Hi guy!
In this video I will teach you how to properly prepare lemongrass for cooking.
It's actually very easy and simple, alright let's begin.
In this video I will show you the basic way to prepare lemongrass, and I will also show you how to prepare lemongrass for Thai cooking.
To prepare lemongrass
You need to chop the bottom part, and remove the outer layers of lemongrass because they are thick and chewy. Usually I remove 2-3 layers.
After you have done that, you can rinse and clean the stalks thoroughly because they will be white powder coating the stem.
To store lemongrass, simply place them in a plastic container with paper towel at the bottom and keep refrigerated for up to 3 weeks.
If you want to freeze the lemongrass, you can use the same method as above but you don't need to put the paper towel at the bottom.
To prepare lemongrass:
1) Bruise the lemongrass with a pestle - This method is used for making soup dishes such as Tom Yum soup and Tom Kha Gai soup.
2) Roughly chop the lemongrass - This method is good for making Thai curry paste, such as Dreen curry, Red curry, Massaman curry and Panang curry
3) Finely sliced the lemongrass - This one is perfect for salad dishes such as Yum Nua or Thai beef salad. Make sure to slice them as thin and possible, it taste better that way :)

May I know if the lemon grass has white powdery powder, are they still edible?

Yes they are still edible. It's normal you can wash the powder and dry with dry cloth.
