Today we're making spaghetti with broccoli the traditional Italian way. You'll need broccoli, garlic, olive oil, Pecorino Romano or parmesan, and not much else for this simple pasta recipe. The creamy broccoli sauce coats and grabs the pasta making an easy but comforting pasta recipe that everyone will love!

INGREDIENTS
½ pound spaghetti, linguine, etc
1 head broccoli - diced
3 cloves garlic - sliced
¼ cup olive oil
2-3 tablespoons extra virgin olive oil - for finishing
¼ cup Pecorino Romano (or parmesan) - grated
¼ teaspoon crushed red pepper flakes
½ cup pasta water - reserve more just in case
Salt to taste

Never, ever discard that broccoli stem. It's the best part. Cut off outer layers to reveal tender white part. SOOOOOO good, even raw. Put on a bit of salt ... Sautee with chicken or fish ... Try it. I think you will be surprised. I used to work in a produce department ... and always saved the trimmings to take home ...

gawd yes. the stems are so sweet and delicious! I always choose heads that have big, honkin' stems left on. Those "trimmed" florette only heads get the stink eye from me.

I find that dissolving an anchovy in the oil and garlic adds so much umami flavor to simple pasta dishes like this without any fishiness.
I love this channel. Your style is so laid back and chill. Also like, being open to twists and changes is refreshing. So many cooks and chefs are like "this is the only way this should be done".

Whenever I comment, it’s always on older videos. But I just watched this and my mama (I’m adopted lol) who is Italian and Greek used to make this for me and my brothers ALL the time growing up. Just like this. Absolutely delicious. One of my favorite meals

I’m blessed with kids who love veggies just like your son. I’m definitely making this! And I thought creating a basket by twirling the pasta is all just to make it look pretty on the plate but didn’t know it preserves the heat of the pasta. Always great to learn something new!

Garlic broccoli on white pizza is excellent too
Love this dish. My mom always made it with broccoli rabe but my kids didn’t like it but liked the regular broccoli version. Also watched your eggplant show and again just loved it. My mom’s all over again. Your tip putting fresh basil on each layer was masterful. Made it two weeks in a row. Don’t think I can ever stop making these favorite dishes. Viva Italia.
I would steam the broccoli to lock in the vitamins and minerals, and then use the steamer water for sauce and add some more water for spaghetti. Great idea for new way to enjoy broccoli!

I love this channel. Your recipes and cooking style rock! Your son is the cutest boy and he loves to try your dishes once they are ready to eat. I'm a teacher so kids are great and they can learn so much from seeing their parents cook and pick up good cooking habits. its a wonderful skill to practice and perfect over time. Some of the dishes you make and display look awesome and the ideas keep coming for me to try pasta with a variety of veggies. Mushooms and eggplant are two of my favorites to eat/mix in with pasta. Great receipt. Just like my mother made it... she also made it with sautéed onions instead of garlic (try it). We love it both ways.

Ok. Try this. My grandmother was from Naples and this was a peasant soup her mother also made. Throw your garlic, broccoli and salt in the water and cook the broccoli until it's soft. The water should also have a slight green hue. Now add your spaghetti broken into 2 inch pieces and cook as usual. Add a few tablespoons of olive oil at the end and thin some Parmesan in the soup bowl. I love it both ways, but I am curious if it started a a peasant soup. All Italian peasant soup is water based and of course amazing.

Sounds great! The version you describe sounds like more of a soup. My Grandmother made a lot of those broken spaghetti peasant soup recipes. I always remember the cucuzza soup growing up. Often instead of the big cucuzza, she would use small zucchini just cubed. Reminds me, I need to make a video for that one.

Yes, it was always served as a soup this way. She rarely made it dry the way you showed, but both are awesome.

I enjoyed the video, well done. Personally, I would cook the broccoli in the pan with the EVOO, garlic, and a little water to steam it and help cook it. I would also peel the broccol and not waist the stem. Last but not least I'd finish cooking the pasta in broccoli for the last 4 minutes or so, so the pasta can absorb any flavors. Another thing I might do, at least to try it, would be to add the juice of half a lemon to give an interesting twist. Then I'd add fresh parmesan. Still, the way you cooked the dish looks delicious!

I agree with your son. I like my broccoli in larger pieces. My Mom used to braise the broccoli in with the pasta during the last five minutes or so.

Looks delicious. My mum always did something very similar but with anchovies added at same time as garlic.

You can also throw a little spoon of water in the garlic and oil, and that will stop the garlic from burning, because as long as there is water in the oil it won't go above a certain temp -- maybe 212 degrees (depending on your elevation, of course)? And this is so much more complicated for me, because I have celiac disease, and the rest of my family does not. So I have to make two types of pasta. I cook the broccoli, then my pasta -- which takes quite a while, like 8 - 12 minutes, depending on the pasta -- then their pasta. But I have to use two skillets of broccoli, one for them and one for me. It's amazing how much more complicated it is to need to make two separate pastas. I actually made this dish up all on my own back in the early 1980s. I'm sure the Italians were doing it, but I didn't know that. I lived in NYC, and worked at nights, and came home in the wee hours. I would stop at the corner store and get broccoli, garlic, and pasta! Sometimes I did mushrooms instead. Couldn't go to the supermarket at that hour, and had one of those college-sized fridges that fit under the counter, so couldn't keep much food on hand at all. One thing I do differently is I use much, much, much more garlic! And it is delicious.

i've been making a way less healthy version of this by adding bunch of green onions, some toasted pine nuts, some cream, and chicken cooked in paprika/cayenne pepper marinade added on top. it's unbelievably good.

Excellent, one of my dishes.
Lovely! I would add a teaspoon of wild garlic and pine-nuts pesto to broccoli towards the end of cooking, as it would give it an extra umph! My children love it.

Hi Sip and Feast. I'm a subscriber, and love your channel. You have taught me a lot about cooking tips and technique, even though I've been a motivated home cook for decades. (Restaurant quality without restaurant prices.) I have to say this broccoli pasta was my first let-down. I really *wanted* to like it, but in the end my wife and I agreed it just was a little bland and needed something for "oomph." Maybe we'll play around with trying other ingredients to add. In the meantime, give me a few clams or blistered cherry tomatoes any day. Ciao!
