HEY GUYS! In today's video, Allan will be sharing with you how to make THE BEST VIETNAMESE LEMONGRASS CHICKEN & PORK MARINADE!
Marinate some chicken or pork, bake it in the oven & serve it with rice, cucumber, romaine lettuce, tomatoes & sweet fish sauce on the side. Or go all out & pan fry some eggs with it as well, YUM! Hope you enjoy & thank you so much for watching.

I got my mom a really nice KitchenAid coffee bean grinder and she uses it to grind her lemongrass!
I use frozen minced lemon grass and happy with the flavor it gives. The lemongrass available here in America are old and dry so I'm grateful for the frozen ones already minced very fine.

I can’t wait to try this! I love learning how to cook foods for different cultures. I am from the south and while southern cooking is good it’s not too for you. I am currently looking for healthier dishes (such as this one) to fit more into my lower carb way of eating. The only thing in this that is higher in carbs is the honey but a little in the entire dish won’t be bad!! Thank you and please share more videos such as this one.😊😊

If you're looking into low carb cuisine, try Korean food. Their food uses a lot of vegetables and fermented food that are good for diabetes and digestion. You can also swap out or adjust the sugar their dishes have.

Please post exact measurements for the marinade. Also, instructions on how long to marinade and bake. What oven temperature and how long? Can we grill the meat?

I didn't know there was Vietnamese 5 spice powder. I've always used the chinese 5 spice powder. I will look for it the next time I go to the Asian store.

The bottom part is where all the flavors are at. Next time chop them more fine and you won’t have any problems. 👍

I make mine in similar way, but also add galangal. Lasted a month in the fridge, but over a year in the freezer.

Can this marinade be frozen? I'm considered my local Asian Market will not have the lemongrass when I need it, therefore, I would like to make it in advance and freeze it.

The bottom part of the Lemon grass is to be used . It's the tender part. Just need to peel off the hard outer layer

I always thought you use the bottom part but not the green part! The frozen lemongrass is usually the green part.
Are u sure with what u are saying about the lemon grass??? Actually the bottom part of the lemon grass is softer than the green part haha...

I thought the same thing. He is chopping up the green part (I think they use they for tea). He chopped off most of the white part and discarded. Just chop off the end, peel the outter layers off, and bruise the stalk. Cut as your desire.

You can get it from Amazon soy sauce would not be good for this dish.

David Scarfi, you can also get fish sauce from oriental market. The one he was using was a 3 crabs brand. It might cost $4 to $5 a bottle. Happy cooking!

Actually u discard the green part of lemongrass n only chop the whiter bottom on part that’s where all the flavor is!

Yes, the white or tender light green parts are easier for chewing, but the rough green end is also flavorful. I freeze my green whole for use in soup or bonfire.

Since the fresh ingredients are cooked, it lasts few weeks in the fridge but much longer in the freezer. From my own experience, it is never hard frozen like ice, more gel-like. Tasted as good as new even a year later.
You need to know how much of each ingredient to use.

This is great. Too bad there are no measurements - even knowing Vietnamese don't really measure when they cook. Not even approximations.
Guys you really need to use accurate measurement.
I think the lemongrass used is ALWAYS the end parts or the white parts! No one uses the green parts! Also the amount of garlic & lemongrass used is WAY too much! It’ll render the dish with a bitter aftertaste!

I was really looking forward to watching this video until I realized that the sound was too low, the cook was too far away from the mic, or the child was screaming over the instructions. Perhaps, if you had worked on your production quality and "eliminated" the background noise (why was the child even in the room?), this vid would have been fun to watch.

Why are you bothering even giving us the ingredients for this marinade if you can't even tell us how much fish sauce or how much lemongrass and how much garlic to use in a recipe. We aren't familiar with these ingredients and what it should taste like or how much should go in the marinade. Why bother even showing us if you can't give us a recipe or at least something close. I've never seen anything more ridiculous.
fish sauce is absolutely gross
