Spinach Benefits and Caution Explained By Dr. Berg

Take Dr. Berg's Advanced Evaluation Quiz: bit.ly/EvalQuiz
In this video, Dr. Berg talks about the health benefits of spinach.
It's rich in iron, magnesium, vitamins K and C, and folic acid, B2, and B6. It supports the eyes preventing macular degeneration and is good for inflammation.
However, spinach has oxalates, which can cause kidney stones.
You can steam your spinach, you can add lemon juice, potassium citrate, and adding calcium (which binds with oxalates in the digestive system). But make sure spinach is organic to prevent chemicals.
However, the health benefits of spinach are huge.

In my village, people make ‘saag’ by cooking spinach completely, and they eat it almost every alternate day in winters, and they’re the healthiest people I’ve ever known. Also, bcs it’s a traditional dish made by our ancestors, somehow I believe they knew more than us about nutrition since they fell sick less often and lived long, healthier lives! May be we’ll discover the secret in future!

yes, chocolate cravings may be due to lack of magnisium but the cocoa is super good for us, google it, the big problem with chocolate is added sugar, especially in milk chocolate. I eat dark chocolate, about 75 to 80 percent cocoa, super delicious, no health problem at all with that, it is so delicious with nuts, any nuts, my favorites might be hazel nuts but i do eat a wide variety of nuts, i try to choose nuts with lower carbs. I am diabetic type two and had no problems with this plus stopped my Metformin and Insulin the day i started IF, my fasting sugars are now about 6.0 ( UK ) and after eating it seems to stay fairly low too but i really don't eat many carbs, replaced grain bread with doctor bergs nutty bread recipe and found special but delicious noodles, here in china, with zero carbs and replaced potatoes with turnips and rutabaga for delicious, much like potato, it really tastes the same to me, love them grilled. Diabetes has gone away as a problem for me, plus related problems like painful feet, the feet took three weeks and i have lost loads of weights, will try to find the name of the noodles and add that here by tomorrow

In the summer I can often find lambs quarters, a "noxious weed". . I mention this because its a wild relative of spinach that has about 3 times the nutritional content making spinach look more like iceberg lettuce. Steaming for about 1 minute turns it from a less than spectacular fresh green to a luxurious cooked green, better than you can buy anyway. So I am quite sure the steaming does something to this wild herb in the spinach family. I can only imagine it must apply to spinach. Another interesting thing about this herb is that I find it growing around campfires, especially if in a sunny location. Found it near manure as well which is impressive given its acidic. So high nitrogen also seems to like. It seems to hate the forest floor as I never find it there. After putting wood ash in a bucket and finding this weed growing, and only this weed , I was impressed that it could grow at all growing almost in a bucket of lye. They were not thriving but boy was I impressed at it tolerance for high PH. That high PH BTW in the form of wood ash means the presence of minerals. So its no shock its so rich in nutrients. ..and yes it is high in Oxalates , higher than spinach so.... I have also fermented this weed to good success like one would do with grape leaves in Greek cuisine. So if I were to suggest a little wood ash for gardeners apt to grow spinach, especially in acid soils I would also agree that cooking it a bit seems in the case of the wild variety to do something to its palatability. However I find spinach annoying for its tendency to bolt. So now I just get the lambs quarters which is available for months in the summer by taking the tops of older plants.

Just a note on the Indian way of cooking spinach that you are referring to. Spinach varieties that grow in India are a lot more bitter and fibrous than the American variety so they need to be cooked for longer to be edible. They are generally a darker green too so that may be why it looks overcooked.

Cool vid as always... I really enjoyed the point about buying organic spinach. I used to buy the commercial spinach because fit the budget, but I was sooooo frustrated that I was not losing any weight. I switched to organic spinach as well as buying as much organic food as I can and I have been getting better results. I just wanted to add my 2 cents in case anyone missed how important that last line is as it relates to buying organic....

I've had 2 kidney stones. The first one was horrible, taking about 4 days to pass through the ureter into the bladder. The stone disintegrated into a bloody sediment in the bladder thankfully which then allowed it to pass out easily. The second one was smaller (about 2mm) and I felt it pass through the ureter in about a minute or so. I still eat spinach occasionally but will take on board Dr Berg's advice here.

We just know more, but we don't know everything. Chances are, if it comes from the Earth, and you see other people eating it with no issues, that's the stuff to eat. If its manufactured food, not just from the Earth, etc., it's going to be less nutritious than real food. If its farmed or from farmers that use harmful chemicals, etc. to maximize their harvest, that stuff ain't doing you any favors. That's all you really need to know...

Correct. A lot of plants contain chemicals that are intended to paralyze an insect. Like Beans for example. If you eat beans raw you can die. But they're a wonderful food for humans full of benefits when you cook them. The invention of fire allowed to eat a much wider variety of plant foods. Foods that our body cannot break down or assimilate the nutrients from unless we heat or cook them to break down the tough plant cell walls unlocking the nutrients. I dont see why this would be any different for some greens like spinach. Traditionally greens were added to soups. The people knew what to do with it.

Look up “Bioavailability of soluble oxalate from spinach eaten with and without milk products.” I’m thinking of sprinkling a couple teaspoons of calcium citrate onto my cooked spinach. The paper said there was 737 mg of soluble oxalate per 100mg spinach and I plan on eating 12 Oz (323 g) a day. One mg gram of calcium is predicted to offset 1 mg oxalate, but their high calcium dairy source has 500 mg calcium and significantly reduced oxalate increased, but not to 0%. The participants ate 100 mg spinach which still had 737 mg of free oxalates, so maybe a 1-to-1 ratio would be better.
