Steamed Fatt Koh 红糖发糕

Ingredients 材料 :
【A】
200g plain flour (面粉)
1 tsp instant yeast (小匙酵母)
150ml water (水)
【B】
200g brown sugar or gula melaka (幼黄糖)
160ml hot water (热水)
250g plain flour (面粉)
1 tbsp baking powder (大匙发粉)
Steps:
1. Combine all ingredients 【A】 and mix well. Leave aside to prove for 1 hour.
2. Mix brown sugar and hot water, stir until dissolved. Leave to cool.
3. Combine ingredients 【B】 with 【A】 mixture and mix well. Pour the mixture into rice bowl and rest for 15 minuets.
4. Steam over high heat for 20 - 25 minutes. Remove and serve.

不会很甜, 少了会一点都不甜. 但这样糖分的确高, 不宜多吃.

发粉就是 baking powder, 也叫泡打粉。注意不是 baking soda (小苏打)。
Just followed the recipe and I failed. The cake turned very hard and stiff. I don't understand why... I followed the recipe diligently.. can someone advise

Make sure your yeast is active. Did you let dough (A) to fermenting for 1 hr before mixing with (B) and wait for 15 min before steaming?

中筋或低筋都可以。不要高筋。要开花的就不要用高筋。
都照着做了可是一点都不开花 失败☹️
和面还是要用手方便些
可详细告诉我一下,面粉是高筋 中筋还是低筋面粉?

不行的。难解释清楚,但是如果一起和,它就一起生筋,就比较像面包那样,比较不会开花开得那么漂亮。

总觉得他的方法不实用,米浆磨好,直接用温水加糖养酵母,拌匀就可以蒸了,搞得那么忙。
