About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZread channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZread videos, her cookbook, and cooking classes.     Next time you get a bunch you can mince & freeze it! Then make a Thai marinade for your chicken wings!

    I love lemongrass! When I was traveling in Bangkok, I found many coolers filled with wash cloths infused with lemongrass. When I used one to wipe my face, I would take a deep breath just to smell the aroma. Love love love the aroma of lemongrass. I recently found a few stocks at my local Asia market, in the produce section. I put it into a jar with about an inch of water. In about a week, I saw roots! I than planted in a pot. I have long leaves now to make lemongrass tea, and many other dishes that call for it. Thank you Pai & Adam, for all the time you spend on gathering all the information and supplies needed in making your videos.

    Lemongrass is called "Fever Grass" or "Razor Grass" in Trinidad & Tobago. The top portions (including the sharp blades) can be steeped in hot water, and makes a very pleasant tea, that's good if you have a fever. It really is very fragrant, and I love its strong flavour in my Tom Yum Goong :) Great explanation video!

    Btw lemongrass grows like a weed, take one stalk, stick it in the ground and it'll grow and multiply. If you live in a place where winters are harsh, plant it in a pot and bring it inside during the winter. Fresh lemongrass, free and whenever you need it.

    Easy peasy to grow here in Northern California and is a nice landscape addition.Ours typically grow to 5-6 feet diameter next to Thai Basil, Thai peppers.

    In Malaysia we often keep lemon grass in chiller, soaked in jar of filtered water. It can last a month and still fresh like new. You should try 😊

    Wonderful, informative video, as always. I would add, as a few others have, that lemongrass is very easy to grow and is an attractive accent plant in any garden. It also well in a pot, so having your own plant is even an option for an apartment dweller. I grow a patch every summer then dig it up in the fall and freeze some to last through the winter.

    When I don't have fresh lemongrass I use essential oil of lemongrass, but an ever so tiny amount--like 1/2 drop. It doesn't break down over longer cooking times but imparts the lovely aroma of lemongrass. Be careful not to use more than a drop or less! I use a toothpick to deliver the oil.

    I had lemongrass/mushroom soup starter at a local Thai restaurant Called "Thai Me Up" . The soup came and it was clear with green onion on top. I thought it looked bland at first, but holy heck it was a flavor explosion! It was so delicious I could not get over it! I have been trying to find a copycat of it since. I did search through your videos and hope there is something similar to that here somewhere. Still binge watching! Love your stuff!

    How i use lemongrass in a special dessert, you have to try this its sooo good. Finely shopped lemongrass mixed with yes popcorn and Thai basil, add the mix in top of a Creme Brûlée. I have so much success in my restaurant with this 👌

    Great video! I have had great success growing lemon grass here in Houston. My Kaffir lime tree is also doing extremely well. Thai basil is another Thai staple that is a fast grower here. No substitute for fresh produce. I would like to grow galangal but have not been able to find fresh galangal (only frozen). If any of your viewers are growing fresh galangal or have access, and are reading this, I would love to get some so I can add it to my garden.

    I grow lemon grass in my yard but we only use the leaves for tea and it has an awesome taste my mom drinks this tea most days. But I would love to see some recipes with this awesome plant.

    I have a friend from Vietnam who puts it in a mortar and pestle or a food processor and grinds it up and then freezes it in ice cube trays. It is completely edible then. Oh most of the time she also adds a bunch of garlic ground up with the lemongrass.

    I typically grow two lemongrass plants each year - one to harvest in the Fall and one to save for the next year. The temperatures here in North Carolina aren't conducive to keeping it outside year-round (it can't take freezing temperatures or frost) so one of the plants gets pretty radically trimmed, dug up, put it in a largish pot, and then put in our (heated) greenhouse. Once Spring arrives, I'll divide it and put it back into the ground. I tried growing some in a pot this past season, but the results were underwhelming as compared to being in the ground. The plants like it hot and wet (go figure). For me, freezing is the go-to solution for long term storage and usage.

    Thanks for the tips, My Thai wife uses it and I'm not a fan of the flavor it reminds me of Pine Sol for some reason. There is a recipe using a whole chicken I want to try and it requires Lemon Grass, the good news is there is a few other ingredients that should help make this recipe very tasty. Fingers crossed.     Hi Pailin, I love all of your videos. Can you make some videos on the various chili sauces? I've seen multiple chili sauces at Thai restaurants, like satay, chili oil, chili in fish sauce, and chili in vinegar.

    Lemongrass here is cheap.. it's actually free, it grows everywhere! Lol western culinary makes it complicated... we just smash it, fold it, tie it... then toss it in a soup... its very good in roasted chicken and pig( lechon)... yum yum

    Recently found frozen lemon grass for $3 for 400g at an asian grocer and was so excited- I know it will have a bit of water added etc, but I usually have to pay $3 for 30g from the supermarket here in Australia.

    Price at my local asian grocer - AUD $10/kg. Price at Coles supermarket next door - 1 stalk (20g) AUD $3.50 = $175/kg.

    Buy a stick. Trim a few millimeters from the stem and set in a glass of water in a warm sunny place until it shoots new roots then plant it (even in a large pot). In a couple of months you will have a large plant and you won't need to pay those ridiculous prices again. I'm living in Sydney at the moment and it grows easily!

    i just used lemongrass at home for the first time in a small city in India with my parents and i sliced the bottom and put the entire thing in the pot along with ginger, jaggery and cardamom and it turned out pretty nice....i put water in it again for a 2nd round and that worked well too...also..the host so beautiful...east asian women are just so good...even better than lemon grass lol...

    I didn't know that. Wrapping the lemongrass in aluminum foil will extend it life. Hey, learned something today. Thank from Gatlinburg, East Tennessee. We do get snow from December to February. One week of snow off and on, everything is dead.

    I'm thinking the root end can be put in a glass of water and roots will grow, then plant in garden. Lemon grass is a perennial in zones 4-9 of USA. It can also be grown in a pot and moved in doors when freezing temps happen.

    I buy it frozen in it's whole unprocessed form. The brand is a Thai one and I always have succes with using it in any Thai dish. I used to buy it fresh, but in the store it sits for too long sometimes wich makes the lemon grass less fresh. The frozen whole ones are always very prety.

    Would be great if you could list dishes which use lemongrass. Or whatever you are reviewing. As sometimes ive bought some ingredient but it ends up in bin because i don't know what else i could use it for. So maybe write a list where eg lemongrass is used that way when we find the ingredient, if we have some left over, we'd be able to use it for another dish. Same goes for tamarind, kefir lime leaves and etc

    What about if you’re making a sauce? There’s a banh mi cafe I go to which make the best lemongrass tofu and mock chicken Bahn mi, and the sauce is ridiculously delicious and golden in colour. I’d love to know how to make a sauce like it.
