell how much you guys love each other. James so doesn't want to hurt your feelings but he is willing to verbally spar, in such a sweet and funny way. Yet another dish I am anxious to try.     I've never made it like this, but I have made it with a red meat sauce. The recipe I had said to cook the spaghetti, mix it with eggs, salt, pepper, and Parm and place it in the bottom of a casserole dish. Next layer was cottage cheese. Top that with the meat sauce, cover and bake. Uncover and add mozzarella cheese and bake until cheese was bubbly.

    @@katybug2757 I believe I used two beaten eggs, one pound of spaghetti, one pound of ground meat, one 28-ounce jar of sauce, a 16-ounce container of cottage cheese, half a cup of Parm, salt and pepper to taste, and a 2-cup bag of mozzarella.

    I knew an italian family who introduced me to this. It tasted incredible to me; lots of pepper is one good reason. They explained that in "the old country" this would be made & packed into a lunch for farm workers. Then I found out how all these eggs and butter and cheese are combined and I said..."maybe one slice one time a year." But don't let me stop you; it's a great job you did.

    My grandmother made this pie. She used a Bucatini instead of spaghetti. The sauce would enter the bucatini.

    I've literally put it in premade pie dough, too, which adds another dimension to it. It helps texturally and flavor-wise, with what he was saying that white spaghetti pie _is_ a touch on the bland side. Still really good. It's a good opportunity to get busy with a lot of different herbage too. You can season this differently each time, and have a whole new recipe each time.

    Great dish! I have a question- have you ever made a Spaghetti Pizza? They are DELICIOUS!!!!! James would LOVE it. I’d be happy to share the recipe if you’re interested😄 My kids are grown but when they lived at home they ALWAYS ate the whole pie easily. Keep the great content coming!     I was staying in Budapest with a group of international students and the Italian students made something like this on the stove top but did not put cheese in. I thought cheese would have added some good flavor. This looks tasty. James is so nice. You should have a show like Pasta Boss that James is the Taste tester for contestants making pasta dishes.

    I love this. What a good way to use leftover spaghetti (I always keep extra pasta water in a jar in the fridge if I reuse leftovers. Reheat the spaghetti with some of the water and it’s fresh like the night before.

    My mom would put in cut up pepperoni in her spaghetti pie! One of my favorite dishes to have during the holidays/special occasions

    I follow my mom’s recipe which places half the mixture in the pan. Then adds a layer of mozzarella, a layer of ricotta, another layer of mozzarella, and then the rest of the mixture on top. Cook low and slow until the pie is brown around the edges, careful not to burn the bottom. Then place a large enough platter over the pan and release the pie. Then slide the pie back into the pan to finish cooking. It’s more of a meal and theoretically could be completed in the oven, but the stovetop creates a better all-around crisp.

He's got quite the palate and I like how he breaks down what he feels would make the dish better.     LOL - 8 1/2 is good, but I would have given it a 30!!! This dish is comfort food; pure and simple comfort food. I make this but even simpler because there is always left over cooked pasta in my freezer. I scramble 2 eggs in a bowl, defrost some pasta, melt butter in skillet and toss in pasta - give it a few twirls, add the eggs, some salt & pepper, cook just until eggs are done, put it into a large bowl & toss with freshly grated Parmesan cheese. Any day of the week this dish rings my chimes. I will DEFINITELY make your recipe because you kicked it up a notch and then some. Thanks so much for sharing!

    My mom made this for my dad who was Neapolitan every Easter. We would eat it cold like a cake. Easy recipe. A dozen eggs a pound of spaghetti. Loads of pepper and cheese. Cooked in lard. Delish!!!

    Pam here…this reminds me of a comfort dish my mother would make for me…but she added poppy seeds. Whenever I was home sick from school she would cook this up. Simple…easy on the tummy….and so so sooothing.

    The black pepper is what makes cacio e pepe really shine. Almost all pasta has cheese. When the pepper is freshly cracked, it's beautiful.

    2:43 couldnt tell if that sound was the grinder or your wrist! Good to see James is being firmer on his score. I see comments have other stuff that could go in, this is what's great about this recipe, you can adjust it to include stuff you want to include, to have different flavours. Even if that is the sort of thing to make an Italian livid with rage...

    Baked spaghetti pie is like quiche. There are so many ways you can go with it. I love this cacio de pepe version, but I'd add a lot of marinated mushrooms. Other options would be vegetables, leftover meat chunks, bacon, onion, other cheeses... The sky's the limit.

    Don't know how I missed this one! WOW! Can't wait to try it!!! I haven't tasted but I give it a 10!!! I know fresh ground is best, but I take about two tablespoons of peppercorns, coarse grind it in my spice grinder and keep it in a spice jar for when I need more than a few grinds. I don't keep more because I wouldn't use it up fast enough.

    I really appreciate the son honesty. I will continue to subscribe to this channel. Btw, the dish looks absolutely scrumptious. On an unrelated note I love your lentil soup. I've made it a dozen time. Its a favorite of mines.
