THE BOIL

Hop/kettle additions and timing:
27g Hallertauer Mittelfruh @ 60min
Add yeast nutrients and kettle finings 15 mins before the end of the boil
Whirlpool/hop stand:
N/A
Yeast: Mangrove Jacks Bavarian Wheat Yeast M20
Fermentation temperature/steps: 17c until you have reached final gravity and this has been stable for 48 hours. Usually 10-14 days
Secondary additions:
After fermentation is complete package and carbonate to a moderately high level (2.5-3 volumes)
Comments:
This style of beer is all about freshness and drinking whilst young. You'll want to enjoy it on a warm late summer evening with friends and drink it whilst at its freshest. The balance of flavour and aroma is vital and the yeast used will be key to this. Fermenting on the cooler side of this yeast's capability will promote clove esters and moving to the warmer side of the scale will promote banana to show up. You can choose where you want this to sit but we prefer the clove profile, hence the fermentation temperature being lower.
We've included 2 packs of yeast with this kit to allow for the best possible fermentation with little stress placed on the yeast, this will limit the chance of undesirable flavours from being produced.

    @@OysterBoysBrewingCo - I don’t have the space to brew from grain. So I use Coopers kits. Great results every time.

    Nice timing, I'm actually brewing a weissbier tomorrow with 2 friends, and while the recipe is different, let's be honest there's very few variation in this style so it's also pretty similar. I'm hoping for more banana and less clove, got both low temp ferm and high temp ferm recommendation, I'll go the 16.7C-17C route too and see what I get. 23L for 23£ is a no brainer tho for what looks like an excellent true to style recipe!     Sounds like a split batch is required to see which temp delivers what. But yeah most grain bills are fairly similar however check out our Schneider Weiss clone as that was an interesting grain bill.

    Aha new glass supplier (the last ones were a engraved image) so we wanted to test them out before committing to a full multi glass range. I hear ya though, and noted.
