To the people who are shocked about how KFC gravy is made, I'd like to point out that this is LITERALLY what pretty much all gravy is. It's a sauce made from meat drippings, a liquid (usually water) and thickener.

Difference it's normally roasted meat dripping which is used for gravy. Fried sludge is continuously cooking in the oil which can lead to carcinogenic risks. Also how long has this stuff been left in the frier and how often it's changed. Normal gravy is made fresh and not sitting in frier oil for ages.

My father had a summer job at some sort of burger shack back in the 60's. He tells this story about this one guy that would always complain that his burger was too well-done, so eventually my dad simply threw the patty on the grill, immediately flipped it, then immediately put it on a bun and then served it to him out of spite. Minutes later the guy sticks his head through the window with a big open smile and gives my dad the thumbs-up. (Probably would get in trouble for preparing food like that nowadays.)

oof. there's a reason not to eat medium rare burgers. usually any bacteria will be on the outside of a cut of meat, so when the outside is seared, the bacteria dies off. in ground beef the bacteria gets mixed all throughout, so just searing the outside isn't going to keep you safe. I used to work at a pizza joint that also did burgers. we sold very few burgers. one day I was the only one working the line and some guy ordered a burger. the server was like "he wants this medium rare" and I said no way. 1. I didn't know how to do that (it was my first job and I was rarely on the grill to begin with) 2. that meat looked really suspicious. 3. didn't wanna kill anybody.

According to an old friend that used too work at Wendys, the meat in chili is hamburger patties. But it was never more than a day old, the chili sold fast enough most often. The patties used would be ones that were either burnt, broken, or ripped. It's a way of them still making money on perfectly good patties that weren't well rounded enough for a sandwich.

The Wendy's chili really isn't a health risk and this was my experience a previous supervisor. The burgers that get made in busy times that go past the 30 min hold time get put into a hotbox and every 4 hours that hot box gets emptied out. The burger patties that were in there immediately get chopped up, put into a bag, labeled with the date and time and put into the freezer following FIFO. Then the oldest now chili meat, which if the store is operating properly should only be a day or two old, is made into chili. Each batch is suppose to be in a separate pan, made when needed and you swap pans when empty not refill. If there's chili left at the end of the shift and hasn't been sitting for more than 4 hours, it is well within health guidelines to properly cool it down and save for the next day. These employees complaining about some of this stuff obviously know food safety and shouldn't do anything that would violate it, even if a manager tells them too. If you are an current fast food employee and your manager tells you to do something that is against safe food practices, we have smart phones now. Record them giving you the instructions and/or them reprimanding you for not following those instructions and send that off to your local health department.

What really interests me about the Wendys chili is that KFC actually does something really similar with their pot pies. At the end of the day, any unsold chicken gets the meat stripped off the bones, then they put the meat in the freezer and put it into their chicken pot pies the next morning. And like none of us ever thought anything weird about it. Honestly I was amazed we actually cooked our own chicken to put in the pot pies, I just kind of assumed it would come pre-frozen in the pie! So like I don't understand why it would be any different to eat the unsold burgers in a similar form for chilie. It just saves on money and cuts down on wasted food.

I was going to mention this too but see you brought it up. Each night you had to strip the meat off the bones, put it in little baggies that you weighed out. Put them in the freezer. Then they would be used for pot pies later. If anything that cuts so much food waste cost and prevents food waste in general. The pot pies are actually really tasty and popular with older customers. When I first started working at KFC I thought the pot pie chicken would come pre-frozen too. I was really happy to see we didn't just throw away all the chicken at the end of the night.

I worked at a Taco Bell in the late 80's. Back then the beans were made from scratch also. We had to sort through the beans to make sure there were no rocks. Then the beans were put into a pressure cooker with a bag of the seasonings and lard. After they were cooked, an electric drill with a mixer blade attached was used to mash the beans. The smell of the drill (electric motor overheating) used to nauseate me. I'm betting that Taco Bell doesn't make the taco shells fresh in the store any more either.

There are plenty of disgusting thing that happen at KFC, but gravy isnt one of them.

When I worked at Burger King, we also had "hot boxes" for food. We would store cooked hamburger patties in these plastic trays under little heat lamps. They had timers on them that told you when to throw them out, but management would have the kitchen staff just trick the machines into resetting the timer by removing the tray, putting it back, and oressing a button to start it over. If you want something fresh there and it's not peak hours, just get fries with no salt because that means you're usually getting fresh fries since the big batch of fries is already salted. Sometimes theyll just throw the old fries back in the fryer for a minute though. And dont forget to ask for salt packets when you do that!

The gravy thing is so funny. Not only is that how we always make gravy (the drippings just come from a pan instead of a deep fryer), but several times a week I'll make some sort of pan sauce, and a key step is not cleaning the pan after cooking meat. The sauce liquid will lift the bits off the bottom, and add lots of flavor. It's called "deglazing," and it's effectively the same as using drippings, but on a smaller scale. It's very amusing to me that people are so used to everything being ultra-processed that we don't even know what gravy is if it's not powdered and sold in a packet.

I’m Mexican American. Grew up eating whole boiled and refried beans on a near daily basis. I can understand how someone who’s less familiar or accustomed to preparing and eating beans at home can be grossed out by some aspects. Particularly, refried beans can start to look atrocious when it begins to dry out along the top and edges of the pan or cooking vessel. I can see how that’s enhanced in a fast food restaurant kitchen where splatter or other factors can make it look much worse. As long as you follow proper food handling procedures, there’s no reason to be afraid of getting sick. Our family never used the dehydrated stuff so I have no opinion on it. I don’t blame Taco Bell for that though. Cooking beans from scratch (raw beans, not canned) are so much more work and time consuming than you might expect. I prefer the traditional from-scratch method but their method isn’t egregious imho

So no, I wouldn't say it's probably the greatest chili, but some people absolutely loved it. To each their own. 🤷‍♀️

I make gravy by cooking the fat off of bacon or other fatty meats, I take the fat and add in some seasonings and flour until it’s a wet sand consistency. Then I slowly pour in beef broth and stir constantly. Usually about two tablespoons of beef broth at a time, stirring until there’s no lumps, then adding the next bit of beef broth. Until it looks a smidge thinner than gravy should be, then I cook down and stir frequently until it matches about what you’d expect gravy to look like. Then it’s ready. Gravy is cooked fat oils, seasoning, and a binder like flour. Then some liquid like beef broth, or water, or milk if you want to make a country gravy. The KFC gravy is completely the traditional method of making gravy from scratch.

I have a total of two stories on fast food soft-serve (yes, it's really that notorious). My partner works at McDonald's and backs up the claim that the ice cream machine is never actually "broken" like the employees say...it's just going through its regular long cleaning process. They just say it's broken so the customers don't wait around for four hours at the restaurant without ordering anything. My partner also says that it's more likely for one of the grills or deep-fryers to be broken only have one running at a time. The second story is a little more gross, so don't continue if you have a weak stomach. A teacher I had back in high school used to work at a Wendy's. That store hired a rather unintelligent person who would regularly water all the plastic plants around the dining room. What finally got them fired was when they used a toilet scrub-brush in the Frosty machine on multiple shifts (with nobody realizing until after several days). The health department was called, the employee was fired (and possibly blacklisted), and the Frosty machine was completely replaced, so nobody needs to worry about getting a toilet Frosty.

I need to add that at my first job at an ice cream shoppe, we had a Frogurt machine...basically EXACTLY the same as a soft serve ice cream machine and also a milkshake machine. EVERY day at the end of the day, we had to thoroughly clean them ... and we did...the process taking about an hour and then for the machine to be ready to dispense again took about 3 hours to fully make the frozen yogurt cold enough to dispense and sell. So, by completing the cleaning process, the morning staff knew the machine would be clean and ready to fill with the liquid yogurt...which, as I said, took about 3 hours to be ready to sell. So, when I hear McD employees say "our shake machine is down", what they truly mean and fail to say is that their machine is down for cleaning maintenance... hey, I tip my hat to them.

Yes, that's how brown gravy is made. In the old days when life was a lot tougher for many people, gravy provided a rich source of calories needed to haul water, chop wood, or follow a mule-and-plow all day. People couldn't waste ANYTHING. Sometimes a gravy-sandwich was all the kids got to eat; the grownups got the meat.* In my family there was mostly brown gravy and fish gravy with some red-eye gravy (from ham, with no thickeners.) White (milk) gravy really wasn't popular. *And if you think a gravy sandwich sounds bad, some kids got a biscuit spread with bacon grease, and sometimes they didn't get this until after the adults had eaten.

It was a brown powdered substance that was poured into a large mixing bowl and then had hot water added to it. Then we mixed it around and served it. Same process with the mash. Also, the coleslaw was all pre-chopped vegetables in a bag with separate bags of mayo to mix into the coleslaw container they had set up. I used to work at Wienerschnitzel and In my time working there, you can definitely tell that across different restaurants, certain things are different. Like at ours, we left ice cream toppings like carmel and chocolate syrup at room temp all day where another one of our restaurants about 15 mins away, kept them in warm-boiling water. Across all of our stores we valued the ice cream though, every store that I went to(4 in my city) our machines were religiously cleaned every other day. Our managers cleaned it so it was always done and done by someone who had at least a few months under their belt. We used a sanitizer sent by the ice cream machine company itself and followed their instructions to a T. Our ice cream mix came in a bag and was frozen as it came out of the machine. On top of that, their machine always works, was only broken once when I was there and that was because the AC broke and it was literally 120 degrees in the building. Our chili is made with the same patty method though, chopped up, boiled, put in chili mix and served. I trust it too because I know the pattys are never neglected. Sure they might sit in the hot plate for a bit but it’s an enclosed hot plate kept at 165 to keep bacteria away. Plus the boiling gets rid of it. Never order a veggie dog though… they are microwaved and get rock hard if they are left out for any length of time after cooking.

I've worked at a gas station and it's really very clean. It's got a grody name (and ofc still don't get gas station sushi) but most gas stations with a food counter (mostly bread and baked stuff) is really quite clean. I had to check temperatures constantly, of both the prepared stuff and the coolers. The only think I'd avoid is the lettuce on sandwiches because they always made us add the old stuff on top. But besides that? Really clean. Ofc it varies place-to-place. I'm Dutch.

3:04, I work at a coffee shop, although it is a fair bit higher class then coffee at fast food places, this one is disappointing. Customers order can order decaf because the effects can give them panic attacks, or they have heart conditions that make caffeine dangerous. I've dumped out entire drinks before because when doing a final check on the order I realize that a drink was decaf. Caffeine is 100% a drug, and giving someone caffeine when they don't want it is akin to drugging someone in my mind. Also, while on the topic, decaf DOES have some caffeine in it, although not enough to have effects usually, it should be noted for those with serious conditions.

When I worked for DQ the candy was kept in the same container till it was gone which wasn't a big deal unless it was cheese cake or Brownie pieces. Also candies got into each other which could be peanuts or Reese's which can cause allergic reaction.

I worked at Dunkin' and used to feel terrible when people asked for decaf and we didn't have any brewed. If it was brewed, it was likely sitting out since the morning shift and was ice cold. My co-workers would tell me to just use regular coffee, and I really didn't have any other choice most of the time. As someone with a sensitivity to caffeine I felt so guilty.

Granted, I am a retired litigator in my 50s, however, when I was in college I worked at Burger King. The mayonnaise came in big maybe… 3 gallon vats that you sat in a cold tray of ice. but if the anticipated customers didn’t come in during the shift, the mayo would obviously age. The color would go off and it would get a nasty skin on the top. I once tried to throw out about half a tray of that stuff and the manager made me put it back in, re-ice it, and STIR IT UP! I have never eaten mayonnaise at a fast food restaurant again. And I rarely eat at fast food restaurants because the corporate greed motivation doesn’t give a 💩 about my health, obviously! That is 30 years of me not trusting Burger King to give me a sandwich with mayo on it!

I used to bartend for Red Robin and the damn soft serve machine was the bane of my existence. We sold tons of milkshakes. I was the one responsible for breaking it down and sanitizing it and every component every Sunday night. From start to finish it would take me about an hour, sometimes longer if I was busy with other stuff. Wasn’t “hard” just time consuming and full of pumps, little gaskets, small metal and plastic pieces… it was a huge jigsaw puzzle. Thankfully I wasn’t required to reassemble it as that was done the following morning. I did have to reassemble it one time and I mistakenly swapped two very similar (but still different) plastic pieces and one of those parts came loose and got chewed up by the machine so I had to disassemble, wash and sanitize the whole thing, throw out the contaminated soft serve, and completely restart the whole reassembly process all while juggling all of my other duties as the restaurant was now open by this time. The worst was doing all this while apologizing profusely to my general manager. I was mortified. Even though I hated having to clean it, I totally understand why. The nature of the machine itself and the dairy product it was filled with wasn’t anything to be taken lightly or handled improperly. We could have easily given a quarter of our customers food poisoning if we weren’t so meticulous with the cleaning process.

I can kind of agree to the ice machine concerns. I used to be a supervisor at a subway for about 16 months. In those 16 months I can only remember the ice machine being cleaned (by a company) only once, so I assume it was only a annual service. We would take a scoop and scoop the ice in to a bucket, travel across the store with it and dump the bucket of ice in to the top of the soda machines in the lobby where customers get their ice. The thing is... that bucket and scoop sat on top of the ice machine in the back and was never really washed out, and the scoop never sanitized in between uses. I never thought about it at the time as a issue but looking back on it I'm sure the ice got dust and germs on it on a daily basis. Most customers seemed surprised we manually filled the soda machine with ice ourselves. It would definitely be more convenient and sanitary if the soda machines made their own ice.

When I worked at Burger King it was similar, we carried the ice in a bucket from the back to the front, though the unsanitary part comes from the scoop itself, since one person handles money/cards, and scoops ice into drinks, it was easy for the handle of the scoop to get into the ice. I'm pretty sure I was the only person to ever clean that scoop during the whole time I worked there.

@@farmingsim9813 Right, we were never taught/told by our manger or district manager to clean the scoop/bucket and it might have seemed like common sense but if you ever did something wrong (use the wrong kind of cleaner/disinfectant to clean something) you could get written up. We only cleaned things that we knew HOW to clean "by the book" so a lot of simple little things like that didn't get cleaned. Plus if it wasn't on our daily cleaning list nobody gave it a thought.
