Ingredients:
Serves 6 pax
Some cooking oil
2 pieces of cinnamon bark
2 pieces of star anise
1 teaspoon of white peppercorn
1/2 teaspoon of cloves
1 bulb of garlic w/ skin on
4 slices of ginger
2 pig knuckles
10g of rock sugar
1 piece of bay leaf
2 cups of Chinese white rice wine
1/2 cup of low sodium light soy sauce
1 cup of premium dark soy sauce
Top the pot up with enough water to cover the pig trotters
1 teaspoon of salt

    Really enjoyed watching this. Interestingly, that cut of leg is known as the shank in the UK - the trotter is the lower part with the foot - but fortunately I have both parts arriving tomorrow so will use your recipe for the the trotter and maybe do Filipino crispy pata using the shank (or knuckle as they call it there)

    Hi Ravi. You can use your instant pot to pressure cook it. We pressure cooked ours for 40 mins so you can use your instantpot to do the same. Thanks so much for using our recipe 🙏🙏🙏🙏

    Hi Geok Lian, no problem. You can cook this using a normal pot. You don't have to use a pressure cooker. Just take more time to braise the pork. Happy cooking!

    Hi Amanda. We got it from NTUC. Shengsiong also has them. There are a few brands you can consider - Woh Hup premium soy sauce - Kwong Cheong Thye Chicken Rice Soy Sauce or First Grade dark Soy sauce - Fenghe premium dark soy sauce. These are some of the brands we’ve tried.

    Hi Shareen. This is different from Vinegar Braised Pork. Unfortunately my Wife doesn’t like to eat it so it’s a dish we will never cook on our channel. This version doesn’t need vinegar. Hope this explains. Thanks so much for watching my video and have a wonderful weekend!

    Hi Tony. Your granny’s method is a different method from ours. Our version is Teochew style with a light hint of spices whereas your granny’s is sweet & sour style cos of the sour plum. I read that some people add dried hawthorn to the dish in addition to the sour plum. 👍🏻👍🏻 sounds delish 👍🏻👍🏻

    Hi Jotojo . The wine you have is most likely Shao Hsing Hua Tiao wine which is made out of glutinous rice. The clear wine we used is made out of white rice. They’re different. Asian supermarkets should have Chinese white rice wine. We stay in Singapore so it’s widely available and we use it a lot (and Shao Hsin wine too) in our cooking. Hope this helps.

    Unfortunately not because they both taste quite different. We mainly used Chinese white rice wine here to remove the nasty taste of pork. You know sometimes pork can have that nasty unpleasant pork aftertaste.
